PIMENTO CHEESE RECIPE

This pimento cheese recipe is an iconic taste of the south with shredded cheddar cheese swirled with rich mayonnaise and other seasonings, easy to make!

Number Of Ingredients 9

1-1/2 cups shredded white cheddar cheese
1-1/2 cups shredded yellow cheddar cheese
1 4- ounce jar diced pimentos (drained)
1/3 cup mayonnaise (Duke's Mayo is a southern classic)
1 teaspoon Worcestershire sauce
1 teaspoon minced garlic (optional, my personal addition)
1/2 teaspoon cayenne powder (or to taste - use paprika for a milder version)
Salt and pepper to taste (about 1/2 teaspoon each)
Dash of hot sauce (optional - Crystal or Tabasco are great here)

Steps:

  • Gently stir together the cheddar cheeses, pimentos, mayonnaise, Worcestershire sauce, garlic, cayenne, salt and pepper in a medium-sized bowl.
  • Fold the mixture gently to combine until uniform.
  • Taste and adjust for salt and pepper. Add in a dash or two of hot sauce to your preference.
  • Refrigerate in a sealed container at least 1 hour before serving to let the flavors develop.

3 oz. VELVEETA, cut into 1/2-inch cubes
2 pkg. (8 oz. each) KRAFT Finely Shredded Cheddar Cheese
1 jar (4 oz.) diced pimentos, undrained
3 oz. PHILADELPHIA Cream Cheese, softened
1/4 cup milk
1 tsp. finely chopped jalapeño peppers
1 clove garlic, minced

Steps:

  • Microwave VELVEETA in large microwaveable bowl on HIGH 45 sec. or until melted, stirring after 30 sec.
  • Add remaining ingredients; beat with mixer until blended.

Number Of Ingredients 8

1 package (8 ounces) reduced-fat cream cheese
2 tablespoons chili sauce
1 teaspoon dried minced onion
1/2 teaspoon garlic powder
1/2 teaspoon hot pepper sauce
2 cans (6 ounces each) light water-packed tuna, drained and flaked
2 tablespoons minced fresh parsley
Assorted crackers

Steps:

  • In a small bowl, combine the cream cheese, chili sauce, onion, garlic powder and hot pepper sauce until blended. Add tuna and parsley; mix well. Shape into a ball; place on a serving plate. Cover and refrigerate for at least 3 hours. Serve with crackers.

Here's what you need: salt, spaghetti, olive oil, unsalted butter, coarsely ground black pepper, grated parmesan cheese

½ lb spaghetti
2 tablespoons olive oil
2 tablespoons unsalted butter
2 teaspoons coarsely ground black pepper
4 oz grated parmesan cheese, or pecorino romano cheese

Steps:

  • Bring a large pot of salted water to a boil. Cook the pasta for 1 minute less than the package instructs, until al dente. Save 1 cup (240 ml) pasta water, then drain.
  • Heat a large sauté pan over medium heat. Add the olive oil, butter, and pepper, and stir to combine.
  • Stir in the reserved pasta water.
  • Toss in the cooked pasta. Reduce the heat to low.
  • Add the Parmesan and toss until the cheese is melted and the pasta is well-coated.
  • Season with salt, if desired.
  • Enjoy!

This is a very Nasty dish, courtesy of Mario Batali via "Food &Vodka" magazine. He uses two kinds of cheese which are both combination cheeses. So I guess this is a four cheese dish!

1 1/4 lbs spaghetti
3/4 cup pecorino romano cheese, freshly grated
1/4 cup parmigiano-reggiano cheese, freshly grated
2 tablespoons fresh coarse ground black pepper
kosher salt

Steps:

  • Cook spaghetti, al dente, in salted water according to package directions.
  • Drain spaghetti, reserving 1/2 cup of the cooking liquid, and return spaghetti to the pot.
  • Add cooking liquid, 2 tablespoons at a time, alternating with the cheeses, tossing well to get a saucy consistency.
  • Stir in pepper and any additional liquid, if needed; season with salt if necessary.
