If you like boiled peanuts, you're in luck. If you like smoked peanuts, you're in luck too. These smoked peanuts in the shell will satisfy you no matter which camp you're in.

Number Of Ingredients 4

6 cups water
2 cups kosher salt
2 tablespoons sugar
2 pounds raw peanuts (in the shell)

Steps:

  • Combine the water, salt, sugar and peanuts in a large pot over high heat. Bring to a boil and continue to boil for 20 minutes.
  • Drain the peanuts into a large colander and then spread out on a flat surface covered with towels to dry completely.
  • Fire up your smoker for 250 F. Use any wood you prefer, but the peanuts will absorb the smoke so I recommend a lighter fruit wood.
  • Add the peanuts to the smoker. If your grates are too wide, add foil sheets or pans with holes poked in them or use a grill mat like I did.
  • Cover grill and smoke for 20 minutes. Stir and smoke 20 more minutes. And then stir and smoke 20 more minutes. If the nuts aren't a bit crunchy continue smoking or transfer to a sheet pan in a 225 F oven or on a grill until golden brown and crunchy.
  • Store in an airtight container.

2 tablespoons canola oil
2 tablespoons sugar
1-1/2 teaspoons ground cumin
1 teaspoon salt

  • Place peanuts in a small bowl; drizzle with oil and toss to coat. Combine sugar and seasonings; sprinkle over nuts and toss to coat., Transfer to an ungreased 15x10x1-in. baking pan. I find this technique much easier than the stovetop pan method. You'll get beautiful, perfectly frosted nuts that are roasted evenly, with no bitter burned spots.

Cooking spray
1 cup untoasted walnut halves
1 cup untoasted pecan halves
1 cup unsalted, dry roasted almonds
1 cup unsalted, dry roasted cashews
1 teaspoon salt
½ teaspoon freshly ground black pepper
¼ teaspoon ground cumin
¼ teaspoon cayenne pepper
½ cup white sugar
¼ cup water
1 tablespoon butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil and lightly coat with cooking spray.
  • Combine walnut halves, pecan halves, almonds, and cashews in a large bowl. Add salt, black pepper, cumin, and cayenne pepper; toss to coat.
  • Heat sugar, water, and butter in a small saucepan over medium heat until the butter is melted. Cook for 1 minute and remove from heat. Slowly pour butter mixture over the bowl of nuts and stir to coat.
  • Transfer nuts to the prepared baking sheet and spread into a single layer.
  • Bake nuts in the preheated oven for 10 minutes. Stir nuts until the warm syrup coats every nut. Spread into a single layer, return to the oven, and bake until nuts are sticky and roasted, about 6 minutes. Allow to cool before serving.

Wow! These peanuts are addicting! They are easy to make and would be great for a party. Make sure to drain very well after cooking or they will be greasy. The recipe comes from the Betty Crocker Christmas cookbook.

2 cups unsalted peanuts
2 teaspoons chili powder
1/4 teaspoon ground red pepper (cayenne)
1/2 teaspoon garlic salt, use more if you like

Steps:

  • In a skillet, heat oil over medium heat. Stir in the peanuts, chili powder, and red pepper.
  • Cook and stir for 2 minutes or until peanuts are warm. Drain well on paper towels.

Spicy-Smoky Peanuts image

2 cups husked shelled raw Spanish peanuts (about 10 ounces)
4 teaspoons Worcestershire sauce
1 tablespoon liquid smoke flavoring*
2 tablespoons (1/4 stick) butter
2 teaspoons distilled white vinegar
2 teaspoons hot pepper sauce (such as Tabasco)
3/4 teaspoon salt
1/8 teaspoon cayenne pepper
*A smoke-flavored liquid seasoning available at specialty food stores and at many supermarkets.

Steps:

  • Line jelly roll pan with foil. Toss peanuts, Worcestershire sauce and liquid smoke in pan. Let marinate at room temperature, stirring occasionally, about 30 minutes.
  • Position rack in center of oven and preheat to 325°F. Melt butter in heavy large skillet over medium-low heat. Cool slightly. Stir in vinegar, hot pepper sauce, salt and cayenne. Return skillet to heat. Scrape in nuts and marinade. Stir to coat nuts about 30 seconds. Return nut mixture to jelly roll pan. Bake until deep golden brown, stirring occasionally, about 20 minutes. Transfer pan to rack and cool. Let stand uncovered 6 hours to dry. (Can be made 1 week ahead. Store nuts in airtight container at room temperature.)
