24 large jalapeno peppers
6 ounces fat-free cream cheese
2 teaspoons Worcestershire sauce
1/4 teaspoon garlic powder
1 package (8 ounces) imitation crabmeat, chopped
1/4 cup shredded reduced-fat cheddar cheese
12 turkey bacon strips, halved widthwise

Steps:

  • Cut stems off jalapenos; remove seeds and membranes; set aside. In a small bowl, beat the cream cheese, Worcestershire sauce and garlic powder until blended. Stir in crab and cheese. , Transfer to a resealable plastic bag; cut a small hole in a corner of the bag. Pipe filling into jalapenos. Wrap each with a piece of bacon; secure with toothpicks. , Place on an ungreased baking sheet. Bake at 350° for 40-50 minutes or until peppers are crisp-tender.

Cajun Crab Stuffed Jalapenos are stuffed full of cream cheese, fresh crab meat, cheddar cheese, and bacon. This spicy appetizer is wonderfully creamy and cheesy with plenty of kick.

4 ounces cream cheese, (softened)
1/2 teaspoon Cajun or Creole seasoning
1/4 teaspoon garlic powder
3/4 cup shredded cheddar cheese
3 slices bacon, (cooked and crumbled)
2 green onions, (sliced)
8 ounces fresh crab meat, (I use lump crab meat)
10 large jalapenos

Steps:

  • Preheat oven to 375 degrees F.Line a rimmed baking sheet with parchment paper or aluminum foil.
  • In a medium bowl, stir together cream cheese, Cajun seasoning, garlic powder, and cheddar cheese.
  • Add bacon, green onions, and crab and gently stir in.
  • Cut each jalapeno in half. Scoop out the seeds and white membrane.
  • Stuff jalapenos with cream cheese mixture and place on prepared baking sheet.
  • Bake for 20 to 25 minutes.

Chicken breasts rolled up with a crabmeat and mushroom mixture, topped with a white sauce and baked. I got this recipe from a friend and my family loves it. It's easy to make and can be served with potatoes or rice.

4 tablespoons butter, divided
¼ cup all-purpose flour
1 cup chicken broth
½ cup milk
¼ cup chopped onion
1 (6 ounce) can crabmeat - drained, flaked and cartilage removed
1 (4.5 ounce) can sliced mushrooms, drained
⅓ cup crushed saltine crackers
2 tablespoons minced fresh parsley
½ teaspoon salt
1 pinch ground black pepper
4 skinless, boneless chicken breast halves
1 cup shredded Swiss cheese
½ teaspoon paprika

Steps:

  • To Make White Sauce: Melt 3 tablespoons of the butter in a medium saucepan. Stir in flour until smooth, then gradually stir in broth and milk. Bring all to a boil; boil, stirring, for about 2 minutes. Remove from heat and set aside.
  • In a large skillet melt remaining 1 tablespoon butter and saute onion over medium heat until tender. Add crab, mushrooms, cracker crumbs, parsley, salt, pepper and 2 tablespoons of the prepared white sauce. Heat through.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Pound chicken breasts to 1/4 inch thickness. Spoon about 1/4 of the crab mixture onto the edge of each chicken breast; roll up and secure with toothpicks. Place chicken rolls in a lightly greased 9x13 inch baking dish, then top with remaining white sauce.
  • Cover dish and bake at 350 degrees F (175 degrees C) for 30 minutes or until chicken juices run clear. Sprinkle with cheese and paprika and bake, uncovered, for another 5 minutes or until cheese is melted and bubbly. Remove toothpicks and serve.

3 medium jalapeno peppers
½ cup shredded Monterey Jack cheese
½ small onion, chopped
2 ounces cream cheese, softened
2 cloves garlic, crushed
¼ teaspoon ground cumin
4 (5 ounce) skinless, boneless chicken breast halves
cooking spray
salt to taste

Steps:

  • Preheat an outdoor grill for medium heat and lightly oil the grate.
  • Place jalapeno peppers on a microwave-safe plate. Microwave on high power until soft but still plump, 1 to 2 minutes. Remove and discard seeds. Dice peppers.
  • Mix diced peppers, Monterey Jack cheese, onion, cream cheese, garlic, and cumin together in a bowl.
  • Make a pocket in each chicken breast, being careful not to cut through the sides or bottom, as follows: Make a vertical slice in the top center of each breast, starting about 1/2 inch in from each edge. Starting inside the vertical slit, cut horizontally into the chicken breast in both directions; this should leave you with a nice pocket.
  • Press 1/4 of the pepper-cheese mixture into each breast. Close and secure with toothpicks. Spray chicken breasts with cooking spray and season with salt.
  • Place chicken on the preheated grill with toothpicks facing upwards. Grill for 12 minutes, then turn and cook until no longer pink in the center and the juices run clear, 3 to 5 more minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Remove toothpicks before serving.

