1 1/2 cups seedless raspberry preserves
2 tablespoons white vinegar
3 chipotle chiles in adobo, drained and chopped
3 cloves garlic, minced

Steps:

  • Stir ingredients in a medium saucepan over medium heat.
  • Bring to boil and reduce heat immediately.
  • Simmer uncovered for five minutes.

Spicy Raspberry Sweet & Sour Sauce image

A couple of years ago I had purchased a Raspberry Chipotle BBQ Sauce and just loved it. I had some frozen meatballs on hand and wanted to make a quick dinner and was thinking about using a sweet & sour sauce with them and remembered how very good that BBQ sauce was. I started with the tomato base/sweetener/vinegar/liquid combination of your typical sweet & sour sauce and came up with this recipe. I doubled this so we would have extra sauce. When finished I put the meatballs straight into the frying pan with the sauce and simmered them until heated through, served with rice.....a very quick dinner!

4 ounces tomato sauce
4 ounces ketchup
1/2 cup raspberry preserves
1/2 cup rice vinegar
6 ounces pineapple juice
2 -4 tablespoons sugar
2 -4 tablespoons hot sauce (I use Frank's)
1 tablespoon cornstarch

Steps:

  • Place all ingredients except cornstarch into pan and mix with wire whisk until hot.
  • Add cornstarch to thicken.
