PASTA WITH SPICY SAUSAGE, BROCCOLI RABE AND CHICKPEAS
In this hearty weeknight pasta recipe, chickpeas contribute an earthy, nutty flavor to the classic combination of sausage and broccoli rabe. The addition of Parmesan, butter, and lemon juice just before serving balances the heat from the sausage with a bit of richness, creating a bright and flavorful sauce in the process. This pasta is incredibly versatile: You can use any sturdy greens or even broccoli in place of the broccoli rabe, and feel free to swap in whatever pasta shape and canned beans you have on hand. You can even substitute sweet Italian sausage or ground pork or turkey for the sausage in a pinch; add about 1/2 teaspoon red-pepper flakes to give this dish its spicy kick.

- Bring a large pot of salted water to a boil. Roughly chop the broccoli rabe, add it to the pot, and cook for 3 minutes. Use a sieve or slotted spoon to lift the broccoli rabe from the water and place it in a colander to drain.
- Bring the water back to a boil. Cook the pasta according to package instructions until al dente, reserve 1 cup pasta water, then drain pasta.
- Meanwhile, in a large Dutch oven or deep, 12-inch skillet, heat the olive oil over medium-high. Add the sausage and cook, breaking it up with a wooden spoon, until browned, 3 to 5 minutes. (Don't worry if the sausage is not completely cooked through.) Add the garlic and cook for 30 seconds.
- Add the wine and cook, scraping any bits from the bottom of the pan, until the wine is reduced by half, about 1 minute.
- Add the broccoli rabe, chickpeas, 1 teaspoon salt and 1/2 teaspoon pepper to the skillet and cook over medium heat, stirring often, until the sausage is cooked through and the broccoli rabe is very tender, about 3 minutes.
- Add the pasta and 1/2 cup of the reserved pasta water, toss well, and cook over low heat until the sauce comes together, about 1 to 2 minutes. Add additional pasta water, a few tablespoons at a time, if needed for moisture.
- Remove the pan from the heat, add the butter, Parmesan, lemon zest and lemon juice, and toss until the butter is melted. Divide pasta among shallow bowls and top with additional cheese sprinkled on top.

- Preheat the oven to 450 degrees F.
- Bring a large pot of salted water to a boil. Heat 2 tablespoons of the oil in a medium saucepan over medium heat. Add the garlic and red pepper flakes and cook, stirring, until the garlic is golden, about 2 minutes. Add both cans of the tomatoes and 1 cup water. Increase the heat to medium-high and bring to a simmer. Reduce the heat slightly, add the basil sprigs and simmer rapidly, uncovered, until thickened, 15 to 20 minutes. Discard basil and stir in the chopped basil. Season with salt and pepper.
- While the sauce simmers, heat the remaining 1 tablespoon oil in a large skillet over medium-high heat. Add the sausage and cook, breaking up any clumps with a wooden spoon, until brown, about 5 minutes. Transfer the sausage to a large bowl with a slotted spoon.
- Cook the rigatoni in the salted boiling water until very al dente, about 2 minutes less than the package directions instruct. Drain the pasta and add it to the large bowl.
- Add the tomato sauce and half each of the mozzarella, provolone and Parmesan cheeses to the bowl and stir well to combine. Transfer the pasta-sausage mixture to a 3- to 4-quart baking dish and top with the remaining mozzarella, provolone and Parmesan cheeses. Bake, uncovered, until browned, about 15 minutes. Let the pasta rest about 10 minutes before serving.

PASTA WITH CLAMS, WHITE WINE AND SPICY ITALIAN SAUSAGE

- Preheat the oven to 350 degrees F.
- Place the clams in a large bowl and cover with cool tap water. Salt the water well and let the clams sit for 20 minutes to an hour to purge them of sand and grit. Drain and scrub the shells well under cold running water.
- Set a large roasting pan across two burners. Heat the olive oil over medium-high heat. Add the onions and garlic and saute for 2 to 3 minutes, or until softened. Add the chile, fennel and sausage, and cook for 3 to 4 minutes, stirring occasionally to break up the sausage.
- Once the sausage is nicely browned, deglaze the pan with the white wine. Add the clams and stir everything together until well combined. Arrange the tomatoes on top, add the thyme, and sprinkle with salt and pepper. Transfer the pan to the oven and cook until the clams pop open and the cherry tomatoes are roasted and juicy, 10 to 12 minutes.
- Meanwhile, in a large pot of boiling, salted water, cook the linguine until al dente. When the clams are done, return the roasting pan to the stovetop over high heat. Simmer to reduce excess liquid and to open any clams that are still closed (stirring vigorously with a wooden spoon also helps).
- Taste sauce and season with salt as needed.
- Drain the pasta and transfer it directly into the roasting pan. Add the butter, lemon zest and juice, and the parsley. With tongs, toss everything together to coat the pasta in the sauce.
- Serve topped with plenty of grated pecorino if using.

SPICY TOMATO CREAM SAUCE PASTA W/ ITALIAN SAUSAGE
This is a combination of a couple of different recipes that I have combined. Make it spicy or not up to you. The spicier the better in my house.

