Cooling creme fraiche and fresh herbs liven up this vegetarian frittata studded with asparagus, potatoes, and two rich cheeses (goat and Gruyere). Big enough to feed a crowd, it's just the thing for Easter brunch.

8 ounces creme fraiche (about 1 cup)
1/4 cup chopped mixed fresh herbs, such as parsley, dill, chives, tarragon, and mint
1/2 teaspoon grated lemon zest
Kosher salt and freshly ground pepper
Unsalted butter, room temperature, for baking dish
Kosher salt and freshly ground pepper
12 ounces asparagus, trimmed
2 medium russet potatoes (1 pound), peeled and cut into 3/4-inch cubes
12 large eggs
3/4 cup heavy cream
6 ounces goat cheese, crumbled (1 1/4 cups)
1/2 cup chopped mixed fresh herbs, such as parsley, dill, chives, tarragon, and mint
6 scallions, white and light-green parts only, thinly sliced (1/3 cup)
3/4 cup grated Gruyere cheese (2 1/2 ounces)

Steps:

  • Herbed Creme Fraiche:In a small bowl, stir together creme fraiche, herbs, and lemon zest; season with salt and pepper. Refrigerate, covered, up to 3 hours.
  • Frittata:Preheat oven to 400 degrees. Butter a shallow 2-quart baking dish.
  • Prepare an ice-water bath. Bring a medium saucepan of salted water to a boil. Add asparagus and cook until crisp-tender, 1 to 2 minutes. Using tongs, transfer to ice-water bath. Let cool; drain and pat dry.
  • Add potatoes to saucepan with water (if necessary, add more water to cover potatoes by at least 1 inch). Return to a boil, then reduce heat and simmer until potatoes are easily pierced with the tip of a knife, 5 to 6 minutes; drain.
  • In a large bowl, whisk together eggs, cream, 1 teaspoon salt, and 1/2 teaspoon pepper. Stir in potatoes, goat cheese, herbs, and scallions. Transfer mixture to prepared dish. Top with asparagus, pressing down to submerge slightly. Sprinkle with Gruyere.
  • Bake 30 minutes, rotating dish halfway through. Reduce oven temperature to 350 degrees and continue baking until golden brown, puffed, and just set in center, 10 minutes more (if browning too quickly, tent with foil). Serve warm or at room temperature, with herbed creme fraiche.

It always feels a little wrong making a frittata with freshly cooked vegetables, since the whole point of the dish is to use up leftovers, but seeing as we're making this for a Mother's Day brunch special, we'll make an exception. Make sure all your vegetables are tender, hot, and well seasoned before adding your eggs, and not a lot can go wrong.

2 tablespoons olive oil
1 large leek (white part only), chopped
1 teaspoon salt, divided, or as needed
1 jalapeno pepper, seeded and diced
1 ½ cups (1/2-inch) sliced zucchini
1 ½ cups (1/2-inch) pieces asparagus
1 cup baby spinach
1 ½ cups sliced cooked potatoes
12 large eggs
1 pinch cayenne pepper
½ teaspoon freshly ground black pepper
4 ounces crumbled goat-milk feta cheese, divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat oil in heavy 10-inch skillet over medium heat. Cook leek with a pinch of salt, stirring occasionally, until leeks soften and start to turn translucent, 5 to 6 minutes. Add jalapeno and zucchini; season with pinch of salt. Cook until zucchini start to get tender and pale green, about 5 minutes. Add asparagus and cook until bright green, about 1 minute. Add spinach and another pinch of salt, cooking until wilted, 1 minute. Stir in cooked potatoes and heat through, about 5 minutes.
  • Crack 12 large eggs into a bowl. Add cayenne, salt, and pepper. Whisk for at least 30 seconds. Pour eggs into over vegetables in skillet over medium heat. Add 3 ounces of crumbled goat cheese; stir lightly until evenly distributed. Top with remaining cheese. Remove from heat.
  • Bake in preheated oven until eggs are set, 12 to 15 minutes. When nearly set, turn on broiler. Broil frittata until top browns, 1 to 2 minutes. Cool slightly; serve warm.

