1/2 lb fresh mushrooms, sliced
1 tablespoon butter
1 cup long-grain rice, uncooked
1 (14 1/2 ounce) can chicken broth
3 fresh medium-sized peaches, peeled and cut into 1/2 inch pieces
1 tablespoon lemon juice
1/2 cup cashews, roasted and salted
4 green onions, sliced (about 1 cup)
lemon wedge, and green onion fans (to garnish)

Steps:

  • Cook mushrooms in butter in a large skillet over medium heat 5 minutes, stirring constantly. Add rice, cook 2 minutes. Stir in broth; bring to a boil. Cover, reduce heat, and simmer 20 minutes or until liquid is absorbed and rice is tender.
  • Combine peaches and lemon juice; toss. Add peach mixture, cashews, and sliced green onions to rice mixture, and stir gently. Spoon rice mixture into serving dish and garnish, if desired, with lemon wedges and/or green onion fans.

2 cups low sodium chicken broth or 2 cups chicken stock
1/2 teaspoon salt
1 cup long-grain white rice
1/4 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1/8 teaspoon ground cloves
1 tablespoon honey
2 tablespoons butter or 2 tablespoons margarine
2 large peaches, peeled, pitted, and cut into bite-size pieces
1/4 cup toasted slivered almonds

Steps:

  • Preheat oven to 350°.
  • In a saucepan, bring broth and salt to a boil.
  • Add in rice; return to a boil.
  • Transfer to a 2 1/2 quart casserole dish that has been lightly coated with cooking spray.
  • Add in spice, honey, butter, peaches, and nuts; mix well.
  • Cover and bake about 45 minutes or until rice is tender and liquid is absorbed.

1 cup uncooked basmati rice or 1 cup long-grain rice
1 teaspoon oil
1 bay leaf
1 clove
1 cinnamon stick
1/2 teaspoon cumin seed
1 medium onion, finely chopped
1 teaspoon ginger and green chili paste
1 cup bean sprouts (or use a combination of your favourite sprouts)
1/4 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon coriander seed, ground
salt
2 1/2 cups hot water
2 tablespoons chopped coriander

Steps:

  • Clean, wash and soak the rice for 10 minutes.
  • Drain and keep aside.
  • Heat the oil in a pressure cooker and add the bay leaf, clove, cinnamon and cumin seeds.
  • When the seeds crackle, add the onion and ginger-green chilli paste and sauté till the onion turns translucent.
  • Add the rice and sprouts and sauté for 2 minutes.
  • Add the turmeric powder, chilli powder, ground coriander seeds and salt with 2 1/2 cups of hot water.
  • Pressure cook for 2 whistles (15 minutes).
  • Serve hot, garnished with the coriander.

19 pounds firm ripe peaches
7 pounds white sugar
2 cups distilled white vinegar
1 quart water
24 whole cloves
3 tablespoons crushed cinnamon stick

Steps:

  • Peel peaches and set aside. In a large pot over medium high heat, boil sugar, vinegar and water until the syrup is moderately thick.
  • Add cloves, cinnamon and peaches. Bring to boil stirring occasionally until the peaches can be pierced to the pit with a fork.
  • Fill sterilized canning jars with peaches. Continue boiling syrup until heavy and add to peaches to cover.
  • In a large stock pot, pour water half way to top with boiling water. Using a holder, carefully lower jars into pot. Leave a 2-inch space between jars. Add more boiling water to cover them, about 2 inches above the tops. Bring to a boil and cover, processing for 35 minutes. Remove jars from pot. Put jars on a wood or cloth surface, several inches apart and allow to cool. Jars will be sealed.

6 carrots , cut lengthways into 6-8 wedges
3 red onions , cut into wedges
2 tbsp olive oil
2 tsp cumin seeds
4 cardamom pods
1 cinnamon stick
200g brown basmati rice , rinsed
400ml vegetable stock
400g can brown lentils , rinsed and drained
200g baby spinach
handful toasted flaked almonds , or a few whole almonds (optional)

Steps:

  • Heat oven to 200C/180C fan/gas 6. In boiling water, cook carrots for 4 mins, tipping in onions for the last min of cooking. Drain and mix in a roasting tin with 4 tsp oil, the cumin and seasoning. Roast for 30 mins, while you cook the rice.
  • Heat remaining 2 tsp oil in a large pan. Add cardamom and cinnamon for 30 secs, then add rice and toast for 1 min. Pour over stock and 100ml water, then simmer, covered, for 25-30 mins, until rice is tender and the water absorbed. Remove cinnamon and cardamom.
  • Tip in lentils and fork through before topping with spinach. Put lid back on and cook over a low heat, stirring once, until spinach has wilted and lentils heated through. Fork through again before tipping the cumin roasted veg onto the top and sprinkling with almonds, if using.

1 onion, chopped
1 cup uncooked white rice
2 cups chicken broth
1 teaspoon salt

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C). Prepare a 1 quart baking dish with butter.
  • Melt the butter in a large skillet over medium-high heat. Fry the onion in the butter until translucent, 3 to 5 minutes. Stir in the rice; cook until the rice is slightly golden. Pour in the chicken broth. Season with the salt. Simmer another 5 minutes. Transfer to the prepared dish.
  • Bake in the preheated oven until the broth is completely absorbed, 35 to 40 minutes. Fluff with a fork to serve.

SPICED AUBERGINE PILAF WITH POACHED EGGS

2 aubergines , cut into 2.5cm chunks
1 tbsp olive oil
200g basmati rice
25g butter
1 red onion , sliced
1 tbsp curry paste
450ml hot vegetable stock
4 eggs , fridge cold
juice 1/2 lemon
30g bag cashew nuts, roughly chopped
½ pack mint , leaves only, large ones torn
150g Greek yogurt

Steps:

  • Heat oven to 200C/180C fan/gas 6. Put the aubergines in a roasting tin, drizzle over the oil and some seasoning, then toss them together. Roast for 20 mins until tender and golden brown, turning once or twice.
  • Meanwhile, rinse the rice, then soak in cold water for 5 mins. Heat the butter in a pan over a low heat, add the onion and cook gently for 8 mins until softened. Drain the rice and add to the pan, stirring to coat in the butter. Cook for 2-3 mins, then spoon in the curry paste, stir, and let it sizzle. Pour over the hot stock, bring to the boil, then cover and turn the heat down to the lowest setting. Cook for 15 mins, then turn off the heat and let the rice steam for 10 mins - don't lift the lid.
  • Bring a large pan of water to the boil and poach the eggs, 2 at a time, then drain well. Stir the aubergines through the rice, squeeze over the lemon juice, then taste for seasoning. Divide the pilaf between plates and top with a poached egg, cashew nuts and mint leaves. Serve with a dollop of yogurt.
