Spinach Garlic Parmesan Orzo with Crispy Bacon image

Easy, flavorful spinach garlic parmesan orzo pasta with crispy bacon and gorgeous veggies like red bell pepper, corn, carrots, and spinach. This creamy garlic parmesan orzo recipe comes together in 30-minutes, is the perfect meal prep dinner, and is delicious hot or cold!

8 slices bacon
10 ounces uncooked orzo pasta (about 1 2/3 cup uncooked orzo)
1/2 cup reserved pasta water, after pasta is done boiling
1 tablespoon butter
3 cloves garlic, finely minced
½ cup shredded carrots (or carrots cut into matchsticks)
2/3 cup frozen or fresh sweet corn
1 red bell pepper, cut into chunks
1 (5 ounce) package organic spinach
1/2 cup freshly grated parmesan cheese
1/2 teaspoon garlic powder
1/2 teaspoon red chili pepper flakes, plus more if desired
Freshly ground salt and pepper
To garnish: Fresh flat-leaf parsley + extra parmesan cheese, corn and bacon on top

Steps:

  • Add bacon to a large skillet or pan and place over medium heat, cook bacon on both sides until crispy and golden brown. If the pan starts to smoke at any point, simply lower the heat. I always cook my bacon on medium low heat. Once bacon is done, blot with a paper towel to absorb excess grease, then chop into bite sized pieces and set aside.
  • While the bacon is cooking, place a large pot of water over high heat and add in a generous amount of salt. Once water boils, stir in the orzo and cook until al dente about 7-9 minutes. Once orzo is done cooking, drain pasta and set aside in the colander. Make sure to reserve ½ cup of the pasta water.
  • Next add 1 tablespoon butter to the same pot you cooked the pasta in and place over medium heat. Once butter is melted, add in minced garlic, carrot, corn, red bell pepper and saute for 2 minutes.
  • Next add in spinach; cooking until the spinach wilts, about 2 minutes. Add the cooked orzo back into the pot and turn the heat to low. Stir in the reserved pasta water, parmesan, garlic powder and red chili pepper flakes.
  • Finally, stir in bacon crumbles. Add salt and pepper to taste. I like to add A LOT of black pepper into this dish -- it just gives it a really nice flavor! If you think it needs a little extra parmesan cheese, feel free to stir in 1/4 cup more. Enjoy. Serves 4.

2 c orzo pasta, cooked al dente
5 garlic cloves, smashed
1 c parmesan cheese
1 Tbsp olive oil
salt/pepper to taste

Steps:

  • 1. boil orzo, al dente ( firm to taste) about 8-9 mins.
  • 2. in a large pot,add the olive oil, garlic, immediately add the fresh spinach... stir together for a min,drain and rinse the orzo and add to the pot..take off the burner...the warmth of the orzo will continue wilting down the spinach without overdoing it....add parmesan cheese, combine gently ...and that's all she wrote...sooo yummy

1 whole garlic bulb
1 teaspoon plus 1 tablespoon olive oil, divided
1-3/4 cups uncooked whole wheat orzo pasta
2-1/2 cups chicken stock
3 ounces reduced-fat cream cheese, cubed
1 package (9 ounces) fresh spinach, trimmed and chopped
1/4 cup shredded Asiago cheese
1/4 cup fat-free milk
1 teaspoon salt-free garlic pepper seasoning blend
1/4 teaspoon salt
2 tablespoons minced fresh parsley

Steps:

  • Preheat oven to 425°. Remove papery outer skin from garlic bulb but do not peel or separate the cloves. Cut off top of garlic bulb, exposing individual cloves. Drizzle cut cloves with 1 teaspoon oil. Wrap in foil. Bake 30-35 minutes or until cloves are soft. Unwrap. When cool enough to handle, squeeze garlic from skins., In a Dutch oven, heat remaining oil over medium-high heat. Add pasta; cook and stir 2-3 minutes or until lightly browned. Add stock; bring to a boil. Reduce heat; simmer, covered, 10-12 minutes or until pasta is tender and liquid is absorbed., Stir in cream cheese until melted. Add spinach, Asiago cheese, milk, seasoning blend, salt and roasted garlic; cook and stir until spinach is wilted. Sprinkle with parsley.

1/4 cup olive oil
3 cloves garlic, peeled and sliced
1 bunch spinach, stemmed and washed
Salt and pepper to taste
1 pound orzo
Salt
3 tablespoons fine quality olive oil
1/2 cup finely grated good quality Parmesan cheese

Steps:

  • In a wide saute pan, heat olive oil and add garlic, saute 1-2 minutes over medium heat until limp. Add roughly chopped spinach, salt and pepper, cover and cook 3-4 minutes, stirring occasionally. Place spinach mixture in blender and puree until smooth. Reserve.
  • Bring a large pot of salted water to a rolling boil. Add orzo and stir gently. Cook 4-7 minutes checking occasionally. The pasta should be firm but cooked through. Coat a large flat pan with olive oil and have ready. Strain orzo through a large strainer shaking off excess water. Immediately spread hot pasta out on the tray for a minute or two to cool slightly and release as much steam from the orzo as possible. Toss orzo with spinach puree and grated cheese and serve immediately.

2 teaspoons minced garlic
¼ cup Parmesan cheese
2 tablespoons milk
1 tablespoon chopped fresh parsley
½ teaspoon salt and ground black pepper

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook orzo in the boiling water, stirring occasionally until cooked through but firm to the bite, about 11 minutes. Drain.
  • Melt butter in a skillet over medium heat; cook and stir garlic in melted butter until lightly browned, about 5 minutes. Stir orzo into garlic mixture and mix in Parmesan cheese, milk, parsley, salt, and black pepper.

1 (16 ounce) package uncooked orzo pasta
1 (10 ounce) package baby spinach leaves, finely chopped
½ pound crumbled feta cheese
½ red onion, finely chopped
¾ cup pine nuts
½ teaspoon dried basil
¼ teaspoon ground white pepper
½ cup olive oil
½ cup balsamic vinegar

Steps:

  • Bring a large pot of lightly salted water to a boil. Add orzo and cook for 8 to 10 minutes or until al dente; drain and rinse with cold water. Transfer to a large bowl and stir in spinach, feta, onion, pine nuts, basil and white pepper. Toss with olive oil and balsamic vinegar. Refrigerate and serve cold.
