- Crab cakes: Mix the crabmeat, mayonnaise, egg, bread crumbs, scallions, the lime juice, 1/4 cup cilantro, and the hot sauce together in a small bowl. Season, to taste, with salt and pepper. Form the mixture into 8 (3/4-inch-thick) patties and refrigerate for 20 minutes.
- Breading: Mix the bread crumbs and 1/4 cup of cilantro on a plate. Carefully turn the patties in the bread crumb mixture until coated on both sides.
- In a large nonstick skillet, heat the olive oil over medium-high heat. In batches, fry the crab cakes until golden, about 3 minutes each side.
- Guacamole: Coarsely mash the avocados in a medium bowl. Lightly mix in the onion, cilantro, and lime juice. Season with salt and pepper, to taste.
- Transfer the crab cakes to a serving platter, top each cake with a tablespoon of guacamole, and serve.

- Preheat outdoor grill or indoor grill pan to high. Rub the meat with a mixture of grill seasoning, chili powder and the lime zest. Let meat stand 10 minutes. Grease grill surface then add meat and cook 7 to 8 minutes on the first side, 5 to 6 minutes on the flip side for medium doneness.
- For the rice, heat a medium sauce pot over medium heat. Add butter, and when melted add rice and toast for a couple of minutes. Add the onion, bell pepper, jalapeno and garlic and cook for a few minutes to begin to soften the veggies. Add stock and raise heat to bring up to a bubble. Stir in the tomato paste and hot sauce. Reduce heat to simmer, cover the pot and cook 18 minutes, until rice is tender. Add shrimp to the pot in the last 5 minutes of cooking. The shrimp will steam on top of the rice. Cook the shrimp until pink and firm. Combine the seafood and cilantro into the rice and season with salt, to taste.
- Season sliced tomatoes with salt and dress the avocado with lemon juice. Make 4 stacks alternating the tomatoes with avocado and onions.
- Slice the steaks and serve on a bed of shrimp rice, the guacamole stacks alongside. Garnish the guacamole stacks with cheese crumbles.

- Heat about 1/3 cup of oil over medium to medium-high heat.
- Drain the shredded potatoes, pressing them down in a colander to get their moisture out. Place the potatoes in a bowl; using a box grater, grate the onion directly into the potatoes so that the onion juices fall into bowl as well. Add the egg and flour or meal to the bowl then season with spices and salt. Combine and drop enough batter into hot oil to make 2 1/2-inch pancakes. Add more oil, as needed, and fry cakes in batches until deeply golden on each side.
- You will get about 16 pancakes. Drain cooked cakes on paper towels.
- Cut the avocados in half, all the way around the pit. Remove the pit with a spoon, then scoop the flesh into a bowl and add the lemon juice, onion, garlic, jalapenos and a generous amount of salt. Mash the guacamole to a smooth consistency.
- Reduce the pomegranate juice to a syrup.
- Arrange the potato pancakes on a platter and top with heaping spoonfuls of guacamole.
- Drizzle pomegranate syrup over the guacamole and serve.

- Heat a griddle on a medium heat, rub 1 tbsp oil all over the chicken, and season with salt and pepper. Cook for 25 mins, turning every 5 mins, until the skin is golden and the flesh juicy and cooked through. Lift onto a plate to rest.
- Meanwhile, heat oven to 180C/160C fan/ gas 4. Brush the tortillas with 1 tbsp oil, then cut each into 6 triangles. Spread over a large baking sheet, then bake for 10 mins or until golden and crisp.
- Put the tomatoes and onion in a mixing bowl, then add a good pinch of salt and a grind of pepper. Add the remaining olive oil, chilli, Tabasco and the juice of 1 lime. Leave to one side.
- Peel and stone the avocados, then chop and mash lightly. Stir in the remaining lime juice and the tomato mix, then fold through the herbs.
- Slice the chicken and serve it with the corn chips, guacamole and more lime wedges for squeezing over. This great sharing dish goes well with a few cold beers and maybe some mayo.

- Place the bacon in a large skillet and set over medium heat. Cook, turning, until crispy, 8 to 10 minutes. Transfer to a paper-towel-lined-plate to drain.

- In a large mixing bowl, mash 1 of the chopped avocados with a fork. - For the guacamole, peel the avocado and place the flesh in a bowl.
- Lightly mash with fork.
- Add remaining ingredients to taste and mix well. *Use food processor if you want a smoother guacamole.
- Cover and set aside.
- For the BLT, place a large skillet over medium-high heat and add a small amount of oil to the skillet.
- Add the bacon and cook for 2-3 minutes on each side or until crispy, then drain on paper towels.
- Spread each halve of the rolls with guacamole, followed by 2 slices of bacon, tomato slices and finish with a handful of arugula leaves and top of roll.
- Serve while bacon is still warm.
SPICY GUACAMOLE WITH JALAPENO-MANGO AND CHIPS

- Mash the avocado in a medium bowl. Mix in the Jalapeno-Mango Salsa and jicama. Season with salt and pepper. Serve with homemade or purchased tortilla chips.
- Heat the vegetable oil in a small saute pan over medium-high heat. Lightly fry the jalapeno chiles, turning them in the pan until their skins are blistered, about 5 minutes. Set aside to cool. Once cooled, stem, seed and finely chop the jalapeno chiles and place them into a large mixing bowl. Add the cilantro, mangoes, lime juice and onions and season with salt and pepper. - Place torn bread in a food processor. Cover and process until bread turns into coarse crumbs. Transfer to a large bowl; set aside.

I find it best to buy avocados when they're green and ripen them myself. The credit for this recipe goes to my sister. It took a LONG time for me to get this recipe from her; hope you enjoy it.

- In small pot, boil 2-3 jalepenos. (If your jalepenos aren't very hot, you can add more.) Boil them for about 20 minutes on medium heat, or until they're squishy. You'll know they're ready when the color turns muted. The tops should just pull right off.
- With tops off, squeeze them gently to remove excess water. Put them in the bowl that will contain your guacamole. With a fork, mash them up into small, squished bits, making sure it separates instead of sticking together.
- Peel, deseed, and halve the avocados. Add them to the jalepenos and mix VERY well. You want to make sure you distribute the jalepenos evenly.
- Squeeze the lemon to add juice into the mixture. Add salt and garlic powder and mix again.
SPICY GUACAMOLE
This is a wonderful guac recipe. My mom gave this to me; she had xeroxed it from what looks like maybe Taste of Home magazine. It is great! And definitely spicy. If you need more spice, add some hot sauce. I don't think you'll need it, though :-)