- 1. While cooking sauce cook your pasta al dente and drain. Dice and caramelize onion in butter. Add Italian sausage to onions and brown. If in casings remove from casings. When sausage is browned add garlic and cook for another minute or two. Drain excess fat if you want to. I leave it in and dish does not come out greasy.
- 2. Add chicken broth to sausage mixture and simmer for about 5 minutes. Now add crushed tomatoes, paste, salt, pepper, and a heaping tablespoon of cajun seasoning (if wanting it milder just add a teaspoon or two and use mild sausage). Let simmer for a few more minutes. Add heavy cream and simmer for a couple of minutes.
- 3. Now add pasta and parmesan cheese to sauce and let simmer for 5 minutes. We prefer this recipe with mostaccioli pasta, but I have made it with several different types of pasta and it has been good with all of them. So just use your favorite.
- 4. This recipe started from TRACY JOYNER's recipe on here. As I stated in the description I have combined a couple of recipes with Tracy's to come up with this. I wanted to make sure Tracy got credit for being the inspiration of this dish.

I am so in love with this spicy, creamy, cheesy pasta for all of those reasons. It is just packed with so many incredible flavors. This came from Kevin & Amanda. When I made this recipe I made minor changes to the recipe. I used vegetable oil, mozzarella flavored sausages, half & half, and cheddar cheese. Next time I plan to not use Rotel as this was a bit to spicy for my families taste.

- Cook pasta in a large pot of boiling salted water, stirring occasionally, until al dente. Drain pasta, reserving 3/4 cup pasta cooking liquid; return pasta to pot.

SPICY PASTA CASSEROLE WITH SAUSAGE
This has to be one of my boys favorite dishes of all time. It is even better the second night and that is saying a lot! I try to make extra and freeze for a quick week night meal. Toss a salad, slice some bread and you have a wonderful hearty full of flavor and love meal.

- 1. In a large pot brown the ground beef with sausage(remove sausage from casing and break apart as you brown it) add onion,garlic,red pepper flakes,and italian seasoning. Cook until the onion is translucent.
- 2. Add to the ground beef and sausage the fire roasted tomatoes along with the regular diced tomatoes. Stir to blend well.
- 3. Once blended add your zucchini, green peppers, mushrooms, salt and pepper to taste. Cover with lid and let simmer approx 30 minutes, stirring occasionally.
- 4. Meanwhile cook pasta according to directions for al dente. Drain but do not rinse.
- 5. Preheat oven to 350. Put pasta in a 9 x 13 casserole dish. Add pasta sauce a ladle at a time, mixing after each ladle (there will be sauce left over) until you reach your desired consistency. "I say this because some like it saucy while others prefer less"
- 6. Sprinkle mozzarella cheese on top and bake 30 - 40 minutes until cheese is melted and casserole is bubbling. Let stand for 5 minutes. Serve with grated Parmesan cheese on the side.
SPICY SHRIMP AND SMOKED SAUSAGE PASTA
This dish is my own version of the many different dishes served with the same name down in NOLA. Down there they use Taso ham instead of smoked sausage most of the time, but the sausage is easier to find and just as good in my opinion.

- Cook Tortellini in boiling water just until they start to float. Rinse with cold water. Toss pasta with the teaspoon of olive oil to avoid sticking.
- Try to use either andouille or Emeril's kicked up smoked sausage. You want a spicy sausage for this dish.
- Melt the butter in a sauce pan. Saute smoked sausage, onion, celery, bell peppers, and garlic. Let cook on Med-high for 3-4 minutes. Add shrimp and let cook another 2 minutes, or until shrimp looks mostly pink.
- Add wine, cream, creole seasoning, herbs, hot sauce and fresh black pepper. Turn temp down to Med and let reduce for 3-4 minutes.
- Pour sauce over the pasta and toss in the Parmesan cheese.
- Serve imediately with french bread and butter. Goes great with a nice salad. I recommend a nice crisp chardonnay wine to go with it.
- Sometimes I even add catfish nuggets to this dish. I saute them with the shrimp and sausage. It's pretty good that way too.

PERFECT SPICY SAUSAGE PASTA SALAD
Gorgeous!! Morish!! ...and the easiest Pasta Salad to make by far!! One helping is never enough!! Prep time does not include the time taken to *cook the Pasta which usually takes about 10 minutes in the microwave. I add plenty of salt and a good dollop of Olive Oil to the water. (I find the Olive Oil flavours the Pasta) 'BEER STICKS' are about the size of Frankfurters, but the meat is like that of pepperoni OR salami. They are called Beer Sticks in N.Z. but there may well be another name used for them elsewhere.

This is a quick dinner I tend to make but never really wrote down the ingredients, before. After making it for a week's worth of lunches, I decided to jot down what I did and record it for posterity. It should probably have green bell peppers in it, but I don't mind how it turned out this time.

- In a skillet over medium heat, combine the olive oil, fennel seeds, and chili flakes and cook until the fennel seeds start to snap and pop.
- The onion, half of it finely diced and the other half frenched, should be added to the skillet at this point and sauteed until translucent. (OPTIONAL: If you were to add any green bell pepper, it should be when the onion goes in, and it should be diced.) Add the minced garlic and continue for 1-2 minutes until the garlic starts to lightly brown on the edges.
- Add the spicy Italian sausage in small bits about the size of half a walnut and saute until brown.
- Add the diced roasted red pepper, tomato, marjoram, and basil. Toss with the rest of the ingredients and season with the salt and black pepper.
- Stir in the tomato paste and cook it for 2-5 minutes, until it coats everything and smells sweet; perhaps a bit smokey. Be careful, however, not to burn the tomato paste.
- Pour in the chicken broth and stir to dissolve the tomato paste. Taste and re-season with salt and pepper. Simmer uncovered until the liquid thickens.
- Add the cooked egg noodles and toss the sauce throughout.
- Serve family style on a platter with the parmesan cheese sprinkled over the top.
