SPICY SAUSAGE AND LENTILS CASSEROLE

1 tbsp olive oil
8 Italian-style pork sausages (good quaility)
1 large onion, chopped
3 garlic cloves, crushed
1 large carrot, diced
1 tsp chilli flakes
2 tsp ground cumin seeds
2 tsp paprika
1 tbsp tomato puree
100 g red lentils
600 ml chicken stock (homemade or a good quaility stock)
200 g chopped tomatoes
150 g cooked or canned puy lentils, rinsed and drained
3 tbsp chopped fresh flatleaf parsley

Steps:

  • Over a medium-high heat, heat the oil in a large casserole (with a lid). Add in the sausages and brown them all over, then transfer to a plate.
  • Next, add into the same casserole dish (don't clean out after the sausages), the onion, carrot, garlic and chilli flakes, cover and cook gently for 10 mins until softened and lightly golden.
  • After 10 mins, take off the lid and stir in the cumin, paprika and tomato purée, and cook for another minute.Stir in the red lentils, chicken stock, chopped tomatoes and sausages and bring to a simmer, stirring to stop the lentils sticking to the base of the casserole.
  • Now, simply, cover and simmer for 40 mins until the sausages are tender, the lentils are cooked and the sauce is thick. (If the sauce looks watery, cook for 10 mins with the lid off to thicken it).Now, stir in the puy lentils and most of the parsley and season to taste with salt and pepper. Scatter over the remaining parsley and serve.*you could serve with bread, couscous or rice.

3 to 4 tablespoons olive oil (not extra-virgin), divided
1 onion, finely chopped
Sprinkling salt
About 2 3/4 cups (about 18 ounces) dried Puy lentils
1 fat clove garlic, squished with the flat side of a knife, and skin removed
8 Italian sausage links
1/3 cup plus 1 tablespoon red wine
1/4 cup water
Flat-leaf parsley, roughly chopped, for garnish

Steps:

  • For the lentils:
  • Put 2 to 3 tablespoons of the oil into a good-sized saucepan (and one that has a lid that fits) on the heat and when it's warm, add the chopped onion. Sprinkle with salt (which helps prevent its browning) and cook over low to medium heat until soft (about 5 minutes). Add the lentils, stir well and then cover generously with cold water. Bring to the boil, then cover and let simmer gently for 1/2 an hour or so until cooked and most, if not all, the liquid's absorbed. I don't add salt at this stage since the sauce provided by the sausages later (and which will be poured over the lentils) will be pretty salty itself. So, wait and taste. And remember, you can of course cook the lentils in advance.
  • Anyway, when either the lentils are nearly ready or you're about to reheat them, put a heavy-based frying pan on the burner, cover with a film of oil and add the bruised garlic. Cook for a few minutes then add and brown the sausages. When the sausages are brown on both sides - which won't take more than 5 minutes or so - throw in the wine and water and let bubble up. Cover the pan, either with a lid or aluminum foil, and cook for about 15 minutes. Using a fork, mash the now-soft garlic into the sauce and taste for seasoning, adding a little more water if it's too strong.
  • Remove the lentils to a shallowish bowl or dish (I evacuate the sausages from their cooking pan, plonk the lentils in, then proceed) then cover with the sausages and their garlicky, winey gravy. Sprinkle over some flat-leaf parsley.

1 tablespoon olive oil
5 links Italian sausage ((mild or spicy))
1 medium onion, chopped
2 carrots, peeled and chopped
4 stalks celery, chopped
2 cloves garlic, minced
2 cups lentils ((brown or green lentils))
¼ cup red wine
1 15 ounce can diced tomatoes
4 cups broth ((vegetable or chicken broth))
1 teaspoon dried oregano
1 teaspoon kosher salt
½ teaspoon black pepper
½ cup chopped parsley

Steps:

  • Heat olive oil in dutch oven or pot over medium heat. Add in sausages and cook just until browned (they will not be cooked through at this point.) Remove sausages from pot and set aside.
  • To the pot, add chopped onion, carrot, celery, and garlic. Cook until the vegetables start to soften, about 5 minutes. Stir in the lentils and red wine, and cook for a minute. Pour in the canned tomatoes, broth, oregano, and salt and pepper. Bring to a boil and reduce to simmer. Add back in the sausages, pressing into the lentils. Cover and simmer, stirring occasionally until lentils are al dente, about 30 minutes.
  • Remove cooked sausages from pot. Stir in parsley. Serve lentils in a bowl with a link of sausage on top.