1 bell pepper, cut into strips
1/2 zucchini, halved lengthwise and sliced
1/2 onion, chopped
1/4 cup roasted red pepper, drained and chopped
1/3 cup reduced-fat mozzarella cheese, shredded, divided
2 cups egg substitute (egg beaters)
1/2 cup nonfat milk
1 teaspoon dried dill
3/4 teaspoon salt

2 tablespoons flour
3 tablespoons parmesan cheese, shredded

Steps:

  • Preheat oven to 350-degrees F.
  • Spray a 2-quart baking pan with Pam (my pan was 13x10).
  • In a large saucepan over high heat bring 1 inch of water to a boil. Add vegetables (asparagus - onion). Cover and simmer until tender. Drain.
  • Stir in roasted peppers. Spread vegetable mixture in prepared pan.
  • Sprinkle with half of the mozzarella.
  • In a bowl bowl whisk together next 5 ingredients (egg substitute - pepper) and then whisk in the flour.
  • Pour egg mixture over vegetables.
  • Bake for 35 minutes or until puffed.

8 whole eggs
2 tablespoons heavy cream
2 dashes hot sauce, such as Tabasco
Splash Worcestershire sauce
Kosher salt and freshly ground white pepper
2 tablespoons extra-virgin olive oil
16 stalks pencil asparagus, stems trimmed off
4 ounces Brie or taleggio cheese, larger parts of rind removed, cut into slices
4 ounces goat cheese, cut into rounds or crumbled into small pieces
2 cups arugula, stemmed, washed and dried
1/4 cup grated Parmesan
2 scallions, sliced into thin rounds (white and green parts)
1 cup cherry tomatoes, washed, dried and halved
1/2 lemon, juiced
Simple green salad, for serving

Steps:

  • Preheat the oven to 350 degrees F.
  • In a medium size bowl, whisk together the eggs. Add the cream, salt, pepper, hot sauce and Worcestershire and whisk to blend.
  • Heat a 10 to 12-inch cast iron (or other heavy-bottomed) skillet and add 2 tablespoons of olive oil. When the oil begins to smoke ever so slightly, add the asparagus. Season with salt and pepper. Cook for 1 minute until some of the liquid starts to escape.
  • Stir in the scallions, arugula and cheeses into the egg mixture and pour into the skillet over the asparagus.
  • Place the skillet on the center rack of the oven and cook until firm around the edges but still somewhat loose in the middle, 15 to 20 minutes. Remove from the oven and allow to "rest" for a few minutes before serving. Toss the tomatoes with salt, pepper, the remaining olive oil and the lemon juice and sprinkle them on top of the frittata just before serving.

This comes from a cookbook called "Food to Live By". So far every single recipe I've tried from it has been AMAZING. This one was no exception. I used honey ham deli meat for the ham, egg beaters and soymilk instead of milk.

1 tablespoon unsalted butter
1/3 cup finely sliced leek, white and light green parts
1 garlic clove, thinly sliced
4 asparagus spears, woody ends trimmed
1/2 cup ham, cut into 1/3 inch dice
6 large eggs
1/4 cup milk
2 teaspoons fresh dill, minced
1 tablespoon fresh chives, finely chopped
1 teaspoon lemon zest, grated
salt & fresh ground pepper
1/3 cup parmesan cheese or 1/3 cup romano cheese, grated

Steps:

  • melt butter in an 8 or 9 inch nonstick, ovenproof skillet over low heat. Add the leek and garlic and cook very slowly, stirring frequently, until soft and golden, about 10 minutes, then set skillet aside off the heat.
  • Meanwhile, fill a large bowl with water and ice cubes and set aside.
  • Bring a skillet of salted water to a boil over high heat. Add the asparagus spears and cook until blanched, about 2 minutes. Immediately drain the asparagus in a colander, then plunge into the bowl of ice water to stop the cooking. Drain asparagus again.
  • Cut asparagus spears into 1/2 inch pieces. Scatter asparagus and ham over the leek mixture in the skillet.
  • Preheat the broiler and set the rack about 5 inches from the heat source.
  • Place the eggs and milk in a medium bowl and whisk to combine. Add dill, chives and lemon zest, then season with salt and pepper.
  • Add the egg mixture to the skillet with the leek mixture and cook, without stirring, over medium-low heat until the bottom and sides have set, about 4 minutes. The top of the frittata will still be wet.
  • Sprinkle the cheese over the frittata and place the skillet under the broiler. Cook until the top puffs and turns golden brown, 3-5 minutes. Remove from the broiler and let it rest for 2 minutes.
  • Run a heat-proof rubber spatula or small knife around the edge of the frittata to release it from the skillet. Slide it onto a serving plate. Cut into 4 wedges and serve hot.

