1 1/2 lbs boneless pork loin, cut into 1-inch cubes
1 medium onion, coarsely chopped
1 medium green pepper, coarsely chopped
1 garlic clove, minced
1 tablespoon vegetable oil
1 tablespoon all-purpose flour
32 ounces whole canned tomatoes, crushed
16 ounces canned red kidney beans
8 ounces tomato sauce
3 tablespoons chili powder
1 tablespoon ground cumin
1 teaspoon salt
1/2 teaspoon black pepper
1 1/2 cups shredded cheddar cheese (6 ounces)
warm flour tortilla (optional)

Steps:

  • In a 4-quart Dutch oven cook pork, onion, green pepper, and garlic in hot oil until pork is browned.
  • Stir in flour, mixing well.
  • Add the remaining ingredients, except cheese and tortillas.
  • Simmer, uncovered, one hour.
  • Top each serving with some of the cheese.
  • Serve with tortillas, if desired.
  • Serves 8.

1 tablespoon canola oil
1 can (28 ounces) crushed tomatoes
2 cups frozen corn
1 can (15 ounces) black beans, rinsed and drained
1 cup chopped onion
2 cups beef broth
1 can (4 ounces) chopped green chiles
1 tablespoon chili powder
1 teaspoon minced garlic
1/2 teaspoon salt
1/2 teaspoon cayenne pepper
1/2 teaspoon pepper
1/4 cup minced fresh cilantro
Shredded cheddar cheese, optional

Steps:

  • In a large skillet, cook pork in oil over medium-high heat until browned, 5-6 minutes. Transfer pork and drippings to a 5-qt. slow cooker. Stir in the tomatoes, corn, beans, onion, broth, chiles, chili powder, garlic, salt, cayenne and pepper. , Cover and cook on low until pork is tender, 6-7 hours. Stir in cilantro. 1 pound ground pork
2 large onions, chopped
1 medium sweet red pepper, chopped
1 medium green pepper. chopped
1 cup chopped celery
4 garlic cloves, minced
2 cans (14-1/2 ounces each) diced tomatoes, undrained
1 can (16 ounces) kidney beans, rinsed and drained
1 can (6 ounces) tomato paste
3/4 cup water
2 teaspoons brown sugar
1 teaspoon dried oregano
1 teaspoon chili powder
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon cayenne pepper
Dash hot pepper sauce

Steps:

  • In a Dutch oven, brown pork and onions until pork is no longer pink; drain. Stir in peppers and celery; cook for 5 minutes. Add garlic; cook 1 minute longer. Add remaining ingredients; bring to a boil. Reduce heat; cover and simmer for 45 minutes.

Customizable, yet simple. Everyone I've served this to has loved it; it's easy, unique, and cheap company fare. My version is low-fat and free of wheat and gluten. I cannot tolerate spicy food at all, so if you want it hot, add more cumin and some chili powder. If desired, add sauteed, chopped onions or bell peppers. You can grate any desired cheese on top if you want.

1 cup cornmeal (medium grind if possible)
3 cups boiling water
1 cup broth (or 1 tsp bouillon and 1 cup cold water)
1/2 teaspoon salt
2 tablespoons grated parmesan cheese
1/2 lb lean ground turkey
2 (14 ounce) cans diced tomatoes ("fire roasted" taste best)
1 (15 ounce) can black beans, drained and rinsed
1 (15 ounce) can pinto beans, drained and rinsed
1 dash cumin
1 dash salt
1 dash pepper
1 dash paprika

Steps:

  • Polenta: boil water, then stir 1 cup cornmeal into 1 cup (cold) broth.
  • Add boiling water and salt, and bring to a boil. [Start cooking chili while waiting for it to boil.].
  • Once it boils, lower heat and cover. Stir occasionally and cook for about ten minutes, until thick (starts clinging to the sides of the pan). Remove from heat and stir in parmesan. Serve warm.
  • For chili: Brown turkey in a medium-large saucepan. If adding onions or peppers, can cook them at the same time.
  • Add tomatoes (undrained), black and pinto beans, and desired seasonings. Start with a small amount of seasoning and add gradually to avoid "Oh no! It's too spicy!" for you wimps like me. :).
  • Bring to a simmer and ladle polenta into bowls. Spoon chili on top; add grated cheese if desired.

1 tub of Curly's Sauceless Pork, diced
2 cans of hot chili beans not drained
12oz of tomato paste
2 cans of diced tomatoes with chilis
2 teaspoons of chili powder
1 bottle of chili sauce
2 large onions chopped
2 large green peppers chopped
A dash or two of garlic powder
2 tablespoons of crushed red peppers
2 cups of water
1 cup of spicy V-8 or bloody mary mix
Tabasco to taste

Steps:

  • Combine all ingredients in a large pot. Cook on medium/high for about 30 minutes and then on simmer for 30 minutes.
  • Serve and enjoy!

1-1/2 teaspoons ground cumin
1-1/2 teaspoons hot pepper sauce
1 teaspoon salt

  • In a Dutch oven, cook beef and sausage over medium heat until no longer pink, 5-7 minutes, breaking into crumbles; drain. Add the remaining ingredients; bring to a boil. 2 jalapeno peppers, seeded and chopped

  • In a Dutch oven, brown pork in butter in batches. Remove and keep warm., In the same pan, saute onions and celery in butter until tender.
