SPICY TURKEY NOODLES



Spicy turkey noodles image

Use up your turkey leftovers at Christmas to whip up our spicy turkey stir-fry. Or you could swap meat for Brussels sprouts to make a veggie alternative

250g medium egg noodles
1 tbsp soy sauce
2 limes , juiced
2 tsp brown sugar
2 tbsp vegetable oil
1 garlic clove , thinly sliced
1 red chilli , thinly sliced
500g cooked turkey , sliced
2 spring onions , thinly sliced on a diagonal
100g beansprouts
30g salted peanuts (or any other nuts you have left over), roughly chopped coriander and lime wedges, to serve

Steps:

  • Cook the noodles according to pack instructions, then drain and rinse with cold water. Set aside. Mix the soy, lime juice and sugar together.
  • Heat the oil in a large frying pan or wok and add the garlic, chilli, turkey and spring onions, fry for around 2 mins, then tip in the noodles and the beansprouts and fry for 1 min more. Pour the sauce into the pan and toss everything together well, working quickly to coat all the vegetables and noodles. Once everything is heated through, season, and tip into bowls. Scatter over the nuts and coriander, and serve with lime wedges for squeezing over.

SPICY CLAM & PORK PAELLA

A must for chorizo lovers, this paella is a great party pleaser and will add a taste of the Med to any occasion

4 tbsp olive oil
400g pork leg, cut into chunks
2 garlic cloves , sliced
1 onion , finely chopped
200g chorizo sausage, cut into small pieces
400g paella rice
1 tbsp smoked paprika (see know-how below)
400g can cherry tomato
1l hot vegetable stock
200g bag baby spinach
200g clam , cleaned

Steps:

  • Heat half the olive oil in a paella pan or a large frying pan. Tip in the pork and cook for about 5 mins until lightly browned, but not cooked through. Remove from the pan, then set aside on a plate. Pour the remaining olive oil into the pan, then add in the onion, garlic and chorizo. Cook for about 5 mins until the onion is softened and the chorizo is starting to crisp and give off its oil.
  • Add the rice and paprika to the pan, then stir around for 1-2 mins until all the grains of rice are well coated. Can be prepared up to this point 1 day in advance and stored in the fridge.
  • Pour the tomatoes and any juices into the pan along with the pork and 900ml of the vegetable stock. Bring to the boil, reduce the heat, then let it gently simmer for about 20 mins until the rice is nearly soft. Place the spinach in a sieve, then pour over a kettle of boiling water so the leaves are just wilted. Arrange the spinach leaves in the pan along with the clams. Pour over the remaining 100ml vegetable stock, then cook for another 10 mins. By this time the clams should have opened (discard any that haven't) and the rice should be tender. Serve straight away from the pan.

EASY TURKEY PAELLA



Easy turkey paella image

All you need is a pack of sliced turkey and some veggies and you have the makings of an easy paella. A low fat supper you can whip up in 20 minutes

205g jar of paella paste
300g paella rice
300g pack stir-fry vegetables (without beansprouts)
130g pack roast turkey slices

Steps:

  • Heat 1 tbsp olive oil in a large sauté pan. Fry the paella paste for 1-2 mins, then tip in the rice and cook for 2 mins more. Add 800ml boiling water, simmer for 12-15 mins or until the liquid has been absorbed, then season to taste.
  • In another pan, fry the veg in 1 tbsp olive oil on a high heat for 1-2 mins. Add 50ml water, cover and steam for 2-3 mins. Tear the turkey into bite-sized pieces and stir through the rice with the veg.

SPICY TURKEY & PEPPER BAKE

This warming bake is a real family winner, it's cheap, low-fat and superhealthy

1kg potatoes , chopped
25g butter
300g frozen pepper
1 onion , chopped
500g pack turkey mince
1 red chilli , deseeded and chopped
1 tbsp smoked paprika
200ml hot chicken stock

Steps:

  • Heat oven to 200C/180C fan/gas 6. Cook the potatoes in a large pan of salted water for 12-15 mins or until tender. Drain well, then return to the pan and allow to steam for 3 mins. Add some seasoning and the butter, then roughly mash with a fork and set aside until later.
  • Meanwhile, cook the peppers and onion in a large pan for 5 mins - the water in the peppers should stop them sticking. Stir in the turkey mince, chilli and paprika and cook until browned. Pour in the stock, then bubble for 10 mins until thickened. Transfer the turkey mince into an ovenproof dish, top with the mash and cook for 30 mins or until golden and bubbling.
