3/4 cup olive oil
1/3 cup cider vinegar
1/3 cup honey
1 teaspoon pepper
1/4 teaspoon salt
3 cups sliced fresh strawberries, divided
3/4 cup pecan halves, divided
12 cups torn mixed salad greens or chopped fresh spinach
1 can (11 ounces) mandarin oranges, drained
3 green onions, sliced

Steps:

  • In a blender, combine the first five ingredients; cover and process for 30 seconds. Add 2 cups strawberries; cover and process until blended. Add 1/4 cup pecans; pulse until chopped. , In a large bowl, combine the spinach, oranges, onions and remaining strawberries and pecans. Drizzle with vinaigrette and toss to coat.

4 cups spinach, washed and torn into pieces.
1 cup strawberries sliced
1/2 cup finely chopped red onion
1/2 cup feta (Greek) crumbled
1/2 cup chopped toasted pecans
1/4 cup raisons or dried cranberries or currants(or a mixture of these)
Dressing
2 tbsp maple syrup
1 tsp dijon mustard
1.5 tbsp red wine vinegar
1/3 cup olive oil
1/2 tsp dried oregano

Steps:

  • Wash and prepare spinach Chop Strawberries or other fruit you prefer. Finely slice red onion Lightly toast pecans and chop. To make the dressing, combine all ingredients in a container and shake until well blended and consistancy in even throughout. Toss Spinach with onions and enough dressing to lightly coat the spinach. For a beautiful presentation add all ingredients to the top of the salad. The fresh reds and whites will look appetizingly wonderful.

8 cups spinach leaves, loosely packed
1/2 cup toasted pecans
1/2 cup dried cranberries
1/2 small red onion, thinly sliced
1/4 cup cider vinegar
1/4 cup cranberry juice
2 tablespoons maple syrup
1 teaspoon Dijon mustard
salt and pepper
3/4 cup vegetable oil

Steps:

  • Wash and dry the spinach leaves. Place on a large serving platter. Sprinkle the pecans, cranberries, and onion rings on top of spinach.
  • Place the vinegar, cranberry juice, maple syrup, Dijon mustard, salt and pepper in a jar with a tight-fitting lid. Shake or whisk until well combined.
  • Add the vegetable oil and shake again. Just before serving, shake the vinaigrette once more and pour it over the salad.
