2 eggs
⅓ cup hickory flavored barbeque sauce
2 cloves garlic, minced, or to taste
2 chipotle chilies in adobo sauce, minced, or to taste
2 tablespoons adobo sauce from chipotle peppers
1 teaspoon kosher salt
1 teaspoon coarse ground black pepper
½ teaspoon celery salt
½ teaspoon ground cumin
1 tablespoon Worcestershire sauce
1 onion, chopped
½ cup dry oatmeal
2 pounds lean ground beef
2 tablespoons hickory flavored barbeque sauce

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Spray a 9x5-inch loaf pan with cooking spray.
  • Beat the eggs in a large mixing bowl until smooth, then whisk in 1/3 cup barbeque sauce, garlic, chipotle chiles, adobo sauce, kosher salt, black pepper, celery salt, cumin, and Worcestershire sauce until evenly smooth. Mix in the onion, oatmeal, and ground beef with your hands until evenly blended. Pack the mixture into the prepared pan. Brush the top of the meatloaf with 2 more tablespoons of barbeque sauce.
  • Bake in the preheated oven until no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

1 1/2 pounds ground meatloaf mix
1 cup dried plain breadcrumbs
1/2 cup shredded carrots
One 4-ounce can chopped green chilies, drained
1/4 cup chopped fresh cilantro
1/4 cup ketchup
3 tablespoons chopped pickled jalapenos
2 teaspoons Worcestershire sauce
2 large eggs, lightly beaten
1 medium green bell pepper, finely chopped
1 clove garlic, minced
1 medium onion, grated
Kosher salt and freshly ground black pepper
1/4 cup barbecue sauce
2 teaspoons honey
1 teaspoon chipotle chile powder
1 teaspoon cider vinegar

Steps:

  • Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment.
  • Combine the meatloaf mix, breadcrumbs, carrots, green chilies, cilantro, ketchup, pickled jalapenos, Worcestershire sauce, eggs, bell pepper, garlic, onion, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a large bowl. Use your hands, mix together until combined well. Transfer the mixture to the loaf pan. Bake the meatloaf for 30 minutes.
  • Stir the barbecue sauce, honey, chipotle powder, and vinegar together in small bowl. Remove the meatloaf from the oven and brush the top and sides all over with the spicy barbecue glaze. Return to the oven and bake until the glaze starts to caramelize and a thermometer inserted in the center of the meatloaf registers 160 degrees F, about 45 minutes more. Let rest for 10 minutes before slicing and serving.

Not your average meatloaf recipe, this glazed chipotle meatloaf is packed with bold flavors like chipotle peppers, pepper jack cheese, chili powder and cumin!

1 medium yellow onion, diced
1 Tbsp butter
2-3 cloves garlic, minced
3/4 cup finely diced bread slices
1/4 cup milk
2 lbs ground beef (I use ground chuck 80/20 or 85/15)
2/3 cup shredded pepper jack cheese
2 Tbsp fresh cilantro, minced
2-3 chipotle peppers in adobo sauce, minced
2 tsp chili powder
1 tsp ground cumin
1 tsp kosher salt
1/2 tsp black pepper
1 large egg, lightly beaten
1/2 cup ketchup
2-3 Tbsp adobo sauce from the can of chipotle peppers
2 -3 Tbsp light brown sugar, packed

Steps:

  • Preheat oven to 350 F degrees. Add butter to small skillet and melt over MED heat. Add onion and cook 4-5 minutes, until soft and slightly browned on the edges, stirring occasionally. Add garlic and cook 1 minute. Set aside to cool slightly.
  • Add diced bread pieces and milk to a large mixing bowl and stir to combine. Add beef, cheese, cilantro, minced chipotle peppers, chili powder, cumin, salt, pepper, beaten egg and cooked onion mixture. Mix together until just combined.
  • Lightly spray a meatloaf pan with nonstick cooking spray. Pat meatloaf into prepared pan.
  • Combine sauce ingredients in small bowl. Slather about half the sauce on the top of meatloaf, and bake for 60-90 minutes, until meatloaf is about 150-155 F degrees. Let stand 10 minutes before serving. Use the remaining half of the sauce to spoon over the top or dip the meatloaf in as you eat :)

1 ounce dried chipotle chile, stemmed
2 ripe italian roma tomatoes, cored
3 garlic cloves, peeled
2 cups water
2 tablespoons olive oil
1 onion, diced
3 celery ribs, diced
1 teaspoon ground cumin
1/8 teaspoon ground nutmeg
1 1/4 lbs ground beef
1 1/4 lbs ground pork
1/2 cup fresh white breadcrumbs
1 1/2 teaspoons salt
3 large eggs, beaten to blend

Steps:

  • Combine chipotles, tomatoes, garlic and water in medium saucepan.
  • Season with salt and pepper.
  • Bring to boil.
  • Reduce heat and simmer until reduced by 1/3, about 20 minutes.
  • Let Cool.
  • Transfer to food processor.
  • Puree until smooth and strain.
  • Heat oil in heavy large skillet over medium-high heat.
  • Add onion and celery and sauté until tender, about 10 minutes.
  • Add cumin and nutmeg and stir 1 minute. Remove from heat and transfer to large bowl to cool.
  • Preheat oven to 375 degrees F.
  • Add beef, pork, bread crumbs and salt to onion mixture.
  • Add 1/2 cup chipotle sauce.
  • Mix until well blended.
  • Add eggs and mix well.
  • Press mixture into 9 x 5inch loaf pan. Brush top with some of remaining chipotle sauce.
  • Bake meatloaf until thermometer inserted into thickest part registers 160 degrees F, about 1 hour.
  • Transfer to rack to cool slightly.
  • Drain off any oil.
  • Turn meatloaf out onto platter.
  • Serve with remaining salsa.

I modified this recipe from my mom's original. This recipe uses steak sauces, so it's more flavorful than regular versions, I think. And the sauce uses the same ingredients as the meatloaf recipe, so you just need to get everything out once! Feel free to adjust the spices to your tastes, and the measurements are what I guesstimate them to be. I just eyeball it, and you can too. I'd say this yields about 5-6 slices, or 2-3 servings for 2 people. This is the first recipe I've posted, so sorry if it's a little disorganized. Enjoy!

  • Preheat oven to 350 degrees.
  • In a large mixing bowl, combine meat, egg, onion, and spices.
  • Mix with hands until.
  • Add sauces and mix again with your hands.
  • Place meatloaf in an ungreased, nonstick metal baking pan, in a loaf shape.
  • Bake at 350 degrees for 25 minutes.
  • Meanwhile, combine all sauce ingredients in a small saucepan.
  • Bring contents to a boil, then reduce to a simmer while the meatloaf cooks.
  • After the 25 minutes, brush meatloaf with sauce and bake 5 more minutes.

1 cup finely chopped onion
½ cup finely chopped green onions
1 carrot, finely chopped
1 rib celery, finely chopped
1 tablespoon minced garlic
⅔ cup ketchup, divided
2 teaspoons Worcestershire sauce
2 teaspoons salt
1 ½ teaspoons ground black pepper
1 ½ pounds ground beef
¾ pound spicy ground pork sausage
1 cup bread crumbs
⅓ cup minced fresh parsley
2 large eggs, slightly beaten

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat butter in a large heavy skillet over medium heat; cook and stir onion, green onions, carrot, celery, and garlic until fragrant, about 5 minutes. Cover skillet with a lid and cook, stirring occasionally, until carrot is tender, about 5 more minutes. Stir 1/3 cup ketchup, Worcestershire sauce, salt, and pepper into vegetable mixture; cook until warmed through, about 1 minute.
