SPINACH, APPLE AND PECAN SALAD
Spinach, apples, red onion & pecans in a sweet-tart dressing. To make this salad extra special, I like to glaze the pecans by stirring them with 1 tablespoon sugar in a medium non-stick frying pan over medium heat, stirring constantly until sugar melts. Pour them out on waxed paper and separate with your spoon while still warm. If you do this, you don't need to toast the pecans. It takes about 5 minutes or so for the sugar to melt.

SPINACH PECAN SALAD

- Wash and dry the spinach until you're absolutely sure it's clean; spinach can hold a lot of grit. When you're sure it's clean and dry, put it in a salad bowl, and sprinkle it with salt, and squeeze the leaves gently with your hands. You'll find that the spinach "deflates," or sort of gets a bit limp and reduces in volume. Add the scallions to the bowl. Pour on the olive oil, and toss the salad thoroughly. Add the lemon juice, and toss again. Top with the pecans, and serve.

BABY SPINACH SALAD WITH BLACK EYED PEAS, LARDONS, AND PECAN-VINAIGRETTE

- In a saucepan, put the peas and cover with chicken stock or water. Add the onion, bay leaf, and peppercorns. Bring to a boil, then reduce heat, and cook, uncovered, until peas are tender but not broken (still al dente). Allow to cool in the cooking liquid.
- Meanwhile, in a non-stick pan, heat the lardons over medium heat, rendering the fat until lardons are crispy. Set lardons aside.
- In a bowl, whisk together the shallots, mustard, and vinegar, and slowly drizzle in the canola oil. Stir in the 1/4 cup of pecans.
- In large bowl, toss the greens and lardons with half of the dressing. Evenly divide the salad between 4 plates. Place the cooled peas to the bowl and dress with the remaining dressing. Spoon the peas over the greens and sprinkle with the remaining chopped pecans.

- Place pecans on baking sheet and toast in oven at 400 degrees for about 5 minutes.
- Mix together dressing ingredients in small glass or bowl and wisk quickly until well blended.

FETA, SPINACH AND PECAN PASTA SALAD
An usual but tasty flavor combination from the Austin Jr. League Cookbook...pecans are everywhere in central Texas so this is their own take on a more typical salad. :o)

Steps:
- Cut spinach into 1/2"x3" strips.
- Combine spinach, tomatoes, thyme, and 6 Tbsp olive oil in bowl; toss gently and season lightly with pepper, if desired.
- Cook pasta in boiling water 8 min, or al dente.
- Remove from heat (do not drain) and stir in zucchini; let stand 15-20 seconds.
- Drain and rinse with cold water; combine with spinach mixture and toss well.
- Drizzle with 2 Tbsp olive oil, if desired.
- Add feta and pecans; toss to mix and season with salt if desired.
- Serve warm or at room temperature.
SPINACH/STRAWBERRY/PECAN CRUSTED CHICKEN SALAD
Steps:
- In a skillet, put vegetable oil to cover bottom. Cut chicken breast into bite size pieces. In a flat bowl, combine chopped pecans, flour and salt. Another flat bowl, combine beaten and milk. In another flat bowl put cornstarch. Dredge chicken in cornstarch first, then milk mixture, and last the pecan/flour mixture. Put in hot oil and fry until completely done. Set aside and let cool. In a small skillet, put 3 tablespoons sugar, over low heat stirring constantly, melt sugar and cook until a light brown. Add pecan halves and still until well coated. spread out on a lighted greased cookie sheet and let cool. For the dressing in a sealable container, combine the strawberry nector, rice vinegar, vegetable oil, and sugar. Shake well and taste. You may need to adjust for your own taste. Put spinach in a large bowl. Top with the pecan crusted chicken, then the sliced strawberries, and the candy coated pecans. Add the dressing just before serving.