1 cup green lentils, (black lentils will work as well)
extra virgin olive oil
8 ounces chicken or pork sausage, (casings removed (about 2 to 3 sausages))
1 fennel bulb large or 2 small, (thinly sliced)
1 to 2 large cloves garlic, (grated)
1 yellow onion, (finely chopped)
1 carrot, (grated)
1/2 teaspoon fennel seeds
1/2 cup broth
2 tablespoons red wine vinegar

Steps:

  • In a saucepan, combine the lentils with 3 cups of water. Bring to a boil, then lower the heat and cover part-way to simmer for about 10 minutes (the lentils should be cooked just part-way through (there should be some liquid in the pan still).
  • In a large skillet, heat 1 to 2 tablespoons of extra virgin olive oil. Add the sausage and cook over medium-high heat, tossing regularly and breaking the sausage up with a wooden spoon, until fully cooked and browned.
  • Push the sausage to one side of the skillet and add the fennel, garlic, onion, carrots, and fennel seed. Add broth and red wine vinegar.
  • Add the par-boiled lentils to the sausage and fennel skillet. Bring to a boil, then lower the heat and let simmer, partially covered, for 15 to 20 minutes.
  • Taste and adjust seasoning. To serve, drizzle a bit of extra virgin olive oil on top. Serve immediately with your favorite crusty bread

5 cups water
3 1/2 cups reduced-sodium chicken broth
1 Turkish or 1/2 California bay leaf

1 pound sweet Italian sausage links, cut into 1-inch pieces
1 medium onion, finely chopped
2 medium carrots, finely chopped
2 celery ribs, finely chopped

Steps:

  • Simmer lentils, water, broth, bay leaf, and half of garlic in a 4-quart pot, uncovered, 12 minutes.
  • Meanwhile, heat oil in a wide heavy 5- to 6-quart pot over medium-high heat until it shimmers. Brown sausage, about 7 minutes. Transfer sausage with a slotted spoon to a bowl.
  • Reduce heat to medium and cook onion, carrots, celery, remaining garlic, 1 teaspoon salt, and 1/2 teaspoon pepper, stirring occasionally, until softened, about 5 minutes. Stir in tomato paste and cook, stirring, 2 minutes. Add sausage and lentils with cooking liquid and simmer, uncovered, until lentils are tender, 3 to 5 minutes.
  • Stir in escarole and cook until tender, about 3 minutes. Stir in vinegar to taste and season with salt and pepper. Discard bay leaf.

12 ounces lentils
4 1/2 cups boiling water
2 teaspoons salt
1 garlic clove, minced (or pressed)
1 lb mild Italian sausage
1 large onion, coarsely chopped
2 -3 large carrots, diagonally sliced about 1/4 inch thick
1 (8 ounce) can tomato sauce
3 tablespoons vinegar
2 tablespoons fresh parsley, minced

Steps:

  • Rinse lentils in water and drain well; pick out and discard any foreign material. Add to 4-quart casserole or Dutch oven. Add the boiling water, salt, and garlic. Cover and place in a 350° F oven to begin baking.
  • Meanwhile, remove casings from sausage and cut into 1-inch chunks. Cook sausage in a wide frying pan over medium heat until well browned. Using a slotted spoon, remove sausage and stir into lentils. Discard all but 2 tablespoons of the drippings; add onion to drippings and cook, stirring, until soft. Stir onion and carrots into lentils.
  • Cover and bake for 45 minutes. Stir tomato sauce and vinegar into lentils and bake, uncovered, for 20 more minutes.

1 green bell pepper, chopped
½ cup dry lentils
½ cup uncooked rice
