This supper dish is ideal for the whole family. Quick and easy to prepare it is a traditional combination of Mexican ingredients including peppers and black beans.

1 tablespoon olive oil
4 skinless chicken breasts, diced
1 onion, diced
1 2/3 lbs potatoes, diced
1 red pepper, diced
2 teaspoons chipotle paste
14 ounces black beans, drained and rinsed
14 ounces chopped tomatoes
chopped cilantro
sour cream
flour tortilla

Steps:

  • Preheat the oven to 400°F.
  • Heat the olive oil in a large frying pan and fry the chicken, onion and potato for 5 minutes.
  • Add the remaining ingredients with 2/3 cup water. Bring to the boil and transfer to a casserole dish.
  • Cover and bake for 45 minutes, stirring half way through or until potatoes are tender and chicken is cooked throughout.
  • Serve garnished with chopped cilantro and warm flour tortillas if required.

3 tablespoons vegetable oil
1 bag (20 oz) refrigerated cooked diced potatoes with onions
1 lb boneless skinless chicken breasts, cut into 1/2-inch cubes
1 can (14.5 oz) Mexican-style diced tomatoes, undrained
1/2 cup real bacon pieces (from 3-oz package)
1/4 cup chopped green onions (4 medium)
2 cups shredded Cheddar cheese (8 oz)
1 container (8 oz) sour cream
1 tablespoon Old El Paso™ taco seasoning mix (from 1-oz package)

Steps:

  • In 12-inch nonstick skillet, heat 2 tablespoons of the oil over medium heat. Add potatoes; cover and cook 12 to 15 minutes, stirring occasionally, until thoroughly heated (potatoes will not brown). Transfer to bowl; keep warm.
  • In same skillet, heat remaining 1 tablespoon oil. Add chicken; cook 5 to 7 minutes, stirring occasionally, until no longer pink. Stir in potatoes and tomatoes; cook 2 to 3 minutes longer or until thoroughly heated. Sprinkle evenly with bacon pieces, 3 tablespoon of the onions and the cheese. Reduce heat to low; cover and cook 5 to 6 minutes longer or until cheese is melted.
  • Meanwhile, in small bowl, stir sour cream and taco seasoning mix until well blended. Serve skillet dinner with sour cream mixture and remaining 1 tablespoon onions.

One of the guys in one of my cooking groups posted this the other day and said it was so good, I decided to try it and made a few adjustments of my own... Here is my version... It's DEEEEEEEELISH!

4 cups frozen hash browns or 4 cups fresh potatoes
1 (10 ounce) can evaporated milk
3 tablespoons flour
3/4 cup onion, chopped
1 (12 ounce) can Rotel tomatoes & chilies
1/2 teaspoon chili seasoning mix
1 (8 ounce) package shredded Mexican blend cheese, more cheese for the top
2 cups ham, diced, as much as desired

Steps:

  • Layer half the potatoes and ham in a baking dish.
  • Combine flour and milk in a covered container, and shake well, removing all lumps with a fork. Pour into a saucepan, and cook over med-high heat until the mixture thickens.
  • Add tomatoes, onions, half the cheese, and chili seasonings to the pan. Mix well, and allow cheese to melt.
  • Pour half the tomato mixture over the potatoes and ham.
  • Place remaining potatoes and ham on top, and pour the rest of sauce mixture over potatoes.
  • Top with remaining cheese.
  • Bake at 350, for 30-35 minutes.

1 box (4.8 oz) Betty Crocker™ sour cream 'n chives sliced potato mix
2 1/4 cups boiling water
3/4 cup half-and-half or whole milk
3 cups cubed cooked chicken
1 cup frozen sweet peas
1 can (8 oz) mushroom pieces and stems, drained
1/2 cup Progresso™ plain bread crumbs
1/4 cup butter or margarine, melted
1 tablespoon chopped fresh parsley

Steps:

  • Heat oven to 450°F. In ungreased 2-quart casserole, mix contents of uncooked potatoes and sauce mix pouches (from potato mix box), boiling water, half-and-half, chicken, peas and mushrooms.
  • Bake uncovered 30 to 35 minutes, stirring once, until potatoes are tender.
  • In small bowl, mix remaining ingredients; sprinkle over potato mixture. Bake uncovered about 5 minutes longer or until light golden brown.

2 tablespoons . butter
2 tablespoons all-purpose flour
2 1/4 cups wrm milk
1 cup havarti cheese, shredded
1/2 teaspoon salt
1/2 teaspoon dried oregano
1/4 teaspoon ground cumin
1/4 teaspoon ground pepper
2 round round white potatoes or 2 round yukon gold potatoes, scrubbed
1 cup chunky salsa
1/4 cup pickled jalapeno pepper, slices drained (optional)

Steps:

  • In a saucepan, melt butter over medium heat; add flour and cook, stirring for 1 minute. Whisk in milk and cook, whisking constantly, for 3-5 minute or until beginning to boil and thicken. Remove from heat and whisk in cheese, salt, oregano, cumin and pepper until smooth; set aside.
  • Peel and thinly slice potatoes. Arrange one-third of the slices into greased 8-inch baking dish. Spread with half of the salsa.
  • Repeat layers once and layer remaining potato slices on top. Pour cheese sauce over top and around sides to cover evenly and reach bottom of dish.
  • Sprinkle with pickled jalapeno peppers, if using.
  • Cover with foil or lid and bake in a 375F oven for 1 hour.
  • Uncover and bake for 30 minutes or until lightly browned and potatoes are tender. Let stand for 5 minutes before serving.
