KOREAN STYLE PORK CHOPS
Korean Style Pork Chops - a simple recipe for Korean style marinated pork chops, resulting in melt in your mouth, super delicious pork chops. Best ever!

- Preheat oven to 400 F degrees.
- In a medium size bowl whisk together the soy sauce, honey, garlic, ginger, sesame oil and sriracha sauce. Pour over pork chops and let marinade for about 20 minutes.
- Heat the olive oil in a large skillet for medium high heat. Add pork chops, without marinade, and cook for about 5 minutes for the first side, or until it gets a nice brownish color. Flip the pork chops and pour the remaining marinade over them. Cook another 5 min on this side.
- Place the skillet in the oven to finish cooking them. Roast for about 10 minutes, or until pork chops are completely cooked through.

SPICY SESAME PORK CHOPS
These were delicious glazed chops. I say were, because they didn't last long. We love spicy and these have just the right amount of heat. They make a great appetizer served in chunks, pork or chicken.. We especially like this served over rice. My pictures

- 1. In a skillet; saute the garlic with a little oil. Do not burn. Just enough to release flavor. Set aside. Toast the sesame seed in a small skillet for just a few minutes. Set aside In a large skillet; brown the chops on both sides till no longer pink. Set aside. ( I removed the chops from the skillet, washed the skillet and returned the chops. I didn't want the browned pieces in the skillet to discolor the sauce)
- 2. In a medium saucepan; mix the soy sauce, honey, chicken broth, corn starch, red pepper flakes, garlic powder, ground mustard, ground ginger, toasted sesame seeds and the sauteed garlic. Simmer until thickened. Remove from heat.
- 3. Pour half the sauce over the chops; add about 1/3 cup of water, cover and simmer in the sauce till tender and the chops have time to absorb the flavors. Turn the chops occasionally so not to burn.
- 4. Heat the remaining sauce. Plate the chops, and pour the remaining sauce evenly over the chops. Garnish with green onions and more sesame seeds if prefer. I sometimes cut up boneless chops brown and pour the sauce over, and serve over rice, it's delicious. This sauce is also good with chunks of sauteed chicken. Enjoy!

- Make the Slaw:
- Whisk mayonnaise, vinegar, Sriracha, sugar, and 1 tsp. salt in a large bowl. Transfer about 1/4 cup dressing to a small bowl; set aside.
- Add cabbage and scallions to remaining dressing and toss to evenly coat. Season with remaining 1/2 tsp. salt. Cover and chill both the salad and dressing until ready to serve.
- Do Ahead: Dressing and slaw can be made 8 hours ahead. Keep chilled.
- Make the Burgers:
- Using your hands or a wooden spoon, mix pork, garlic, Sriracha (if using), sesame oil, fish sauce, 1/4 cup cilantro, and 1/2 tsp. salt in a large bowl until well combined.
- Shape pork mixture into 4 patties, slightly larger in diameter than English muffins (about 4").
- Heat olive oil in a large skillet over medium. Working in batches if necessary, fry patties until browned on both sides and cooked through, 6-8 minutes.
- Spread reserved dressing on muffins. Place a patty on bottom halves. Season with salt and pepper. Pile on some slaw, pickles, and cilantro, then close muffins. Serve with remaining slaw alongside.
- Do Ahead: Patties can be made 1 day ahead. Separate with parchment if stacking. Cover and chill, or freeze up to 1 month.

- In a large resealable plastic bag, combine the first 10 ingredients. Add pork chops, a few at a time; seal bag and toss to coat. , In a large skillet, brown chops in oil on both sides. Place in a greased 13-in. x 9-in. baking dish. In a small bowl, combine the ketchup, water and brown sugar; pour over chops. , Bake, uncovered, at 350° for 30 minutes or until a thermometer reads 145°. Let stand for 5 minutes before serving.
