Kofta-style kebabs with feta, harissa and onion, served with a wholesome basmati rice flavoured with parsley and mint

300g brown basmati rice
500g lamb mince
1 tbsp harissa
50g feta cheese
1 large red onion , ½ thinly sliced, ½ grated
large handful parsley , roughly chopped
large handful mint , roughly chopped
85g pitted black kalamata olive , quartered
1 cucumber , diced
300g cherry tomato , halved
1 tbsp olive oil
juice 1 lemon

Steps:

  • Soak 12 wooden skewers in water for 30 mins. Cook the rice following pack instructions, then rinse under cold water and drain thoroughly.
  • Heat the grill. Mix the mince with the harissa, feta, grated onion and seasoning. Form into 12 sausage shapes and thread onto the skewers. Lay on a non-stick baking tray and grill for 6-8 mins, turning until cooked through and slightly browned.
  • Mix the brown rice with the remaining ingredients and some seasoning. Serve alongside the hot skewers.

1 pound lamb shoulder, cut into 1/2-inch pieces
10 skewers
2 tablespoons ground cumin
2 tablespoons red pepper flakes
1 tablespoon salt

Steps:

  • Thread a portion of the lamb pieces onto a flat kebab skewer. Repeat with remaining lamb and skewers.
  • Preheat a grill for medium heat and lightly oil the grate.
  • Place skewers on the grill. Cook, turning often and sprinkling with cumin, red pepper flakes, and salt, until nicely browned and meat is no longer pink in the center, about 6 minutes.

The Lamb Skewers with Spicy Yogurt Dressing from Oberon are based on a family recipe given to owner and host Zoran Matulic by his mother, who lives in the coastal town of Split in what is now Croatia. This recipe has it all: The lamb skewers are easy to assemble ahead and are perfect for outdoor grilling. The ground lamb mixture is stirred together the day before and allowed to rest. The chile-mint yogurt sauce can also be made ahead to blend the flavors, or it can be made at the last minute, depending on the cook's schedule. When it's time to serve, the host only needs to form the meat into logs, thread the skewers and quickly cook the meat. The combination of sweet onions, scallions, and garlic bring out a sweet intensity in the lamb.

1 tablespoon olive oil
2 medium onions, finely diced
1 lb ground lamb
2 scallions, minced (white part only)
2 garlic cloves, minced
1 tablespoon of fresh mint, minced
1 1/2 teaspoons salt
1/2 teaspoon ground pepper
2 cups plain yogurt
1/2 teaspoon cayenne pepper
1 tablespoon finely chopped of fresh mint
salt and pepper, to taste

Steps:

  • The day before serving, heat the olive oil in a sauté pan over low heat. Add the onions and cook slowly until translucent, about 30 minutes. Drain any excess oil.
  • Break the ground lamb up into a bowl. Add the onions, scallions, garlic, mint, salt, and pepper. Mix well. Cover and refrigerate overnight.
  • When ready to serve, soak 16 six-inch wooden skewers in water for 30 minutes. (This helps prevent the skewers from burning on the grill.) Preheat a grill (high heat).
  • Divide the lamb mixture into 16 equal pieces. Shape each piece into a 1-inch diameter log, approximately 3-inches long. Thread each piece lengthwise onto a skewer.
  • Grill lamb to medium rare, turning once, about 5 minutes. Serve with Spicy Yogurt Dressing.
  • To make the dressing: Mix the yogurt, cayenne, and mint in a small bowl. Season to taste with salt and pepper. Serve at room temperature with the lamb skewers.

1 tablespoon red chili flakes
1 tablespoon cumin seed
2 teaspoons fennel seed
1 teaspoon kosher salt
2 teaspoons granulated garlic
1 1/4 pound lamb shoulder chops, cut into 1-inch pieces and bones discarded (see note above)
1 tablespoon vegetable or canola oil
2 teaspoons Shaoxing wine
Bamboo skewers, soaked in water at least 2 hours and up to overnight

Steps:

  • In a mortar and pestle or spice grinder, coarsely grind chili flakes, cumin, and fennel. Add granulated garlic and kosher salt and briefly grind to break salt into smaller pieces and thoroughly combine ingredients. Reserve 1 tablespoon of the spice mix in a small bowl. Add lamb to a large bowl and toss thoroughly with the remaining spice mix, oil, and Shaoxing wine. Light one chimney full of charcoal. When all the charcoal is lit and covered with gray ash, pour out and arrange coals on one side of the charcoal grate. Set cooking grate in place, cover grill and allow to preheat for 5 minutes. Clean and oil the grilling grate. Grill skewers, covered, over indirect heat until lamb is nearly cooked through, about 4 minutes per side. Move skewers over direct heat, sprinkle with the reserved spice mix, and cook until well seared on both sides, about 1 minute total. Remove skewers from the grill and serve right away.

3 pound(s) boneless lamb loin orwell-trimmed leg, cut into 1 inch cubes

Steps:

  • Put 12 wooden skewers in a pan of water to soak for at least 20 minutes. To prepare the lamb marinade, whisk together ½ cup of olive oil, lime juice, lemon zest, garlic, cumin, chili powder, curry powder, 2 teaspoons salt, cayenne, ¼ teaspoon black pepper, and jalapenos in a medium bowl. Taste and adjust salt, pepper, cayenne, and lime juice. Put lamb cubes and marinade into a large glass baking dish and toss, rubbing marinade all over lamb. Thread 4 to 5 pieces of lamb onto each skewer. Place skewers into baking dish, cover with plastic wrap, and refrigerate for at least 1 and up to 4 hours. While lamb marinates, preheat a grill or broiler to medium-hot and prepare beans. Sauté beans in remaining ¼ cup olive oil in a large skillet over medium-high heat, stirring frequently, until they are tender and begin to blister. Stir in butter, 1 teaspoon salt, and ¼ teaspoon black pepper. When butter just begins to brown, transfer beans to a warm serving platter and drape with foil. Grill lamb, turning skewers every few minutes, until medium rare (internal temperature of 130 degrees), about 6 minutes. (Alternately, skewers can be broiled until medium rare.)