This frittata is meant to be thin, with just enough egg to bind the filling. Sunchokes are also known as Jerusalem artichokes. Roasting them brings out their nutty essence. Yukon Gold potatoes can be substituted.

12 ounces sunchokes, scrubbed and cut into 1/4-inch-thick slices
5 fresh or dried bay leaves
1/4 cup extra-virgin olive oil
4 garlic cloves, smashed
Fine sea salt and freshly ground pepper
1 bunch Swiss chard (12 ounces), stems removed
5 large eggs
1 1/4 ounces freshly grated Parmesan cheese (3/4 cup)
3 scallions, thinly sliced crosswise

Steps:

  • Preheat oven to 500 degrees. Toss together sunchokes, bay leaves, 3 tablespoons oil, and garlic on a rimmed baking sheet. Season with salt and pepper. Roast until tender and dark golden-brown around edges, 15 to 20 minutes. Discard bay leaves. (Leave oven on.)
  • Bring a pot of salted water to a boil. Add Swiss chard, and cook until tender, about 5 minutes. Drain; let cool slightly. Squeeze out excess liquid.
  • Whisk eggs with 1/4 teaspoon pepper, the Parmesan, and scallions in a bowl. Heat remaining tablespoon oil in a 12-inch ovenproof skillet over medium-high heat. Add sunchokes and Swiss chard, and spread on bottom of skillet. Add egg mixture, filling in spaces between vegetables. Swirl to distribute (eggs will not cover vegetables completely). Cook, shaking skillet occasionally, until sides are set, about 2 minutes.
  • Transfer to oven, and bake until puffed and center is set, 4 to 5 minutes. Place a large platter over skillet, and invert. Serve hot, warm, or at room temperature.

Steps:

  • 1. Preheat oven to 425°F.
  • 2. Heat the oil in a large ovenproof sauté pan over medium heat. Add the leek and sauté until soft, then add the peas and cook for 2 to 3 minutes more.
  • 3. Meanwhile, in a medium bowl, beat the eggs with 1 tablespoon water.
  • 4. Add the eggs and half the mint to the pan, season with the salt and pepper, and cook, lifting the edges with a spatula to allow the uncooked eggs to flow to the bottom. When the frittata is partly cooked (7 to 10 minutes), sprinkle on the ricotta and transfer the pan to the oven.
  • 5. Bake until puffed, golden, and set, 8 to 10 minutes. Remove and allow to cool slightly. Garnish with the remaining mint to taste and serve.

1/2 cup peas
1/2 cup carrot, thinly sliced
1/2 cup asparagus, sliced into 1 inch pieces
4 slices bacon, diced
vegetable oil, if needed
1 onion, diced
8 eggs
salt and pepper

Steps:

  • Steam or boil peas, carrots and asparagus until tender, drain well and set aside.
  • Cook bacon in an ovenproof skillet over low heat until crisp.
  • Remove with slotted spoon and place on paper towels to drain.
  • Add vegetable oil to bacon grease (if necessary) to equal 2 tablespoons.
  • Increase heat to medium/low and add the onion.
  • Cook until transparent, stirring occasionally.
  • Add vegetable mixture to onions and cook for another 10 minutes.
  • Meanwhile, in another bowl, beat eggs and salt and pepper together.
  • Pour over mixture in skillet and add bacon crumbles. Stir gently.
  • Preheat broiler.

