CHICKEN MANGO BASIL STIR-FRY

1 1/4 cups chicken broth
1/4 cup soy sauce
5 teaspoons cornstarch, divided (you'll use part of it in the sauce and part for the chicken)
1 tablespoon rice vinegar
1 pinch red pepper flakes (add more for extra heat)
2 teaspoons sugar
1 1/2-2 lbs chicken breasts, cut into bite-sized pieces
1 teaspoon salt
1/2 teaspoon pepper
2 teaspoons vegetable oil
4 garlic cloves, minced
2 large mangoes, peeled, pitted and diced
1 red bell pepper, stemmed, seeded and diced
1 medium red onion, diced
1/4 cup fresh basil, torn into pieces
1 1/2 cups white rice
1 1/2 cups pineapple (optional)

Steps:

  • In a small bowl or liquid measuring cup, whisk together the broth, soy sauce, 2 teaspoons cornstarch, vinegar, red pepper flakes and sugar until smooth. Set aside.
  • In a medium bowl, toss the chicken with 1 teaspoon salt, 1/2 teaspoon pepper and remaining 3 teaspoons cornstarch.
  • In a large 12-inch nonstick skillet, heat the 2 teaspoons oil over medium heat until hot and rippling. Add the chicken, breaking up any clumps, and cook until it is golden brown on all sides and just barely cooked through (it will cook a few minutes longer later in the recipe). Scrape the chicken onto a plate, keeping as much liquid in the skillet as possible.
  • Add the garlic, bell pepper, and onion and cook for 3-4 minutes, until the vegetables are crisp-tender.
  • Return the chicken and any accumulated juices to the skillet over medium heat. Whisk the sauce quickly before pouring it into the skillet. Add the mango (or pineapple). Cook, stirring constantly, while the sauce simmers and thickens, 1-2 minutes. Season with additional salt and pepper to taste, if needed.
  • Sprinkle with basil and serve over rice.

CHINESE BEEF AND MANGO STIR FRY

This is a pretty well known Chinese recipe. I saw it on TV, but I've made a couple changes. For instance, the recipe originally called for grated orange peel, but when I first made the recipe I didn't have any oranges, so instead of using orange peels I added just a splash of triple sec. It came out very good and now I use it all the time.

1 lb steak, sliced into one inch strips
3 cups broccoli florets
1 fresh mango, peeled and cut into one inch cubes
1 tablespoon corn oil
1 tablespoon cornstarch
1/4 cup soy sauce
1 teaspoon brown sugar
1 tablespoon garlic, chopped
1/2 teaspoon chili powder
1 tablespoon triple sec
4 cups cooked white rice, to serve

Steps:

  • Combine sugar, soy sauce, garlic, and triple sec in a large bowl an mix well.
  • Add meat, combine and coat. Cover and refrigerate 1 to 4 hours.
  • Drain meat, reserving marinade. Add cornstarch to reserved marinated and mix until blended; set aside.
  • Add oil to a large wok or skillet and bring to medium heat.
  • Stir fry steak for 3 minutes or until almost cooked through.
  • Add broccoli and stir fry for another 3 minutes, or until tender.
  • Add reserved marinade and mango and bring to a boil.
  • Stir constantly for two minutes or until sauce thickens and coats the meat.
  • Add chili powder. Season to taste with pepper.
  • Serve over cooked rice.

1 pork tenderloin (about 1 pound)
2 teaspoons olive oil
1 teaspoon jamaican jerk spice
1 medium mango, peeled and chopped
1 red bell pepper, chopped
2/3 cup orange juice
2 teaspoons cornstarch
1/2 teaspoon bottled hot pepper sauce
1/4 cup sliced green onion

Steps:

  • Trim fat from meat and cut into thin strips.
  • Heat oil in a large skillet or wok until very hot.
  • Add pork and seasoning blend.
  • Stir-fry 2 minutes.
  • Add mango and bell pepper.
  • Stir-fry 2 minutes or just until pork loses its pink color.
  • Mix together orange juice, cornstarch and pepper sauce until smooth.
  • Add to pork mixture in the skillet or wok.
  • Cook and stir 2 minutes or until sauce is clear and thick.
  • Stir in green onions.

This is a recipe that I have had for some time now, and I don't even remember where I got it, but it does sound delicious, so I thought I'd post it - Have fun with it!!

6 boneless skinless chicken breasts, about 2 lb
2 -3 tablespoons vegetable oil
4 cups mushrooms
4 teaspoons fresh ginger, minced
1 medium jalapeno pepper, seeded and finely chopped
1 pepper or 1 two small red chile, seeded and finely chopped
3 garlic cloves, minced
1/4 teaspoon red chili pepper flakes
1 1/4 cups chicken broth or 1 1/4 cups chicken bouillon
4 teaspoons fish sauce
1 1/2 teaspoons sugar
1 green onion, sliced
1/4 cup fresh basil, coasrse chopped (or shredded)

Steps:

  • Cut chicken into bite-size strips, about 1/4-inch wide. Heat 1 tablespoon oil in a large nonstick frying pan set over medium-high heat. Add about half of chicken ad stir-fry until almost cooked, from 3-4 minutes. Remove to a plate. Repeat with remaining chicken, add more oil if needed. Remove to plate.
  • Add remaining oil to pan, then mushroom, ginger, jalapeno, pepper, garlic, and chili flakes. Stir often until lightly browned, about 5 minutes. Stir in broth, fish sauce and sugar. When boiling, add chicken and and any juices that have collected on plate. Cook uncovered, and stirring often, just until chicken is done as you like it, or feels springy to the touch, about 2 minutes. Sti in onion and basil. Taste and add a little more fish sauce if you like.
  • Spoon over rice in individual bowls.

1 medium red onion
2 cups snow peas
1 large ripe mango
1 tablespoon vegetable oil
2 tablespoons grated gingerroot
16 ounces peeled green prawns
1 tablespoon dry sherry
1 tablespoon soy sauce
1 teaspoon cornstarch

Steps:

  • Halve and slice the onion. Top and tail snow peas. Peel and slice mango.
  • Heat oil in wok and stir fry the onion and ginger for 2-3 minutes. Add the snow peas and prawns stir fry 1 minute.
  • Add mango, sherry and soy sauce stir fry 1 minute.
  • Mix cornstarch with 1 tbsp water. Add to wok. Stir fry for another 1-2 minutes until sauce thickens.
  • Serve immediately.

1 tablespoon grapeseed oil
2 tablespoons chopped fresh ginger
2 garlic cloves, chopped
3/4 teaspoon hot red pepper flakes
1 lb bc spot prawns, peeled and deveined
1 red bell pepper, deced
1 green bell pepper, diced
1 mango, peeled and diced
1 tablespoon organic soy sauce
1 teaspoon toasted sesame oil
3 green onions, chopped
1/2 cup fresh basil leaf, shredded

Steps:

  • Heat grapeseed oil in a wok over medium heat.
  • Mix in ginger, garlic and red pepper flakes.
  • Cook and stir for one minute.
  • Raise Heat to high.
  • Add red and green peppers and prawns and stir fry for 3 to 4 min until prawns are just opaque. Add mango and cook for another 30 seconds.
  • Remove from heat and mix in soy sauce, sesame oil, green onion and basil leaves.
  • Serve immediately over steamed rice.
