The best ever Spinach Strawberry Salad with balsamic poppy seed dressing, pecans, and feta. Beautiful, healthy, and always a crowd pleaser!

3/4 cup raw pecans
1/2 small red onion (very thinly sliced)
10 ounces fresh baby spinach (I also love a 50/50 arugula and spinach blend)
1 quart strawberries (hulled and quartered (about 1 pound))
3/4 cup crumbled feta cheese (buy the block-style feta, not pre-crumbled; the texture is much better)
1/4 cup balsamic vinegar
3 tablespoons extra-virgin olive oil
1 1/2 tablespoons poppy seeds
1 1/2 tablespoons honey
1/2 teaspoon Dijon mustard
1/2 teaspoon kosher salt
1/8 teaspoon black pepper

Steps:

  • Toast the pecans: Preheat the oven to 350 degrees F. Spread the pecans in a single layer on an ungreased baking sheet. Bake for 8 to 10 minutes, until the pecans smell fragrant and the center of a pecan is tan when the pecan is broken in half. (Do not walk away from the oven in the last few minutes of cooking. This is when nuts love to burn.) Transfer to a cutting board and roughly chop.
  • Place the sliced onions in a bowl and cover with cold water. Let sit while you prepare the rest of the salad (this keeps their flavor but removes the harsh onion bite).
  • Prepare the dressing: In small mixing bowl or large liquid measuring cup, whisk together all of the dressing ingredients-vinegar, oil, poppy seeds, honey, mustard, salt, and pepper-until well combined. (Alternatively, you can shake the ingredients together in a mason jar with a tight-fitting lid).
  • Assemble the salad: Place the spinach in a great big serving bowl. Add the strawberries. Drain the red onion and add it as well. Drizzle about half of the dressing over the salad and toss to coat the leaves. Assess the amount of dressing. You want the spinach leaves to be nicely moistened but not swimming in dressing. Add a little more if needed to suit your preferences. Add the feta and pecans. Toss lightly to combine. Serve immediately, with extra dressing on the side as desired.

4 cups sliced strawberries
½ cup vegetable oil
¼ cup white wine vinegar
½ cup white sugar
¼ teaspoon paprika
2 tablespoons sesame seeds
1 tablespoon poppy seeds

Steps:

  • In a large bowl, toss together the spinach and strawberries.

1/2 cup balsamic vinegar
1/2 cup olive oil
1 Tbsp dijon mustard
1 Tbsp honey
Salt and freshly ground black pepper
3/4 cup broken or roughly chopped pecans
1 1/2 Tbsp brown sugar
1/2 Tbsp butter
10 oz baby spinach
1 lb fresh strawberries (, hulled and sliced)
5 oz . feta cheese (, crumbled)
1/3 small red onion (, thinly sliced)

Steps:

  • Add vinegar to a small saucepan, bring to a boil over medium heat and allow to boil until reduced by half, about 3 minutes. Pour into a jar or bowl, add olive oil, dijon mustard, honey and whisk to blend while seasoning with salt and pepper to taste. Thin with a little water if desired. Set aside.
  • Add pecans, brown sugar and butter to a small non-stick skillet and cook over medium-heat, stirring constantly until sugar starts to melt and caramelize, about 2 - 3 minutes. Transfer to a plate in a single layer to cool.
  • In a salad bowl toss together spinach, strawberries, half of the feta, red onion and pecans. Drizzle about 1/3 of the dressing over salad then plate and drizzle remaining dressing over individual portions and top with remaining half of the feta. Serve immediately.

I have had Strawberry Spinach Salad on numerous occasions. I wanted to take it up a notch. I don't like salad dressings. So I don't have one for this. I a dressing recipe a friend uses for her salads.

5 -6 ounces fresh baby spinach leaves
1 quart strawberry, hulled and sliced
1/4 cup red onion, minced
3 bananas
2 lemons, juiced and separated
1/2 cup walnuts, chopped
2 teaspoons toasted sesame seeds
2 teaspoons poppy seeds
3/4 cup canola oil
1/2 cup sugar
1/2 teaspoon mustard powder
1/2 teaspoon paprika
1/2 teaspoon Braggs liquid aminos

Steps:

  • Rinse, soak, drain and dry the spinach.
  • Peel the bananas and cut them into 1/4" slices. Drizzle 1/2 a lemon's worth of lemon juice on the bananas to keep them from turning brown.
  • Add the spinach, strawberries and onions to the salad bowl and mix.
  • Add the bananas and walnuts. Mix again.
  • Sprinkle the sesame seeds and poppy seeds. Mix again and it's ready.
  • If you want to make the dressing, put all of the remaining ingredients into a bowl and emulsify.

1/4 c. fresh lemon juice
3 tbsp. honey
1 tbsp. apple cider vinegar
1 tbsp. poppy seeds
2 tsp. dijon mustard

2 5-oz. containers baby spinach
1 lb. strawberries, halved or sliced
2 oranges, peeled and sliced
1 1/2 c. chopped pecans, toasted

Steps:

  • For the dressing: In a small jar, combine the olive oil, lemon juice, honey, vinegar, poppy seeds, mustard, salt, and pepper. Seal the jar; shake vigorously to combine. Set aside.
  • For the salad: Just before serving, add the spinach to a large bowl or platter; top with half of the strawberries and orange slices. Drizzle with half of the dressing; gently toss to coat. Top the salad with the remaining berries, orange slices, pecans, and goat cheese. Drizzle with your desired amount of the remaining dressing, and serve the remainder on the side, if you like.

1/4 t paprika
1/2 t dry mustard
1/2 t worstershire
3/4 c veg oil
1 t minced onion
1/2 c white vinegar
3 T poppy seed
3 T sesame seeds
1 lb fresh baby spinach
1 pint strawberries
4 medium bananas
1 c chopped walnuts or pecans

Steps:

  • Dressing: Blend ingredients with immersion blender Toast nuts in 350˚ oven for 15 minutes On serving platter layer spinach, bananas, strawberries and nuts. Serve dressing separately.

  • My Note: After making it a few times I will say that you can do all these variations and it will be terrific but do NOT put the dressing into the fridge, leave it on the counter! It will not be good, it will get creamy and stay on the salad like PASTE. You can get the spinach (baby spinach is the best) and slice the strawberries with an egg slicer and toss ahead, in the fridge -- but let the dressing sit on the counter, trust me. Then toss immediately before eating. Some time I added candied sliced almonds -- just add almond slices to a frying pan and lightly sugar the almonds, add a few drops of water to this slowly and let it cook for a few minutes. caramelizes to a crisp, sweet. Very hot, be careful. I also added the blue cheese, mentioned by other readers. also.instead of using all that sugar, I substituted some honey for the sugar instead, which helped the dressing stick to the salad. I also halved the sugar and substituted Raspberry Balsamic Vinegar for White Vinegar. Also, left out the seeds(I couldn't find them in the store some times) and used sliced almonds. Delicious.
