Steps:
- Combine dry spices and rub on pork. Wrap pork in plastic wrap and refrigerate until ready to cook. Take pork out of refrigerator about an hour before cooking it.
- In oven safe skillet, heat some olive oil and sear pork on all sides. Remove meat from pan. Lower heat and add chopped garlic. Saute one minute.
- Combine wet ingredients and add to pan. Bring to a boil and cook for just a few minutes. Return pork to pan and place in 350 degree oven. Cook for 20-25 minutes. Internal temperature should be about 160 degrees.
- Remove pork from pan and let it rest on a warm platter. Reduce the sauce on top of stove until slightly thickened.
- Slice pork and pour sauce over.