1/2 lb fresh asparagus spears, trimmed, cut into 1-inch pieces
1 small red bell pepper, thinly sliced
2 cartons (8 oz each) fat-free cholesterol-free egg product (2 cups) or 8 eggs, lightly beaten
1 tablespoon finely chopped fresh basil
1/4 teaspoon salt

Steps:

  • In 10-inch nonstick skillet, heat 2 teaspoons of the oil over medium-high heat. Add asparagus and bell pepper; cook 3 to 5 minutes, stirring frequently, until crisp-tender. Remove from heat; place cooked vegetables in medium bowl. Stir egg product, basil and salt into vegetables.
  • In same skillet, add remaining 2 teaspoons oil and the egg mixture. Cook over medium heat about 5 minutes or until bottom is lightly browned and top is set, lifting edges occasionally to allow uncooked egg mixture to flow to bottom of skillet.
  • Place skillet-size heatproof plate, upside down, on top of skillet. Turn plate and skillet over; slide frittata back into skillet, browned side up. Cook until bottom is lightly browned. Invert onto serving plate if desired. Cut into wedges.

1 bunch thin asparagus (about 2 cups)
8 large eggs
1 cup spring salad greens
2 tablespoons milk
2 tablespoons freshly grated pecorino, optional

Steps:

  • Preheat the oven to 350 degrees F. Heat the oil in a 10-inch ovenproof skillet. Add the asparagus and cook over medium-low heat until softened but not browned, about 6 minutes.
  • Meanwhile, in a medium bowl, beat the eggs, greens, milk, cheese if using and 1/4 teaspoon each salt and pepper.
  • Add to the skillet with the asparagus; cook until the eggs begin to set at the edges, about 30 seconds. Using a spatula, lift the edges and tilt the pan, letting the uncooked eggs seep underneath. Cook until the bottom is set, about 3 minutes. Transfer to the oven and bake until fluffy, 6 to 8 minutes; cut into 6 wedges.

1/3 cup marcona almonds, toasted
3/4 cup fresh flat leaf parsley
3 tablespoons extra-virgin olive oil
2 tablespoons grated parmesan cheese
1/4 teaspoon fine sea salt
3 tablespoons extra-virgin olive oil
4 medium leeks, white and pale green parts only
2 garlic cloves, minced
2 teaspoons fresh thyme leaves, finely chopped
kosher salt & freshly ground black pepper
2 zucchini, thinly sliced on a mandoline
15 large eggs
1 1/4 cups ricotta cheese

Steps:

  • Make the Parsley Pesto: Put the almonds into a food processor and pulse until the finely minced. Add the parsley, oil, Parmesan, salt and puree to combine. Reserve the pesto covered in the refrigerator.
  • Make the Frittata: Halve the leeks lengthwise and then cut crosswise into 1/2-inch pieces. Put the sliced leeks in a colander and rinse really well under cool water, checking for dirt between the layers. Drain well; you should have about 4 cups of sliced leeks.
  • Coat a 10-inch skillet with 2 tablespoons of the oil and place over medium heat. When the oil is hot, add the leeks, garlic, and thyme. Cook, stirring occasionally, until the leeks are tender but not brown, about 10 minutes. Season with salt and pepper. Transfer the leek mixture to a 9-by-13-inch baking dish that has been coated with non-stick cooking spray and spread them out in an even layer.
  • To same skillet, add the remaining 1 tablespoon of oil and return to medium heat. Add the zucchini and sauté for 5 minutes, until tender. Season with salt and pepper. Transfer the zucchini to the baking dish, and spread out on top of the leeks.
  • Put the eggs, ricotta, and reserved Parsley Pesto in a large bowl and whisk until blended. Season with salt and pepper. Gently stir with a wooden spoon so the egg mixture is fully incorporated with the vegetables.
  • Preheat the oven to 300-degrees F (150-degrees C).
  • Put the baking dish into a larger roasting pan and pour hot water into the roasting pan to come halfway up the sides of the baking dish to create a water bath.
  • Bake the frittata for 50 minutes. Gently shake the pan, and if it still appears loose in the center, return to the oven for another 5 minutes. It should be set and only slightly jiggly in the center.
  • Remove the frittata from the water bath and let it rest at room temperature before cutting.

5 small red potatoes, cut into 8 pieces each
2 cups fresh asparagus, sliced
2 tablespoons sliced green onions
1 clove garlic, minced
6 eggs
1/3 cup milk
1/2 teaspoon salt
1/8 teaspoon pepper
1/2 cup feta cheese, crumbled
1 tablespoon fresh basil, chopped

Steps:

  • Heat oil in skillet (preferably nonstick) until hot.
  • Add potatoes, cover and cook 10- 12 minutes until almost tender, stirring occasionally.
  • Add asparagus, onions, and garlic.
  • Cook 4 more minutes until asparagus is almost tender.
  • Beat eggs in medium bowl, add milk, salt, and pepper, and beat well.
  • Pour eggs over veggies in skillet.
  • Reduce heat to low, sprinkle with cheese and basil, then cover and cook for 12 to 15 minutes until eggs are set, don't stir!
  • Cut into wedges to serve.

