8 large lemons
1/4 cup coriander seeds
1 1/2 cups white-wine vinegar
1/2 cup olive oil
1/2 cup water
1/2 cup sugar
1/4 cup dried Aleppo or New Mexican chile flakes or 1 tablespoon dried hot red pepper flakes
8 tablespoons coarse salt
1/4 cup pickling spices
10 pounds large (U 16/20) shrimp, shelled and deveined

Steps:

  • Remove zest from lemons with a vegetable peeler and remove any white pith from zest strips with a sharp knife. Squeeze 1 1/2 cups lemon juice. Finely grind coriander seeds in an electric coffee/spice grinder. Whisk together zest, juice, coriander, vinegar, oil, water, sugar, chile flakes, and 6 tablespoons kosher salt in a large bowl until sugar and salt are dissolved.
  • Bring an 8-qt. pot of water to a boil with pickling spices and remaining 2 tablespoons salt and cook shrimp, 2 lb. at a time, 1 1/2 minutes, or until just cooked through. Return water to a boil between batches. Transfer cooked shrimp with a slotted spoon to a colander to drain and add warm shrimp to marinade, tossing to coat.
  • Cool shrimp slightly and divide among about 8 large sealable plastic bags with marinade. Stack bags in a large roasting pan, keeping shrimp in single layers. Marinate, chilled, turning bags occasionally, at least 8 hours.
  • Drain shrimp before serving.

1 (10-ounce) salmon fillet
1 tablespoon chopped fresh ginger
2 cloves garlic, finely chopped
1 tablespoon finely chopped scallions
Salt and freshly ground black pepper
Medium to dry sake
1 whole ripe pineapple
1 teaspoon unsalted butter
1 tablespoons crushed red pepper, plus 1 tablespoon
Shrimp fried rice, recipe follows
2 tablespoons sesame oil
2 tablespoons chopped ginger
1 clove garlic, finely chopped
12 medium size shrimp
1 large egg, scrambled
1 tablespoon finely chopped scallions
1 cup cooked, cold, dry white rice
Lite soy sauce

Steps:

  • To marinate the salmon, place the salmon in a deep bowl and add the ginger, garlic, scallions, salt, and pepper. Cover with sake and let stand for 1 hour in the refrigerator.
  • Split pineapple in 1/2 lengthwise. Cut out the woody central core from one half, then cut out and dice the sweet flesh. Set aside.
  • To prepare the pineapple reduction: Melt butter in small saute pan until bubbling. Add 1 tablespoon red pepper flakes, pineapple dice, and 2 tablespoons of the sake marinade. Cook down until all liquid has evaporated. Turn on grill to medium, when hot, place the salmon on the grill and cook about 3 minutes per side. Season with salt and pepper.
  • Put sesame oil in a hot wok or non-stick pan, add ginger, garlic, and shrimp. Be sure to keep moving the ingredients until the shrimp turn color, then add the egg, scallions, rice and soy sauce, to taste. Keep stirring everything until the oil is all absorbed. When finished put the rice in the pineapple and top it with the salmon and a small side of the pineapple reduction.

1 cup olive oil
1 lemon, juice of
1/2 teaspoon paprika
1 bay leaf
1 teaspoon fresh rosemary leaf, Crushed
1/4 teaspoon cayenne pepper
1 dash Tabasco sauce
salt
fresh ground pepper (2 Taste)
1 dash Worcestershire sauce
30 cloves garlic, parboiled and peeled
1 1/2 lbs shrimp (About 20 /lb)
fresh parsley, Chopped

Steps:

  • Gently heat the olive oil in a wide, heavy sillet.
  • Add all the remaining ingredients except the shrimp and parsley.
  • Cook very gently, stirring occasionally, for 15 minutes.
  • Raise heat and stir in the shrimp.
  • Cook, tossing the shrimp constantly in the hot oil, until they just turn pink and begin to curl.
  • DO NOT OVERCOOK!!
  • Scrape the shrimp mixture into a bowl.
  • Cover and allow to marinate in the refregerator for a day or so.
  • Sprinkle with parsley before serving.

1 lg red onion, thinly sliced
2 lg lemons, sliced
1/2 cup olive oil
1/4 cup wine vinegar
2 Tbsp lemon juice
1 garlic clove, halved
1 bay leaf
1 tsp dry mustard
1 tsp leaf basil, crumbled
1 tsp salt
1/4 tsp black pepper
3 or 4 whole allspice

Steps:

  • Layer shrimp, red onion, and lemon slices in a medium-size bowl. Combine oil, vinegar, lemon juice, garlic, bay leaf, dry mustard, basil, salt, pepper, and allspice in a jar with a tight fitting lid; cover; shake thoroughly. Pour marinade over shrimp; toss gently. 2 cups red wine vinegar
1 lemon, sliced
2 fresh jalapeno peppers, seeded, deveined, and finely minced
3 cloves garlic, minced
4 tablespoons dried minced onion flakes
¾ cup superfine sugar
4 pounds large cooked shrimp, peeled and deveined
¼ cup fresh cilantro, chopped
salt and pepper to taste

Steps:

  • Pour vinegar into a pot over high heat. Stir in lemon slices, jalapeno peppers, garlic, onion flakes, and sugar. Bring to a rapid boil, stirring until sugar is dissolved. Remove from heat, and cool to lukewarm.
  • Place the shrimp and cilantro into a resealable plastic bag. Pour the lukewarm sauce into the bag, seal tightly; refrigerate overnight, turning the bag over several times.
  • Drain liquid from resealable bag, and place shrimp in a large bowl. Season with salt and pepper, and toss well.

1 inch ginger grated
1/4 tsp salt and pepper
1 lb raw shrimp
2 T cilantro
lime

Steps:

  • Combine ingredients up to shrimp, toss with shrimp to coat. Let stand 15 minutes or 2 hours in frig. Heat wok and cook about 4 minutes top with cilantro and lime.
