6 cups spinach leaves
2 cups fresh basil
1/2 cup olive oil
2 cloves garlic, minced
1/2 cup pine nuts
4 ounces prosciutto, chopped
salt and pepper
3/4 cup grated parmesan cheese

Steps:

  • Combine the spinach and basil in a large salad bowl.
  • Heat the olive oil in a skillet over medium heat.
  • Add the garlic and pine nuts; mix well.
  • Sauté until the pine nuts are brown.
  • Add the prosciutto; mix well.
  • Cook just until heated through, stirring constantly.
  • Pour over the spinach mixture, tossing to coat.
  • Season with the salt and pepper; sprinkle with the Parmesan cheese.

4 cups fresh baby spinach
1 1/2 cups fresh basil leaves
2 cloves chopped garlic
1/8 cup extra virgin olive oil
2 to 3 ounces uncured prosciutto, chopped
1 tablespoon fresh grated Parmesan cheese

Steps:

  • place the spinach and basil into a salad bowl and mix them together
  • heat a small pan over medium-high heat and add the 1/8 cup olive oil
  • once the oil is hot, add the prosciutto and garlic.
  • cook the for about 3 to 4 minutes
  • remove the pan from heat and pour it over the salad
  • sprinkle the salad with freshly grated parmesan cheese and serve

This is a delicious salad! Use this as an alternative to the traditional pasta or potato salads at your BBQ!

1 (16 ounce) package bow tie pasta
1 (6 ounce) package spinach leaves
2 cups fresh basil leaves
½ cup extra virgin olive oil
3 cloves garlic, minced
4 ounces prosciutto, diced
salt and ground black pepper to taste
¾ cup freshly grated Parmesan cheese
½ cup toasted pine nuts

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the bow tie pasta and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 12 minutes. Rinse with cold water to cool. Drain well in a colander set in the sink.
  • Toss the spinach and basil together in a large bowl.
  • Heat the olive oil in a skillet over medium heat; cook and stir the garlic in the hot oil for 1 minute; stir in the prosciutto and cook 2 to 3 minutes more. Remove from heat. Add to the bowl with the spinach and basil mixture; toss to combine. Pour in the drained pasta and retoss. Season with salt and pepper. Sprinkle with the Parmesan cheese and pine nuts to serve.

I swapped out the spinach for green kale which I roughly cut across the leaves and it was delicious. I skipped the pine nuts on top as I didn't have any at that time.

6 cups fresh spinach leaves
2 ups fresh basil leaves
1/2 cup olive oil
3 cloves of garlic, minced
1/2 cup pine nuts
4 oz. prosciutto, dices
3/4 cup freshly grated Parmesan Cheese

Steps:

  • Toss the spinach and basil in a large salad bowl. Heat the olive oil in a small skillet over med. heat. Add the garlic and pine nuts. Saute' until the pine nuts are slighly brown. Stir in the prosciutto. Cook for 1 minute. Toss the spinach and basil with the warm dressing. Sprinkle with the cheese. Serve immediately. May sprinkle with freshly ground pepper.

This I had years ago at Woodrow's Bar and Restaraunt. I wrote for the recipe and got it!! It's fabulous!! I've also made it with grilled chicken and served it on top for a Heartier Meal!! It's refreshing in the summer with fresh basil out of the garden.

5 ounces toasted pine nuts, pureed
1 whole egg
1 large shallot, minced
1/4 ounce lemon juice
3 ounces balsamic vinegar
10 ounces olive oil
20 ounces spinach
96 basil leaves
4 ounces shaved aged provolone cheese or 4 ounces good parmesan cheese
4 ounces toasted pine nuts

Steps:

  • Dressing-Put pine nut in a food processor add whole egg,shallots, and lemon juice,Puree.
  • Slowly add oil in a stream alternate with vinegar till all is incorporated.
  • Season with salt and pepper to taste.
  • Salad-- On 8 plates arrange 2 1/2 ounces of spinach leaves and 12 basil leaves.
  • Divide dressing over the salads.
  • Top with 1 tablespoon of cheese and 1 tablespoon of pine nuts.
