7 -10 cups fresh Baby Spinach (washed, dried and stems removed, or use as much as desired)
5 cups sliced fresh strawberries
1/4 cup toasted sliced almonds (candied almonds are good too!)
1/2 cup crumbled feta cheese (can use more)
1/2 cup vegetable oil
1/4 cup balsamic vinegar (or use raspberry wine vinegar or white wine vinegar)
1/4-1/3 cup white sugar
1 pinch paprika
1 -2 tablespoon poppy seed

Steps:

  • In a large bowl toss the spinach with the strawberries and toasted almonds.
  • In another small bowl whisk together all dressing ingredients, starting with 1/4 cup sugar and adding in more to taste, then pour over the spinach; toss to combine.

Steps:

  • Put the spinach, strawberries and shallots in a large bowl.

  • Pour dressing over salad and toss. You only need enough dressing to thinly coat everything. If you have extra in the bottom of the bowl leave it there lifting salad out with tongs. Drizzle any extra on a slice of crusty bread to eat with your salad.
  • Plate and top with fresh ground white pepper and basil blossoms.

6 strawberries, sliced thinly
1/4 cup green onion, chopped
1 cup walnuts, halves
2 tablespoons water
2 teaspoons sugar

1/4 teaspoon salt
1 garlic clove, crushed

Strawberry, spinach, basil, and balsamic vinegar come together over a canvas of Ready Pasta penne in this quick and easy pasta salad.

1 pouch Barilla® Ready Pasta Penne
2 tablespoons olive oil
2 tablespoons balsamic vinegar
Salt and pepper to taste
½ cup spinach
½ cup strawberries, quartered
2 basil leaves, chopped
¼ cup crumbled feta cheese

Steps:

  • Tear corner of Ready Pasta pouch to vent. Heat in the microwave for one minute.
  • Pour pasta onto a dish and allow to cool.
  • In a bowl, combine olive oil and balsamic vinegar and season with salt and pepper to taste.
  • Add Ready Pasta, spinach, strawberries, and basil and toss.
  • Garnish with feta cheese. Serve and enjoy!
