CHEESY SPINACH LASAGNA ROLL-UPS



Cheesy Spinach Lasagna Roll-Ups image

Simpler to make than a pan of lasagna, and so pretty to serve!

8 uncooked lasagna noodles
1/2 lb lean ground turkey
2 cloves garlic, minced
1 jar (26 oz) tomato pasta sauce
2 teaspoons Italian seasoning
1/2 teaspoon fennel seed, if desired
1 cup part-skim ricotta or cottage cheese
1/2 cup shredded carrot (1 small)
1 box (9 oz) frozen spinach, thawed, drained and squeezed dry
2 egg whites or 1 egg
1 cup shredded mozzarella cheese (4 oz)

Steps:

  • Heat oven to 350°F. Cook lasagna noodles as directed on package. Drain; rinse with hot water.
  • Meanwhile, in 10-inch skillet, cook ground turkey and garlic over medium-high heat, stirring frequently, until turkey is no longer pink; drain, if necessary. Stir in pasta sauce, Italian seasoning and fennel. Reduce heat to low; simmer uncovered about 15 minutes, stirring occasionally.
  • In small bowl, mix ricotta cheese, carrot, spinach and egg whites. Spread each cooked lasagna noodle with generous 1/4 cup spinach filling to within 1 inch of one short end. Roll up firmly toward unfilled end.
  • Reserve 1 1/2 cups sauce. In ungreased 12x8-inch (2-quart) glass baking dish, pour remaining sauce. Arrange roll-ups, seam side down, in sauce. Pour reserved sauce over roll-ups.
  • Cover tightly with foil; bake 30 to 40 minutes or until hot and bubbly. Sprinkle with mozzarella cheese; bake uncovered 3 to 5 minutes longer or until cheese is melted. Let stand 5 minutes before serving.

A juicy spinach ricotta filling encased with buttery, flaky puff pastry. Great finger food or to pop into lunch boxes, thought they are definitely best served warm! Refer to the notes for make ahead instructions and the recipe video below. Some people like to serve this with tomato sauce.

250 g / 8 oz frozen chopped spinach (, thawed (Note 1))
400 g / 13 oz firm ricotta ((Note 2))
¾ cup grated parmesan
1 ½ cups shredded cheese ((cheddar, tasty, Monterey Jack, Gruyere, Pepper Jack))
1 egg
1 large garlic clove (, minced)
Pinch of nutmeg ((fresh grated or powder))
¼ - ½ tsp salt
Black pepper
3 sheets puff pastry ((Note 3))
1 egg (, beaten)
Sesame seeds ((optional))

Steps:

  • Take pastry out of freezer.
  • Place spinach in a colander and use a wooden spoon or your hands to press out excess water. You could also do this using a tea towel or paper towels. Transfer spinach to a bowl (drink the liquid, it's good for you!).
  • Add remaining Filling ingredients. Mix to combine.
  • Place pastry on work surface and cut in half to create 2 rectangles - you should have 6 in total.
  • Divide filling between pastries, brush edge with egg then roll up, finishing with the seam side down.
  • Refrigerate for 15 minutes. Meanwhile, preheat oven to 180C/350F.
  • Spray 2 x baking trays with oil (any).
  • Cut rolls into 4, or whatever size you want. Brush tops with egg (makes it golden) then sprinkle with sesame seeds.
  • Bake for 25 minutes, then take out the top tray and move the bottom tray to the top and give it an additional 5 - 10 minutes to make it golden.
  • Best served warm - the pastry is crispier and the filling is juicier. See notes for make ahead instructions.

1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry

1/4 teaspoon salt

1 (10 ounce) package frozen spinach, thawed and squeezed very dry (as dry as you can get it)
1/2 cup melted butter
2 (500 g) containers ricotta cheese (do not use low fat)
1 1/2 cups grated mozzarella cheese
1 -2 minced garlic clove (optional)
1/4 cup flour
1/2 cup grated parmesan cheese
4 eggs, slightly beaten
seasoning salt and pepper (can use white salt)
1/8 teaspoon nutmeg (or to taste)
12 lasagna noodles, cooked
2 cups marinara sauce (see my recipe posted on Zaar!)

Steps:

  • Set oven to 375 degrees.
  • Squeeze-dry the thawed spinach very well, (is is very important to make sure there is NO moisture left in the spinach, as this will make the mixture soggy).
  • Mix the spinach with the melted butter; set aside.
  • In a bowl, mix the ricotta, grated mozza cheese, 2 eggs, flour, 1/2 cup Parmesan cheese, salt, pepper and nutmeg, mix thoroughly.
  • Mix the spinach in the ricotta mixture, mix well to combine.
  • Spread the mixture onto a cooked lasagna noodle; roll up.
  • Repeat with the remaining noodles.
  • Lay the rolled noodles into a prepared greased baking dish, seam-side down.
  • Cover with a layer of marinara sauce (you do not have to cover the rolls completely with the sauce).
  • Sprinkle with Parmesan chees (any amount desired).
  • Bake for 30 minutes.
  • *NOTE* if desired sprinkle grated Mozzeralla cheese over the rolls the last 10 minutes of baking time.

1 tablespoon olive oil
2 large cloves garlic, minced
1 (10 ounce) package frozen chopped spinach, thawed and drained
1 cup ricotta cheese
1 cup shredded mozzarella cheese
1 teaspoon salt
1 (14 ounce) jar spaghetti sauce
¼ cup grated Parmesan cheese, or to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of lightly salted water to a boil. Cook lasagna in boiling water until cooked through but firm to the bite, about 8 minutes; drain and lay noodles flat onto a flat surface.
  • Heat olive oil in a skillet over medium heat. Cook and stir garlic in hot oil until fragrant, about 2 minutes. Transfer garlic to a large bowl; add spinach, ricotta cheese, mozzarella cheese, and salt. Stir mixture until evenly combined.

1 cup artichoke heart, chopped
1 tablespoon olive oil
2 cloves garlic, minced
2 cups marinara sauce

1 cup shredded parmesan cheese
1 teaspoon salt
½ teaspoon pepper
fresh parsley, for garnish

Steps:

  • Boil the lasagna noodles until they are soft but not fully cooked, for about 10 minutes. Drain and set aside.
  • In a sauté pan over medium heat, saute the spinach with the olive oil and a pinch of salt. Set aside.
  • Preheat oven to 350˚F (180˚C).
  • In a medium-sized bowl, mix the ricotta, cooked spinach, chopped artichokes, garlic, ½ of the mozzarella, ½ of the parmesan, salt, and pepper.
