The walnuts must be toasted for this recipe, to do so place onto a baking sheet, bake at 350 degrees F for about 8-10 minutes until lightly browned, tossing a few times

1/2 cup chopped toasted walnuts (can use 3/4 cup)
3 tablespoons olive oil
1 medium onion, chopped
3 large garlic cloves, chopped (do not finely mince the garlic)
1 pinch cayenne pepper (optional and adjust to taste)
1/2 lb fresh sliced mushrooms (can use more)
1 (10 ounce) package frozen chopped spinach, thawed and drained (hand-squeeze dry to remove any excess moisture)
3 cups chicken broth
1 1/2 cups uncooked orzo pasta
1/3 cup freshly grated parmesan cheese (or to taste)
salt & freshly ground black pepper (to taste)

Steps:

  • Heat oil in a saucepan over medium-high heat.
  • Add in onions and sliced mushrooms; cook until tender golden brown (the onions must be browned, this may take about 5-6 minutes or a little more) adding in the chopped garlic and a pinch of cayenne pepper the last 2 minutes of cooking.
  • Add in the spinach and cook stirring for 2 minutes.
  • Add in chicken broth; bring to a boil stirring constantly.
  • Add in uncooked orzo, stir then reduce heat to low, cover and simmer until the orzo is tender (about 20 minutes).
  • Remove from heat and stir in the walnuts and Parmesan cheese.
  • Season with salt and fresh ground black pepper to taste.

1 whole garlic bulb
1 teaspoon plus 1 tablespoon olive oil, divided
1-3/4 cups uncooked whole wheat orzo pasta
2-1/2 cups chicken stock
3 ounces reduced-fat cream cheese, cubed
1 package (9 ounces) fresh spinach, trimmed and chopped
1/4 cup shredded Asiago cheese
1/4 cup fat-free milk
1 teaspoon salt-free garlic pepper seasoning blend
1/4 teaspoon salt
2 tablespoons minced fresh parsley

Steps:

  • Preheat oven to 425°. Remove papery outer skin from garlic bulb but do not peel or separate the cloves. Cut off top of garlic bulb, exposing individual cloves. Drizzle cut cloves with 1 teaspoon oil. Wrap in foil. Bake 30-35 minutes or until cloves are soft. Unwrap. When cool enough to handle, squeeze garlic from skins., In a Dutch oven, heat remaining oil over medium-high heat. Add pasta; cook and stir 2-3 minutes or until lightly browned. Add stock; bring to a boil. Reduce heat; simmer, covered, 10-12 minutes or until pasta is tender and liquid is absorbed., Stir in cream cheese until melted. Add spinach, Asiago cheese, milk, seasoning blend, salt and roasted garlic; cook and stir until spinach is wilted. Sprinkle with parsley.

I made this up about 18 years ago while visiting my aunt. She had purchased 10 pounds of fresh spinach and didn't know what to do with it!

Number Of Ingredients 7

1/2 cup finely chopped onion
2 cloves garlic, finely minced
2 tablespoons good fruity olive oil
1/4 teaspoon red pepper flakes (optional)
1 cup chopped walnuts
1 lb well cleaned fresh spinach
1 tablespoon soy sauce

Steps:

  • Heat the oil in a large skillet with a lid over medium-high heat.
  • Saute the onion and garlic until the onion becomes translucent.
  • Add the red pepper flakes, if using, and stir through once.
  • Add the walnuts and saute until they become somewhat fragrant.
  • Add the spinach and continue to stir until it begins to wilt.
  • Cover and allow to steam in it's own juice for 5 minutes.
  • If needed you can add 1 Tablespoon of water to the pan.
  • Remove cover and add the soy sauce.
  • Mix well and serve.
