I was forced to create these when my favorite brand stopped making their lamb meatballs, which were a staple in my little food-obsessed world. They're even more scrumptious with a small side of plain yogurt with some mint and cumin stirred into it. Add rice or couscous and a green salad and you have a tasty, easy, somewhat elegant dinner! This recipe can also be used to make meatballs for frying, if you prefer.

1 pound ground lamb
3 green onions, minced
4 cloves garlic, minced
1 tablespoon curry powder
1 teaspoon ground cumin
¼ teaspoon dried red pepper flakes
salt and pepper to taste

Steps:

  • Preheat the grill for high heat.
  • In a bowl, mix the lamb, green onions, garlic, curry powder, cumin, red pepper, salt and pepper. Form into 4 patties.
  • Lightly oil grill grate. Grill patties 5 minutes on each side, or until done.

MIDDLE EASTERN SPICED LAMB BURGER

A recipe I found in the Australian Womans Weekly. I made them up for my husband to BBQ and they were absolutely delicious. You can either roast the red capsicums (peppers) yourself or buy them pre-made.

1 tablespoon olive oil
1 loaf Turkish bread, cut into 4 portions, each split in half
1/2 cup hummus
70 g Baby Spinach
150 g roasted red capsicums, sliced thickly (roasted peppers)
1/2 small red onion, sliced thinly
chili sauce (optional)
3/4 cup fresh breadcrumb
2 tablespoons milk
500 g lamb mince
1 medium brown onion, coarsely grated
1/4 cup chopped of fresh mint
1 garlic clove, crushed
2 teaspoons ground cumin

Steps:

  • Place breadcrumbs in a medium bowl and pour the milk over. Add the mince, onion, mint, garlic and cumin. Season well with salt and freshly ground black pepper. Use your hands to mix until well combined.
  • Divide the mixture into 4 even portions and shape each portion into a patty about 15cm in diameter and 1cm thick.
  • Heat the oil in a large non-stick frying pan over medium heat until hot. Add the Lamb Patties and cook for 5 minutes. Turn and cook the patties for a further 2-3 minutes or until just cooked through. Alternatively you can BBQ these on a grill.
  • Meanwhile, preheat grill on high. Place bread portions, cut-side up, on an oven tray and toast under preheated grill for 2-3 minutes or until golden brown. To serve, spread the bottom halves of the bread portions with a little hummus.
  • Top with the spinach, roasted red capsicum, Lamb Patties, onion, remaining hummus, red onion and the chilli sauce. Season with freshly ground black pepper.
  • Cover with top of the bread portions and serve immediately.

SPICED LAMB PITAS WITH YOGURT SAUCE

Ground lamb was on sale at ALDI. I bougth some and wanted to make something yummy with it. I'm not a huge fan of ground lamb, but I love this dish with ground chicken! You can make it with whatever ground meat you prefer.

FOR THE SAUCE
1 c plain full-fat or low-fat yogurt
2 Tbsp fresh lemon juice
2 Tbsp chopped parsley
1 Tbsp chopped fresh dill or 1 tsp. dried dill
salt & pepper to taste
FOR THE PATTIES
2 lb ground lamb
2/3 c bread crumbs
1 Tbsp minced garlic
2 tsp ground coriander
2 tsp ground cumin
1 1/2 tsp paprika
1 tsp salt
ground pepper to taste
MISC.
6 pitas rounds
extra chopped parsley or cilantro (optional)
chopped lettuce (optional)
sliced cucmbers (optional)
sliced tomatoes (optional)
diced red onion (optional)

Steps:

  • 1. In a small bow, whisk the yogurt with the lemon juice. Add the 2 Tbsp. chopped parsley and chopped dill. Chill in fridge until ready to use.
  • 2. In a large bowl, mix together Lamb, bread crumbs, garlic, coriander, cumin, paprika, salt and pepper. Continue to mix with hands until thoroughly combined.
  • 3. Pat mixture into twelve 3-inch oval patties (about 1 inch thick). Arrange the patties on a plate and refrigerate for at least 30 minutes, until firm.
  • 4. Oil the grill grates and preheat the grill.
  • 5. Grill the patties over medium high heat about seven minutes. Flip the patties and grill for 4 to 6 minutes longer, completely cooked.
  • 6. While patties are grilling, wrap the pita in aluminum foil and place on an unused portion of the grill or throw in a warm oven until for 5 minutes or so or until warmed through.
  • 7. Place two lamb patties in pita, drizzle with yogurt sauce and sprinkle with more fresh parsley and fresh veggies of your choice, fold or wrap, and enjoy!
  • 8. Optional Directions for Rainiy day: Line the bottom of a broiler pan with aluminum foil (makes clean up easier) Then spray top with nonstick cooking spray. Place patties on broiler pan. Broil 6 inches from heat for about 6 minutes per side or until completely cooked.

SPICY LAMB PATTIES WITH CAULIFLOWER-ALMOND RICE



Spicy Lamb Patties with Cauliflower-Almond Rice image

Use the spices normally found in merguez lamb sausage to make these paleo-friendly ground lamb patties. Harissa, a spicy tomato-pepper paste, adds both heat and flavor to the lamb. Finely chopped cauliflower "rice" is livened up with lemon juice, plumped golden raisins, parsley and blanched almonds.

