SWEET POTATO & SPINACH BAKE
If you're after some substantial comfort food on a budget then this vegetarian bake is just the thing. Add lamb chops for the meat eaters

Steps:
- Heat oven to 200C/180C fan/gas 6. Put the cream, garlic and herb sprigs into a small saucepan and slowly bring to just below boiling. Turn off the heat, season and leave to infuse.
- Put the spinach into a colander, pour over a kettle of boiling water and leave to drain for a few mins. Then squeeze out as much water as possible. Season with salt, pepper and freshly grated nutmeg.
- Grease an ovenproof dish generously with butter and spread half the sweet potato slices across the bottom. Top with a layer of spinach, then the remaining potato. Pour over the cream mixture, through a sieve to remove the garlic and herbs, then sprinkle with cheese. Bake for 45-55 mins until golden and tender.
- Meanwhile, if you're serving the chops, heat a griddle or frying pan and finely chop the leaves from the herb sprig. Rub over the chops with the oil and some seasoning, then griddle or fry for 3-4 mins on each side or until cooked to your liking. Leave bake, and chops if serving, to rest for 5 mins, then serve with a big green salad.

- Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 15-20 minutes or until tender. - Set oven to 350 degrees.
- Butter a shallow 2-quart casserole dish.
- Squeeze out as much moisture from the spinach as possible with your hands; set aside.
- Drain the potatoes from the cold water and squeeze out any excess water with your hands, and place the potatoes into a large bowl.
- To the potatoes add in eggs, 1/4 cup melted butter, salt, pepper, chopped onion, parsley, garlic powder (if using) and dill; mix well to combine.
- Transfer HALF of the mixture into the prepared baking dish.
- Top/sprinkle with all of the spinach, and then the feta.
- Top/spread with remaining potato mixture.
- Cover with foil and bake for about 30 minutes.
- Uncover and sprinkle with Parmesan cheese and dot with butter, place back in oven covered or uncovered (if you prefer a crispy top on your casserole then leave uncovered).
- Bake for another 30 minutes.
- Delicious.

- Using a skillet, melt your butter. Add the flour and the milk.
- Cook until sauce thickens; remove from heat.
- Add eggs, cheese, mustard, salt and pepper.
- In another skillet, sauté the onion in some butter (I use about 1 tsp).
- When onion is cooked, add the frozen creamed spinach (I microwave the spinach first for a couple of minutes to speed up the process).
- In a casserole dish, layer half the ham, then half of the shredded potatoes and half of the cheese mixture.
- Repeat until all is used.
- Cover and bake at 350°F for about 46 minutes.
- Sprinkle some parmesan cheese on top before serving.

- Peel two of the onions and cut each into eight wedges.
- Pour 4 tbsp of the oil in a large roasting tin.
- Add the onion, cubed sweet potatoes and peppers and mix well with the oil.
- Turn the oven to 200c/400F/Gas 6, put the tin in the oven and roast the vegetables for about 35 minutes, turning them half way through.
- Meanwhile peel and roughly chop the other onion.
- Heat the remaining 2 tbsp of the oil in a large frying pan and fry the onion until it begins to soften.
- Add the garlic and spice mix and stir well.
- Add the tinned tomatoes and their juice, breaking them up if necessary with a wooden spoon. Cook for about 5 minutes.
- Stir in the stock, then check the seasoning adding salt and a little sugar to taste.
- Stir in the chickpeas.
- When the vegetables have been cooking for 35 minutes, pour over the spiced tomatoes and chickpeas and mix well.
- Turn the oven temperature down to 190C/375F/Gas5 and cook for another 20 to 30 minutes until vegetables are well cooked, turning them half way through.
- Just before the end of the cooking time, wash the spinach, remove any rough stalks, slice them finely and stir them into the bake.
- Return the tin to the oven for another 5 minutes.
- Serve with sour cream or yoghurt.

- Cook the unpeeled potatoes in a pan of boiling water for 15 minutes. Drain and set aside.
- Meanwhile, put half the spinach in a colander over the sink. Pour over boiling water to wilt the spinach, then refresh in cold water. Repeat with the remaining spinach. Drain and squeeze out as much liquid as possible. Set aside in a large bowl, along with the salmon, onion and lemon zest.
- Make a white sauce. Melt all but 1 tsp of the butter in a pan over a medium heat. Add the flour and cook, stirring, for 1 minute, then gradually whisk in the milk. - Chill, cover and freeze for up to 2 months. Thaw at room temperature for 8 hours or until fully thawed.
- Melt the remaining butter and brush over the potatoes. Preheat the oven to 200°C/fan180°C/gas 6/400°F Bake for 50 minutes, or until hot throughout. Serve with peas.
