PANFORTE DI SIENA image

2/3 cup honey
2/3 cup sugar
2/3 cup finely diced citron or candied lemon peel
2/3 cup finely diced candied orange peel
1 1/2 cups blanched almonds, lightly toasted and coarsely chopped
2/3 cup all-purpose flour
1 tsp. cinnamon
1/2 tsp. coriander
1/2 tsp. cloves
1/2 tsp. nutmeg
flour, for dusting
confestioner's sugar, for dusting

Steps:

  • Set a rack in the middle of of the oven; preheat to 300. Line bottom and sides of 8 inch pan, 2 inches deep with buttered foil. Combine sugar and honey in med saucepan. Stir to mix well, place on low heat. Cook, stirring occasionally, until mixture comes to full boil, then remove from heat. Stir in candied fruit and almonds. Stir together flour and spices, add to batter, then stir and smooth. Scrape batter into pan and smooth. Dust with flour so panforte doesn't crust when baking. Bake until firm and gently simmering just around edges - about 20-25 minutes. Cool in pan on rack. when completely cool, invert to remove flour and brush off. Remove foil ; wrap in plastic or foil and keep at room temp. To serve, dust with powdered sugar.
