SPICY MAPLE ROASTED POTATO WEDGES
This recipe is easy to assemble and warming to the taste buds. The potatoes turn out crispy on the outside and tender on the inside with just the right balance of sweet and spicy. I think this recipe has just the right amount of heat, but you can adjust the chili powder and cayenne pepper to your taste. I like to serve this with my Spicy Maple-Sauced Pork Chops.

Steps:
- Preheat oven to 375°F.
- Place potato wedges in a 9" x 13" baking pan.
- Drizzle with olive oil and sprinkle remaining ingredients over potatoes. Toss to combine thoroughly and spread out into one layer.
- Roast for 30 minutes or until potatoes are tender and outsides are slightly crisp. For crispier potatoes, roast for an additional 10 minutes or until preferred texture is reached.
- With a spatula, gently loosen bottoms of potatoes from baking pan and serve.

I love these potatoes - they are so crispy, have so much flavor and are so easy to throw together! The foil lined baking sheet also makes for super easy clean up which is always appreciated!

Steps:
- Preaheat the oven to 525°F
- Scrub and quarter the potatoes (you can peel them if you like - I never do and I think the skins make them crispier) and place them in a large bowl.
- Drizzle the olive oil over the potatoes and toss to coat.
- Sprinkle seasonings over potatoes and toss to coal well.
- Line a baking sheet with aluminum foil and spray the foil with cooking spray.
- Arrange the potatoes in one layer on the baking sheet.
- Roast for 20 minutes, turning once halfway through cooking.

- Preheat oven to 450 degrees F.
- In a large bowl, toss the potatoes with the melted butter, olive oil, seasoned salt, cayenne, parsley, and 3 tablespoons of the Parmesan.
- Arrange in a single layer on 2 sheet trays. Bake until golden brown and crisp, about 45 minutes. Turn the potatoes halfway through the cooking with flat spatula.
- Remove from oven and taste for seasoning. Add some kosher salt to taste and transfer to a serving platter. Garnish with more Parmesan and serve.
