HAM AND CHEESE CRESCENT SPIRALS
This is one of my forgotten recipes that I just recalled when looking for appetizer recipes. These make great bite-size snacks or appetizers. Recipe can easily be cut in half.

Steps:
- On a nonstick surface or wax paper, unroll each tube of crescent dough. Seperate each 8-oz tube into 2 large rectangles (you'll have 4 total).
- Seal the perforations very well and spread out dough just a bit.
- In a bowl, beat together the cream cheese sour cream and mustard. Stir in the scallions, ham, cheese and garlic powder; mix well.
- Spread each rectangle with one-fourth of the cream cheese mixture. Spread it thin and leave 1/2" on the sides.
- Roll up the rectangles jelly-roll style.
- Wrap each roll in wax paper and place in the freezer for 20-25 minutes.
- Preheat oven to 375°F.
- Unwrap rolls and cut into about 1/2" slices.
- Place slices on a nonstick or lightly greased cookie sheet and bake for about 12 minutes or until lightly golden.
- After baking, allow to cool for 3 minutes before removing from cookie sheet.
- Serve warm or cold.
HAM AND CHEESE SPIRALS
Steps:
- In a small bowl, whisk together the olive oil, garlic, and Italian seasoning.
- On a lightly floured surface, roll out the pizza dough into a 12-inch square. Brush the entire surface with the seasoned olive oil. Top with 1 cup of shredded cheese and an even layer of ham. (Reserve the extra cheese and ham for Round 2 Ham and Cheese Croquettes.)
- Starting from the bottom edge, tightly roll up the dough to form a log. Using a sharp serrated knife, slice the roll on the bias into 1-inch thick pieces. Arrange the rolls on their side on a nonstick or lightly oiled baking sheet. Cover loosely with plastic wrap and allow to sit at room temperature for 30 minutes to proof.
- Preheat the oven to 375 degrees F.
- In a small bowl, whisk together the egg with 2 tablespoons of water. Brush the tops and sides of the rolls with the egg wash. Bake until golden brown, about 30 to 35 minutes.
- Remove from the oven, transfer to a serving platter and serve.

- Cook pasta according to package directions. Meanwhile, in a Dutch oven, melt 3 tablespoons butter. Stir in flour until smooth; gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Add 2 cups cheddar cheese, 1/2 cup Parmesan cheese, salt and pepper., Drain pasta. Add to cheese mixture; toss gently to coat. Transfer to a greased 11x7-in. baking dish. Melt remaining butter; add bread crumbs and remaining cheddar and Parmesan cheeses. Sprinkle over top. Bake, uncovered, at 400° for 20-25 minutes or until golden brown.

BRONZE AND RED LETTUCE SALAD WITH SERRANO HAM AND GOAT CHEESE SPIRALS

- Stir goat cheese, 2 tablespoons hazelnut oil, 1/4 teaspoon rosemary, and lemon peel in small bowl to blend. Season lightly with salt and pepper.
- Place sheet of plastic wrap on work surface. Place 1 slice ham in center of plastic. Spread generous 2 tablespoons goat cheese mixture evenly over ham. Place single layer of spinach leaves over cheese mixture. Top spinach with second ham slice. Repeat layering 2 more times. Starting at 1 long side and using plastic wrap as aid, roll up ham jelly-roll style. Place additional ham slice over seam to cover exposed cheese and spinach leaves (roll will be about 1 1/2 to 2 inches in diameter). Wrap tightly in plastic. Repeat with remaining ham, cheese, and spinach to form second roll. Chill until firm, at least 6 hours. (Can be prepared 2 days ahead. Keep chilled.)
- Whisk 1/2 cup hazelnut oil, 1/4 teaspoon rosemary, Sherry vinegar, shallot, and sugar in small bowl. Season dressing with salt and pepper.
- Toss lettuces with 1/4 cup dressing and 1/4 cup hazelnuts. Mound salad in center of 8 plates. Unwrap ham rolls. Slice each roll into twelve 1/2-inch-thick rounds. Arrange 3 rounds around each salad; sprinkle salad with remaining nuts, drizzle dressing around salad and over ham rounds, and serve.
CREAM CHEESE AND TURKEY SPIRALS
Steps:
- Place a tortilla on your cutting board. Spread a thin layer of cream cheese all over the tortilla. Sprinkle garlic powder or herb blend over cream cheese. Arrange turkey slices in one layer on top of the cream cheese. Roll tortilla tightly.
- At this point you can cut it into rounds or store it in the fridge until your party.
- If you want to store it, wrap plastic wrap around it tightly. Make sure you cover the ends so the tortilla doesn't dry out and get hard. When you are ready to use it, just unwrap and slice. They can sit in the fridge for about three days before they get soggy. Placing them (wrapped up) in an air-tight storage bag helps keep them fresh.

- In a large frying pan, heat oil.
- Add carrot, red pepper, onion, garlic and curry powder and cook until softened, about 3 to 5 minutes.
- Remove from heat.
- Stir in coriander, lemon juice and salt; let cool slightly.
- In a mixing bowl, stir cream cheese until creamy, using a wooden spoon.
- Stir in vegetable mixture and mix well.
- Lay tortillas out on a work surface.
- Spread each tortilla with the cream cheese mixture.
- Roll up tightly, pressing firmly to seal.
- Wrap in plastic wrap and refrigerate for at least 2 hours or overnight.
- To serve, trim ends of rolls, then cut each roll on a diagonal into 8 to 10 slices.
- Serve chilled.

- 1. Carefully spread cheese on turkey or ham slices. Starting at short end, roll up. Individually wrap each roll in plastic wrap. Refrigerate at least 2 hours. 2. Remove plastic wrap. With sharp knife trim ends of each roll. Cut rolls into 1/2-inch-thick slices. Top each cracker with basil leaf or parsley and cream cheese roll.

HAM AND SWISS CHEESE SPIRALS

- Whip cream cheese; add mayonnaise, mustard, horseradish, salt, garlic and sugar. Spread cheese mixture on flour shells, about 3 tablespoons for each shell, depending on the size. Sprinkle 1/8 cup of spinach on cheese spread. Place ham near the edge and then the Swiss chese on top of the ham. Beging rolling shell. Wrap rolled shells in plastic and let set in the refrigerator for several hours until set. When rolls have set cut into 1/4" slices. Arrange on tray, garnish with pickles or cherry tomatoes.