1 pound ground lamb
2 teaspoons harissa paste
1 tablespoon lemon juice
1 tablespoon olive oil
Sea salt and freshly ground black pepper
1/4 teaspoon ground cumin
1/4 teaspoon hot paprika
1/4 teaspoon sea salt
Pinch ground black pepper
4 cloves garlic, minced
1/3 cup golden raisins
1 large head cauliflower, cut in 2-inch florets (about 2 1/2 pounds)
1/3 cup sliced toasted almonds
2 tablespoons chopped fresh parsley

Steps:

  • For the patties: Combine the lamb, harissa, cumin, paprika, salt, pepper and garlic in a bowl and mix well by hand. Form into eight 1/2-inch-thick patties (3 to 4 inches across).
  • Heat a grill pan over high heat. Grill the patties, working in batches if necessary, until the internal temperature reaches 160 degrees F, 1 to 2 minutes per side.
  • For the rice: Combine the raisins and 1 cup of water in a microwave-safe bowl; microwave for 1 minute, then drain and set aside.
  • Place the cauliflower florets in a food processor and pulse until the cauliflower resembles small pebbles, 3 or 4 pulses.
  • Bring 1 1/2 cups water to a boil in a medium saucepan set over high heat. Add the cauliflower and cook, stirring, until tender, about 2 minutes. The water should be fully evaporated at this point, if not, drain the cauliflower using a fine mesh sieve.
  • Remove the pan from the heat and stir in the raisins, almonds, parsley, lemon juice and olive oil. Season with salt and pepper.
  • Serve the lamb patties over the cauliflower rice.

1/4 cup almond butter
4 tablespoons fresh lemon juice, divided
6 tablespoons olive oil, divided
1 teaspoon kosher salt, plus more
1/2 teaspoon freshly ground black pepper, plus more
1 pound ground lamb, preferably shoulder
1/2 medium onion, finely chopped
1/4 cup chopped fresh parsley
1/2 teaspoon ground coriander
1/2 teaspoon ground cumin
1/4 small head of red cabbage, thinly sliced
1/4 English hothouse cucumber, halved lengthwise, thinly sliced
2 radishes, thinly sliced
4 pita bread or flatbreads
Mixed tender herb leaves (such as cilantro and mint; for serving

Steps:

  • Whisk garlic, almond butter, 2 tablespoons lemon juice, 2 tablespoons oil, and 2 tablespoons water in a small bowl until smooth; season with salt and pepper. Set sauce aside.
  • Using your hands, gently mix lamb, onion, parsley, coriander, cumin, 2 tablespoons oil, 1 teaspoon salt, and 1/2 teaspoon pepper in a large bowl just to combine. Form into twelve 3/4"-thick patties.
  • Heat a dry large skillet, preferably cast iron, over medium heat. Working in 2 batches, cook patties, pressing slightly to flatten, until browned on the outside but still pink in the center, about 4 minutes per side. Transfer to wire rack set inside a rimmed baking sheet; let rest 5 minutes.

SPICED MIDDLE EASTERN LAMB PATTIES WITH PITA AND YOGURT



Spiced Middle Eastern Lamb Patties with Pita and Yogurt image

Whether you spell it kefta or köfte or kufte or some other variation, you can find versions of these lamb or beef meatballs throughout the Middle East. The seasoning mixture here is simple, with spices you should already have on your shelf and you can play around, adding fresh or dried mint, grated onion, or a pinch of cinnamon. And if you like a garlicky yogurt sauce, by all means, add a minced clove.

Yogurt sauce:
1 cup plain full-fat or low-fat yogurt
2 tablespoons fresh lemon juice
2 tablespoons finely chopped herbs, such as mint, dill or cilantro, plus herb sprigs, for serving
Kosher salt
Patties and pita:
1 1/2 pounds ground lamb or beef
1 tablespoon minced garlic (about 1 large clove)
1 tablespoon coriander
2 teaspoons ground cumin
1 1/2 teaspoons hot paprika
11/2 teaspoons kosher salt
1 1/2 tablespoons extra-virgin olive oil
4 to 6 pita bread rounds

Steps:

  • For the sauce:
  • In a small bow, whisk the yogurt with the lemon juice. Stir in the chopped herbs, season with salt and refrigerate until ready to use.
  • For the patties and pita:
  • In a bowl, use your hands to mix together all of the ingredients, except for the pita. Form the mixture into twelve 3-inch oval patties (about 1 inch thick). Arrange the patties on a plate and refrigerate for at least 30 minutes, until firm
  • Preheat a grill for at least 10 minutes and prepare it for grilling over moderately high heat. If you are using a charcoal grill, leave one area where you can grill the pita indirectly.
  • Oil the grill grates and grill the patties until dark brown grill marks form on the bottom, 5 to 6 minutes. Flip the patties and grill for 4 to 6 minutes longer, until just cooked through.
  • Meanwhile, wrap the pita in foil and set the package on the top shelf of a gas grill or in the cooler spot of a charcoal grill and allow them to warm through, 8 to 10 minutes.
  • Wrap 2 or 3 patties in each pita, spoon some of the yogurt sauce alongside and serve with herb sprigs, passing the remaining yogurt sauce at the table.
