1 lb ground beef
1 c salsa
1 Tbsp chili powder
1 can(s) 15 oz black beans-rinsed/drained
1 can(s) corn- drained
1 c rice
2 + c chicken broth
1-1/2 c colby shredded cheese

Steps:

  • 1. In a Deep non-stick skillet, brown ground beef, until no longer pink. Add Salsa, Chili powder, corn, and black beans.
  • 2. Add rice and broth. Stir to combined. Cover. Bring to a boil, then reduce to a simmer for 22-25min, or until broth is absorbed. Sprinkle with cheese and return lid to ensure melting.

2 pounds ground beef
1 large onion, chopped
1 large green pepper, chopped
1 can (10 ounces) diced tomatoes and green chilies, undrained
1 can (4 ounces) chopped green chilies
1 cup beef broth
2 tablespoons Worcestershire sauce
1 to 2 tablespoons chili powder
2 teaspoons salt
1 teaspoon pepper
1/4 teaspoon hot pepper sauce
4 cups cooked long grain rice
2 cups sour cream
2 cups shredded cheddar cheese
Corn chips

Steps:

  • In a large skillet, cook the beef, onion and green pepper over medium heat until the meat is no longer pink; drain. Add the next eight ingredients. Simmer, uncovered, for 10 minutes. Add rice, sour cream and cheese; cook over low heat until cheese is melted, about 6-8 minutes, stirring occasionally (do not boil). Serve over corn chips.

2 cups frozen BOCA Veggie Ground Crumbles
2 cups instant white rice, uncooked
2 cups water
1 tomato, chopped
1 pkg. (1-1/4 oz.) TACO BELLĀ® Taco Seasoning Mix
1/2 cup KRAFT Cheddar & Asadero Cheese Deliciously Paired for Tacos
1/2 cup shredded lettuce

Steps:

  • Cook crumbles in large nonstick skillet as directed on package.
  • Stir in rice, water, tomatoes and seasoning mix. Bring to boil. Sprinkle with cheese; cover. Remove from heat. Let stand 5 min.
  • Top with lettuce.
