Spinach is one of my favorite vegetables. When I found this in a food magazine (one of the free magazines you get here at the supermarket) I immediately had to try it.

2 lbs fresh spinach, washed
1/2 tablespoon butter or 1/2 tablespoon margarine, melted
2 teaspoons balsamic vinegar (dark or white)
salt and pepper

Steps:

  • Cook spinach with water that clings to it 3-5 minutes or until leaves begin to wilt.
  • Remove from heat and drain thoroughly.
  • Season with salt and pepper to taste.
  • Combine melted butter (margarine) and vinegar.
  • Mix in butter and vinegar just before serving.

8 tablespoons extra-virgin olive oil
4 tablespoons balsamic vinegar
2 tablespoons lemon zest
½ lemon, juiced
3 cloves garlic, minced
12 baby bella mushrooms, sliced
2 tablespoons unsalted butter
1 (6 ounce) bag baby spinach
1 tablespoon salt
1 teaspoon ground black pepper

Steps:

  • Whisk olive oil, balsamic, lemon zest, juice, and garlic together in a large bowl. Add sliced mushrooms and marinate for at least 1 hour.
  • Melt butter in a skillet over medium-low heat; cook, stirring frequently, until browned and fragrant, 5 to 8 minutes. Drain mushrooms, reserving the marinade, and add to skillet. Cook until starting to soften, 2 to 3 minutes. Add spinach and 2 tablespoons marinade. Reduce heat to medium-low and saute for 20 minutes. Season with salt and pepper.

1 (10 ounce) package frozen spinach, thawed drained and squeezed dry
2 cloves garlic, cut into slivers
1 1/2 tablespoons olive oil
2 tablespoons balsamic vinegar

  • Heat oil in sauce pan.
  • Saute garlic slivers in oil.
  • Add spinach and coat with oil and to heat through.
  • Put spinach in serving bowl and drizzle with balsamic vinegar.

Tasty little spinach salad. A bit of sweet and a bit of tangy come together in a mouth water spring delight. This salad has been rolling around in my head for weeks, I finally had a chance to try it out and we love it here!

6 ounces spinach, rinsed
3 ounces feta, crumbled
1/2 cup craisins
4 slices bacon
3 small garlic cloves, minced
1 large shallot, minced
1/4 cup balsamic vinegar
2 tablespoons lemon juice

Steps:

  • rinse the spinach and toss with craisins and feta.
  • fry bacon until crisp, drain and chop.
  • turn off heat, but while the pan is still hot add shallot and garlic to the bacon drippings.
  • cook until the garlic is lightly browned, returning the heat if necessary.
  • Deglaze the pan with the balsamic vinegar and lemon juice.
  • toss with spinach and serve immediately.

I like fresh spinach and when I cook it to serve as a side dish I like to make this recipe, the balsamic vinegar gives it just the right zip that makes it even better.

1/4 lb butter
2 Tbsp olive oil
2 Tbsp balsamic vinegar
1 c chopped yellow oniions
2 lb fresh spinach, about 3 bunches coarse chopped, large stems removed, spun dry
salt and pepper

Steps:

  • 1. How to make it: In a large deep heavy skillet at least 12 inches across top heat oil over moderately high heat until hot but not smoking and add the butter, oil and onions. Cook onions until they begin to carmelize. Add the spinach and balxamic vinegar. Cook spinach, covered, stirring occasionally, until wilted, about 3 minutes, and season with salt and pepper.