Soft bite-size sandwiches loaded with fresh flavors of springtime. There are quite a few ingredients here, but once your prep is done, this frittata is surprisingly simple to put together. Prep the bacon, and cut the leeks, asparagus and jalapeno the night before you plan to serve it to make things easy on yourself in the morning.

3 strips applewood smoked bacon, diced (about 1/2 cup)
1 leek, white and light green parts, halved vertically then sliced into thin half-moons, washed
3 asparagus spears, sliced into thin rounds on a slight diagonal
1 small jalapeno, seeds and ribs removed, flesh minced
3/4 cup sour cream
2 tablespoons minced fresh parsley
1 tablespoon minced fresh basil
1 tablespoon minced fresh chives
Kosher salt and freshly cracked black pepper
12 large eggs
1/2 cup half-and-half
6 tablespoons unsalted butter
1/2 cup halved grape tomatoes
1/4 cup frozen petit peas, defrosted
2 tablespoons diced roasted yellow peppers
3 tablespoons garlic-and-herb goat cheese
Mini potato rolls, split
1 cup baby arugula leaves

Steps:

  • Mix the sour cream and herbs together, season with salt and pepper and set aside.
  • Put the bacon in a large nonstick skillet over medium-low heat and cook, stirring occasionally, until crisp and the fat has rendered out, 7 to 8 minutes. Remove the bacon from the skillet to a paper towel-lined bowl and set aside.
  • In the leftover bacon drippings, cook the leeks with a pinch of salt over medium-low heat until soft, about 6 minutes. Add the asparagus and jalapenos, season again with salt and cook, stirring until just tender, another 1 to 2 minutes. Remove from the skillet and set aside.
  • Whisk the eggs and half-and-half together, and sprinkle with 1 teaspoon salt and 1/2 teaspoon pepper. Wipe out the skillet and set over medium-low heat. Add 2 tablespoons butter and swirl around to coat the skillet. Once melted, add the egg mixture.
  • Sprinkle the bacon, sauteed vegetables, tomatoes, peas and roasted yellow peppers on top, making sure to evenly distribute everything over the eggs. Using your fingers, pinch off pieces of the goat cheese and sprinkle evenly around. Turn the heat to low and cover the pan. Let the frittata cook until the eggs are firm and no longer jiggly in the middle, 25 to 30 minutes.
  • Meanwhile, butter the potato buns with the remaining 4 tablespoons butter and toast until lightly golden.
  • Allow the frittata to rest for 10 minutes before slicing. Slide out onto a cutting board. Then, slice the frittata into squares the same size as your rolls. If you are looking for a fancier presentation, use a similar-size cookie cutter and punch out rounds of the frittata.
  • Place some of the herbed cream on the bottom of your bun, top with a piece of frittata, pile on some baby arugula and add the top bun.

  • Melt Parkay in 8-inch nonstick skillet over medium heat. Add asparagus. Cook 5 minutes or until crisp-tender, stirring occasionally. Add onions and ham. Heat 2 minutes more. Pour Egg Beaters over vegetables and ham. Reduce heat to medium-low. Cover and cook 8 minutes or until Egg Beaters are set. Sprinkle with cheese. Cut in half to serve. 400g leftover cooked new potato , sliced
4 eggs , beaten
4 spring onions , finely sliced
1 bunch dill , roughly chopped
25g cheddar , grated

Steps:

  • In a small non-stick frying pan, heat oil over a medium heat. Add potatoes, then fry until beginning to crisp, about 8 mins. In a bowl, whisk together eggs, spring onions, dill and some seasoning. Heat the grill.
  • Tip the eggs into frying pan, mix quickly, lower the heat, then sprinkle over cheese. After about 8 mins, once the top side has almost set, pop under the grill for 2-3 mins or until firm and golden. Slide out of the pan. Eat straight away with mayo or ketchup or cool quickly and chill.
