SPINACH, FETA, AND SUN-DRIED TOMATO PHYLLO TRIANGLES



Spinach, Feta, and Sun-Dried Tomato Phyllo Triangles image

2 (10 ounce) packages frozen chopped spinach, thawed and squeezed dry
2 cups crumbled feta cheese (about 12 oz.)
3/4 cup roughly chopped of fresh mint
1/2 cup roughly chopped sun-dried tomato (oil-packed and drained)
1/2 cup pitted and roughly chopped kalamata olive
4 large eggs, lightly beaten
3 tablespoons chopped garlic
2 tablespoons fresh lemon juice
1 tablespoon finely grated lemon zest
3/4 teaspoon fresh ground black pepper
1/2 teaspoon kosher salt
1 (1 lb) package phyllo dough, thawed according to package directions (preferably a twin-pack)
1/2 lb melted unsalted butter, plus more as needed for baking

Steps:

  • Position racks in the top and bottom thirds of the oven and heat the oven to 375°F In a large bowl, combine the spinach, feta, mint, sun-dried tomatoes, olives, eggs, garlic, lemon juice and zest, pepper, and salt. Mix well.
  • Unroll the phyllo and lay it flat on a clean, dry surface. Cover completely with plastic wrap. Working with one sheet of phyllo at a time, and keeping the rest covered with the plastic wrap to keep it from drying out, place a sheet vertically in front of you. Brush the phyllo with butter and cover with another sheet. Butter the top sheet and cut the phyllo lengthwise into equal 3-inch-wide strips. Spoon 2 teaspoons of filling on the lower end of each strip as shown in the left photo below. Fold up the phyllo strips as you would a flag to create a neat triangle, being careful not to roll too tightly or the triangles will crack when baked. Transfer to a baking sheet and cover with plastic. Repeat with the rest of the phyllo and filling until you run out of filling.
  • Butter two sheet pans. Arrange the phyllo triangles on the prepared baking sheets in a single layer. Brush the tops of the triangles with melted butter and bake until golden brown, 15 to 20 minutes, switching the positions of the pans halfway through baking.
  • Make Ahead Tips. Assembled, unbaked phyllo triangles can be frozen for up to a month. Freeze the triangles on the baking sheet. When frozen, transfer them to an airtight container, setting parchment or plastic wrap between layers if needed, and return to the freezer. Bake as directed above (do not thaw the triangles first); baking time will be 20 to 25 minutes.

1/4 cup onion, chopped
1/4 cup chicken broth, defatted
2 tablespoons all-purpose flour
1/2 cup skim milk
8 ounces low-fat cheddar cheese, grated
10 ounces fresh spinach or 10 ounces frozen spinach, cooked, drained and chopped
7 egg whites
3 sheets phyllo pastry
2 tablespoons olive oil

Steps:

  • Preheat oven to 375 F (190 C). Saute onions in chicken broth until broth has evaporated.
  • Stir flour into milk until dissolved.
  • Add to onions and stir constantly over medium heat until thickened.
  • Blend in cheese until melted.
  • Remove from heat and stir in spinach.
  • Beat 6 egg whites until frothy and blend into cheese mixture. Pour into a deep casserole dish brushed with olive oil.
  • Whisk together remaining egg white and the olive oil.
  • Blend well.
  • Cut sheets of phyllo pastry in half.
  • Top the casserole with one piece of phyllo pastry.
  • Brush with egg white mixture. Continue layering phyllo sheets, brushing each with the mixture. Bake for 35 to 45 minutes.

1/4 cup olive oil
2 cups onions, chopped
3 cloves garlic, minced
3 (10 ounce) packages frozen spinach, thawed and squeezed dry
1/2 cup fresh basil, chopped
2 tablespoons fresh oregano, chopped
2 tablespoons lemon juice
1 teaspoon ground black pepper
20 sheets phyllo dough
1/2 cup butter, melted
4 cups mozzarella cheese, grated (1 pound)
3 medium tomatoes, sliced thin
2 cups feta cheese, crumbled
1 cup breadcrumbs

Steps:

  • In large skillet, heat oil over medium heat.
  • Add onion and garlic.
  • Sauté for 5 minutes or until onions are translucent.
  • Add spinach and sauté until all excess moisture has evaporated.
  • Add basil, oregano, lemon juice and pepper.
  • Mix well.
  • Cool slightly.
  • Prepare Phyllo pizza crust: Use 10 sheets of phyllo dough, brushing each with melted butter, margarine, oil or vegetable spray.
  • Use 1/4 cup butter.
  • Repeat this step.
  • Place length of phyllo across width of greased 15” x 10” x 1” cookie sheet or baking pan.
  • Overlap each set of 10 buttered phyllo sheets 5 inches at center.
  • Roll overlapping phyllo onto itself on cookie sheet to form “pizza crust.
  • ” Brush top layer with melted butter or olive oil and top with your favorite ingredients.
  • Spread spinach mixture on prepared phyllo sheets.
  • Top spinach with 1/2 of mozzarella.
  • Dredge tomatoes in bread crumbs and arrange on top of mozzarella.
  • Top with remaining mozzarella and feta cheese.
  • Bake in preheated 400°F oven for 25-30 minutes or until golden brown.
