FRIED JALAPENO POPPER BITES
Fried Jalapeno Popper Bites are ultra cheesy with lots of crumbled bacon and diced jalapenos. Fried until golden and served with ranch or blue cheese dressing for dipping. They are wonderfully crispy on the outside with a gooey cheese filling.

Steps:
- In a large bowl, mix together cream cheese, pepper jack cheese, cheddar cheese, jalapenos, bacon, hot sauce and garlic powder.
- Shape mixture into balls slightly large than 1-inch. (You should get about 16.)Place on a baking sheet lined with parchment paper and freeze for 30 minutes.
- In a bowl, whisk together flour, salt, paprika, and cayenne. Set aside.
- In a second bowl, whisk together eggs and water. Set aside.
- In a pie plate, combine bread crumbs, Panko crumbs, and salt.
- Pour about 1 inch of oil into a Dutch oven. Heat to 350 degrees.
- While the oil heats, dip the balls in flour, coat in egg mixture and then coat in bread crumb mixture. If oil is not ready, place them in the refrigerator.
- Fry in 2 to 3 batches for about 2 minutes or until golden. Remove with a slotted spoon and place on a paper towel-lined plate.
- Serve warm with dressing for dipping.

- Preheat the oven to 350 degrees F (175 degrees C).
- Combine cream cheese, Parmesan cheese, egg yolks, jalapeno peppers, hot sauce, and garlic powder in a bowl. Mix to form a paste. Shape into balls and roll in bread crumbs until breading is about 1/4 inch thick. Place balls on an ungreased baking sheet.
- Bake in the preheated oven until golden brown, 10 to 15 minutes. Serve warm or freeze in a resealable plastic bag for later.

- In a large bowl, combine the bread crumbs, cheddar cheese, eggs, ½ teaspoon of salt, and ½ teaspoon of pepper, and mix well.
- Grease a 24-cup mini muffin tin with nonstick spray and fill each cup with a heaping tablespoon of the bread crumb mixture. Press into the pan firmly to form wells. Set aside.
- In another large bowl, combine the cream cheese, bacon, diced jalapeños, the remaining ½ teaspoon of salt, and remaining ½ teaspoon of pepper.
- Preheat oven to 375°F (190°C).
- Fill the bread crumb wells with a 2 tablespoons of the cream cheese mixture. Top each cup with a bit of shredded cheddar and a jalapeño slice.
- Bake for 10 minutes, or until the cups are golden brown.

JALAPENO BITES
Steps:
- Preheat the oven to 350 degrees F.
- Mix the cream cheese, Parmesan, jalapenos and egg to form a paste. Shape into balls using about 1/2 tablespoon of paste for each. Roll the balls in the breadcrumbs. Place on an un-greased baking sheet and bake for 10 to 15 minutes, until golden brown. Serve warm.
BEST EVER JALAPENO POPPERS
This is a recipe I made by taking the best of three or four popper recipes and combining them to make something that tastes wonderful. A frequent request at my house, and at others. I usually make 100 and put them in the fridge. They don't last long. Adjust the amount of bacon bits and type of shredded cheese to taste. Increase the recipe as necessary! Lots of tests helps to best figure out the way you like it. Be sure to wear rubber gloves while seeding the jalapenos -- they will burn.

- In a medium bowl, mix the cream cheese, Cheddar cheese and bacon bits. Spoon this mixture into the jalapeno pepper halves.
- Put the milk and flour into two separate small bowls. Dip the stuffed jalapenos first into the milk then into the flour, making sure they are well coated with each. Allow the coated jalapenos to dry for about 10 minutes.
- Dip the jalapenos in milk again and roll them through the breadcrumbs. Allow them to dry, then repeat to ensure the entire surface of the jalapeno is coated.
- In a medium skillet, heat the oil to 365 degrees F ( 180 degrees C). Deep fry the coated jalapenos 2 to 3 minutes each, until golden brown. Remove and let drain on a paper towel.
