2 tablespoons olive oil
1 (1 lb) pork tenderloin
kosher salt
pepper
1 lb new potato, quartered
2 large garlic cloves, smashed
1/2 cup dry white wine (such as Sauvignon Blanc)
1/2 cup low sodium chicken broth or 1/2 cup water
1/3 cup jarred hot cherry pepper, seeded and roughly chopped
1/4 cup flat leaf parsley

Steps:

  • Heat the oil in a large skillet over medium-high heat.
  • Season the pork with 3/4 teaspoon salt and 1/4 teaspoon pepper. Place it on one side of the skillet; place the potatoes and garlic on the other side and season with 1/2 teaspoon salt. Cook, stirring the potatoes and turning the pork, until the pork is browned on all sides, 6 to 8 minutes.
  • Add the wine, broth, and cherry peppers. Reduce heat to medium-low and cook, covered, until the pork is cooked through and the potatoes are tender, 12 to 15 minutes.
  • Transfer the pork to a cutting board and let rest at least 5 minutes before slicing.
  • Stir the parsley into the potatoes and serve with the sliced pork.

2 (1 lb) pork tenderloin, trimmed (1 pound each)
1/3 cup olive oil
1/4 cup fresh parsley, minced
2 garlic cloves, minced
1/4 teaspoon ground ginger
2 teaspoons dried oregano
1 1/2 teaspoons dried rosemary, crushed
1/2 teaspoon paprika
1/2 teaspoon salt (optional)
1/4 teaspoon pepper

Steps:

  • Place tenderloins in plastic bag.
  • Combine remaining ingredients in a small bowl; rub over tenderloins.
  • Refrigerate 6 hours or overnight.
  • Bake, uncovered, at 425 degrees for 25-35 minutes, or until meat thermometer reads 150-155 degrees.
  • Cover with foil and let rest for 10 minutes before slicing.

1 tablespoon olive oil
1 large garlic clove, mashed
3/4 teaspoon ground cumin
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1 3/4- to 1-pound pork tenderloin
1/3 cup canned low-salt chicken broth
2 tablespoons chopped fresh cilantro

Steps:

  • Preheat oven to 450°F. Blend first 5 ingredients in small bowl. Sprinkle pork with spice mixture, salt and pepper. Place in 13x9x2-inch pan. Roast until thermometer inserted into center of pork registers 150°F., about 20 minutes. Transfer pork to plate.
  • Add broth to pan. Set pan directly over high heat and bring broth to boil, scraping up browned bits. Simmer until pan juices thicken slightly, about 3 minutes. Slice pork into rounds; place on plates. Top with pan juices and cilantro.