CRAB STUFFED CHICKEN (AKA FANCY CHICKEN)

I was searching the internet 2 valentines days ago for a romantic, not too foo-fooey recipe and found this (don't remember what site). This is now my BH's version of comfort food, whenever he feels down he asks me to make "that fancy chicken". I like to serve it with garlic mashed potatoes.

8 ounces cream cheese, softened
1 (6 ounce) can lump crabmeat (I actually use more)
1 (2 1/4 ounce) envelope Lipton Recipe Secrets savory herb with garlic soup mix
4 boneless skinless chicken breasts
1/4 cup flour
2 eggs, beaten
3/4 cup plain breadcrumbs (I prefer seasoned crumbs)
3 tablespoons olive oil
1 1/2 tablespoons butter

Steps:

  • Combine cream cheese, crabmeat, and soup mix, set aside.
  • Cut a 'pocket' into the side of each chicken breast (be sure not to cut all the way through!).
  • Fill each pocket with the cream cheese mixture and close the opening with toothpicks.
  • Dip chicken breasts in flour-> Eggs-> Breadcrumbs.
  • In large skillet, melt oil and butter over medium-high heat.
  • Add chicken to skillet, cook for 10 minutes, or till golden brown, turning once.
  • Transfer chicken to 13x9 pan and bake in a 350°F oven, uncovered, for 15 minutes or until chicken is done.

SPINACH CRAB STUFFED CHICKEN

This delicious chicken recipe is stuffed with crab and spinach and topped with cheese. Serve over rice and it is special enough for company, too.

1/2 cup finely chopped onion
1/4 cup chopped fresh mushrooms
1/4 cup finely chopped celery
3 tablespoons all-purpose flour
1/2 teaspoon salt, divided
1 cup chicken broth
1/2 cup milk
4 boneless skinless chicken breasts, halved (6 ounces each)
1/8 teaspoon white pepper
1/2 cup dry breadcrumbs
1 (6 ounce) can crabmeat, drained, flaked and cartilage removed
12 fresh spinach leaves, chopped
1 tablespoon minced fresh parsley
1 cup shredded swiss cheese
hot cooked rice

Steps:

  • FOR THE SAUCE; in a skillet, sauté the onion, mushrooms and celery in butter until tender.
  • Stir in flour and 1/4 teaspoon salt until blended.
  • Gradually add broth and milk.
  • Bring to a boil; cook and stir for 1 to 2 minutes or until thickened.
  • Remove from the heat.
  • Flatten chicken to 1/4 inch thickness; sprinkle with pepper and remaining salt.
  • In a bowl, combine the bread crumbs, crab, spinach and parsley; stir in 1/2 cup sauce.
  • Spoon 1/4 cup of this mixture down the center of each chicken breast half.
  • Roll up; secure with toothpicks.
  • Place seam side down in a greased 13-inch x 9-inch x 2-inch baking dish.
  • Top with remaining sauce.
  • Cover and bake at 375°F for 35 to 45 minutes or until juices run clear.
  • Sprinkle with cheese.
  • Broil 4-6 inches from the heat for 5 minutes or until lightly browned.
  • Discard the toothpicks.
  • Serve with the rice. 4 servings.

2 tablespoons minced onion

1 teaspoon chopped fresh dill
1 teaspoon minced garlic
⅛ teaspoon lemon pepper
4 ounces fresh Dungeness crabmeat
4 skinless, boneless chicken breasts
1 cup all-purpose flour
2 eggs, beaten
3 cups fresh bread crumbs
2 tablespoons butter
2 tablespoons vegetable oil

Steps:

  • In a medium bowl combine the cream cheese, onion, parsley, dill, garlic and lemon pepper. Add crabmeat and mix thoroughly. Season with salt and pepper to taste. Cover and chill in refrigerator (can be prepared 2 hours ahead).
  • Using a small sharp knife, cut in half horizontally through the center of each chicken breast half, creating a pocket. Fill each pocket with 1/4 of the crab stuffing. Then dip each chicken piece into flour, eggs and finally bread crumbs to coat. Cover completely.
  • In a large skillet melt butter or margarine with oil over medium heat. Add filled, breaded chicken breast halves to skillet and saute until golden brown and cooked through (juices run clear), about 10 minutes each side. Remove from skillet, drain on paper towels and serve.
