Quick and Easy Spinach Salad recipe has apples, pumpkin seeds, and a simple flavor-filled apple vinaigrette dressing to go with it. Spinach salad is a light but filling side dish that will pair wonderfully with a grilled meal.

4-6 cups baby spinach
1 green tart apple
1 red sweet apple
pepitas, candied pecans, or other nuts
feta, crumbled cooked bacon, dried cranberries, optional
1/2 cup olive oil
1/4 cup apple cider vinegar
4 tablespoons apple juice concentrate
1 teaspoon Dijion mustard
1 teaspoon salt
sprinkle garlic powder, black pepper, 1 tablespoon poppy seeds, optional

Steps:

  • To make the salad: place the spinach in the bottom of a serving dish.
  • Chop the apples into bite-sized pieces and place on top of spinach.
  • Add pepitas and other nuts as you like. Add optional ingredients.
  • To make the dressing: Add all of the ingredients to a pint Mason jar, add the lid, and shake well to combine. Adjust to meet your taste.
  • Add a few tablespoons of the dressing to the salad and toss to combine. Serve the salad with additional dressing on the side so that people can add more as they like during the meal.

3/4 cup sugar
1 teaspoon dry mustard
1/3 cup cider vinegar
1 tablespoon chopped onion
1 cup salad oil

Steps:

  • Whisk dressing ingredients.

1/4 cup minced onion
3 tablespoons apple cider vinegar
3 tablespoons white wine vinegar
2 tablespoons sesame seeds
1/4 teaspoon paprika

1/2 cup olive oil
2 tablespoons butter
3/4 cup blanched slivered almonds (about 3 ounces)
1 10- ounce bag ready-to-use spinach leaves
2 medium-size red-skinned apples, quartered, cored, thinly sliced

Steps:

  • Combine onion, cider vinegar, white wine vinegar, sesame seeds and paprika in small bowl. Mix in 2 tablespoons sugar. Gradually whisk in olive oil. Season dressing to taste with salt and pepper.
  • Melt butter in heavy large skillet over medium heat. Add almonds. Stir until almonds begin to color, about 2 minutes. Sprinkle remaining 1 tablespoon sugar over. Stir until sugar melts and begins to turn golden, about 2 minutes longer. Transfer almonds to bowl and cool. (Dressing and almonds can be prepared 4 hours ahead. Cover separately and let stand at room temperature.)

8 ounces apple juice
2 cloves chopped garlic
2 teaspoons Dijon mustard
1 tablespoon sherry wine vinegar
1/8 teaspoon Worcestershire sauce
1/8 teaspoon Tabasco sauce
1 lemon, juice of
6 ounces extra virgin olive oil
3 tablespoons toasted chopped hazelnuts
3 bunches fresh spinach, well washed and drained
salt and pepper
1/2 medium red onion, sliced
1 apple, sliced

Steps:

  • In saucepan on high heat, cook apple juice until it is reduced till only 1/4 cup remains.
  • This should take approximately 15 minutes.
  • Pour reduced juice into a non-reactive bowl and let cool.
  • When cool, mix in garlic, mustard, vinegar, worcestershire, tabasco and lemon juice.
  • Whisk olive oil in slowly, add nuts and salt and pepper to taste.
  • Rip spinach into bite sized pieces and place in serving bowl.
  • Pour dressing over spinach and toss.
  • Garnish with onion and apple.
