I have been making these for years for my get togethers and I sometimes make these using phyllo dough but puff pastry is really just as good and more convenient --- I sometimes add in roasted garlic into the spinach mixture and also a pinch of cayenne pepper for a bit of heat --- these are so good and make wonderful appetizers!

2 frozen puff pastry sheets (from a 17-ounce package)
3 eggs, slightly beaten
1 tablespoon water
3/4-1 cup crumbled feta cheese
1 (10 ounce) package chopped spinach, thawed and well drained (squeeze out any excess moisture with hands)
1 small onion, finely chopped
3 tablespoons chopped fresh parsley
1/2 teaspoon ground black pepper (or to taste)
1 pinch cayenne pepper (optional and to taste)

Steps:

  • Thaw the puff pastry at room temperature for 40 minutes.
  • Set oven to 400 degrees F.
  • Lightly grease a baking sheet.
  • In a small cup or bowl whisk together 1 egg with water; set aside.
  • In another bowl mix together 2 eggs, feta cheese, spinach, onion, parsley and black pepper.
  • Unfold the pastry sheets on a lightly floured surface.
  • Roll each sheet into a 12-inch square.
  • Cut each into 16 (3-inch) squares (I use a pizza cutter for this!).
  • Place about 1 tablespoon spinach/cheese mixture in the middle of each square.
  • Brush the edges with egg mixture.
  • Fold squares over the filling to form triangles.
  • Crimp edges to seal.
  • Place on a baking sheet, and brush tops with remaining egg mixture.
  • Bake for about 20 minutes or until golden.
  • Best served warm or at room temperature.

The recipe makes 2 baking sheets full. We call it puff pasty pizza in our house and it tastes best at room temperature or cooled. Great for parties or a buffet, cause you can make it the day before. Use salt sparingly as feta cheese is salty.

1 (16 ounce) package frozen chopped spinach, thawed and drained
salt and freshly ground black pepper to taste
1 pinch ground nutmeg
2 sheets frozen puff pastry, thawed
1 ¼ cups heavy whipping cream, or more to taste
1 (8 ounce) package crumbled feta cheese, or more to taste
2 cloves garlic, minced

Steps:

  • Drain thawed spinach in a sieve and press out as much liquid as possible with your hands. Season with salt, pepper, and nutmeg.
  • Preheat the oven to 350 degrees F (175 degrees C). Line 2 baking sheets with parchment paper and place 1 sheet of puffed pastry on each baking sheet.
  • Combine cream, feta cheese, and garlic in a blender; blend until smooth.
  • Distribute spinach evenly over the 2 puff pastry sheets, leaving a border on all sides. Spread feta cheese mixture on top of the spinach.
  • Bake in the preheated oven until puffed up and lightly browned on the edges, about 30 minutes.

1 sheet frozen puff pastry, thawed
3 tablespoons oil
2 medium yellow onions, sliced
1 (10 ounce) package frozen spinach, thawed and squeezed dry
5 button mushrooms, sliced
½ teaspoon salt
½ (12 ounce) jar roasted red bell peppers, drained and sliced
1 cup shredded Fontina cheese
1 cup shredded Parmesan cheese
½ cup crumbled feta cheese

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Grease a baking sheet.
  • Lay puff pastry dough on the prepared baking sheet. Fold edges over to make a crust. Poke dough using a fork.
  • Bake in the preheated oven for 15 minutes.
  • Meanwhile, heat oil in a skillet and cook onions until golden, about 15 minutes.

2 pkg. (8 oz. each) refrigerated crescent dinner rolls
1 pkg. (10 oz.) frozen spinach, thawed, drained and squeezed dry
3/4 cup ATHENOS Crumbled Feta Cheese with Basil & Tomato
1/4 cup KRAFT Sun Dried Tomato Vinaigrette Dressing

Steps:

  • Heat oven to 400ºF.
  • Unroll dough onto work surface into 8 rectangles; firmly press perforations together to seal. Cut each rectangle crosswise in half.
  • Combine remaining ingredients. Spoon 1-1/2 Tbsp. onto center of each dough piece. Bring 4 corners together to overlap slightly in the center at top of each bundle. Twist and pinch to seal, leaving small gaps between seams. Transfer bundles to baking sheet.
  • Bake 13 to 15 min. or until golden brown.

2 red peppers
Filling:
1 package frozen, chopped spinach (thawed and well drained)
3 cloves of garlic, crushed and minced
1 small onion finely chopped
1/2 cup feta cheese, crumbled
salt and pepper, to taste
1 package frozen phillo pastry, thawed
1/4 cup butter, melted

Steps:

  • Preheat oven to 375. Roasted red peppers on barbeque or under the broiler until blackened (7-10 minutes). Clean off black skin under cold running water and remove seeds and stem. cut into 1x1 inch (approx.) pieces and set aside. Mix together the filling ingredients in a medium bowl. Take 2 pieces of phillo pastry and lay them on to of each other on a cutting board. Brush one side with melted butter. Cut pastry into 5 strips going the short way across the rectangle (a pizza cutter works well). Place one piece of roasted pepper and one tablespoon of filling on each strip. Fold into a triangle and keep flipping and folding until you reach the end. (The pastry box usually has detailed folding instructions.) Place triangles on a large baking sheet. Bake in oven until golden (10-12 minutes). Serve with Salad for lunch or a light dinner or as an appetizer.
