SWEET AND SPICY HONEY GRILLED PORK CHOPS WITH ASPARAGUS BELL PEPPER AND ZUCCHINI STIR FRY image

2 large jalapeno chilies stemmed
2 large garlic cloves peeled
7 tablespoons olive oil
1/4 cup soy sauce'2 tablespoons dijon mustard
1 tablespoon honey
1 tablespoon oriental seasme oil
1 tablespoon chopped fresh rosemary
2 teaspoons grated lemon peel
4 7 to 8 ounce pork chops about 1/2 inch thick
10 asparagus spears trimmed cut into 1 1/2 inch pieces
3 large garlic cloves minced
1 medium zucchinni halved lenghtwise cut crosswise into 1/4 thick diagonal slices
1 yellow summer squash halved lenghtwise cut crosswise into 1/4 inch thick slices
1 small red bell pepper seeded cut into strips

Steps:

  • Preheat oven to 350 degrees. Place chiliies and 2 garlic cloves in small baking dish. Sppon 1 tablespoon olive oil over run to coat. Roast until chilies and garlic are very soft turning once about 40 minutes. Cool. Puree mixture in processor. Whisk puree 4 tablespoons olive oil soy sauce dijon mustard honey oriental seasme oil rosemary and lemon peel in medium bowl to blend. Place pork chops in 13 by 9 by 2 inch glass baking dish. Pour marinade over pork chops and run to coat. Cover and refrigerate 1 hour turning occasionally. Cook asparagus in medium pot of boiling slated water until crisp and tender about 1 minute drain transfer asparagus to bowl of ice water to cool drain. Prepare barbecue medium high heat or preheat broiler. Remove pork chops from marinade. Sprinkle with slat and pepper and grill or broil pork chops until no longer pink in center about 5 minutes per side. Transfer pork chops to platter. Tent with foil to keep warm while preparing vegetables. Heat remaining 2 tablespoons oil in heavy large skillet over medium heat add minced garlic suate until golden about 1 minute. Add zucchini yellow squash and red bell pepper same until vegetables are crisp tender about 2 minutes. add asparagus saute until heated through about 1 minute longer. Season to taste with salt and pepper. Arrange vegetables around pork and serve.

1 lb asparagus
2 tablespoons balsamic vinegar
1 tablespoon Worcestershire sauce
1 tablespoon unsalted butter
1 tablespoon chulula chipoltle dry chili lime seasoning (use less if you're sensitive to heat)
1/8 teaspoon lime juice
salt

Steps:

  • Prepare asparagus by trimming ends to remove tough ends.
  • Place in a glass baking dish.
  • Melt the butter in a microwave proof bowl.
  • Add the vinegar, Worcestershire, chulula and lime juice and mix well to break up any dry ingredients.
  • Pour over the asparagus and toss.
  • Marinade for 15 minutes, tossing occasionally.
  • Place on the grill and cook until al dente, approximately 5 - 7 minutes (depends on the size of your asparagus, more for thicker, less for thinner).

  • Heat gas or charcoal grill. In small bowl, mix chili sauce and preserves; set aside.
  • Place asparagus in grill basket (grill "wok"). Brush asparagus with oil; sprinkle with garlic-pepper blend.
  • Place grill basket on grill over high heat. Cover grill; cook 5 to 8 minutes, turning once with tongs, until tender and slightly charred.

This recipe combines all the elements of summer with a light sauce that coats the pasta without overwhelming the subtle flavors of the vegetables. 1/4 c teriyaki sauce
1/4 c thai sweet chili sauce
1 c coconut milk, divided
1 lb large shrimp, peeled with tails
2 medium red bell peppers, chopped, about 1½ cup
2-3 pieces fresh corn, peeled, about 1 cup
1 lb asparagus spears
2 Tbsp flour
8 oz fettuccine, cooked to al dente
1/4 c crumbled feta cheese

Steps:

  • 1. Marinade: Combine teriyaki, sweet chili sauce and ¼ cup coconut milk. (Measure ¼ cup of mixture and set aside for later use as a *sauce) Add ¼ cup coconut milk to marinade mixture. Place shrimp in shallow bowl and pour ½ of marinade over shrimp. Use remaining marinade mixture as a basting sauce. 1) Thread red pepper onto skewers. Place shrimp on separate skewers.
  • 2. Grilling instructions: 2) Heat grill to medium. Position vegetables on outer edges of grill and cover lid. Roast 2 to 3 minutes turning vegetable as need. Place shrimp skewers in center of grill. Baste shrimp and vegetables with marinade. Cook shrimp 3 to 5 minutes on each side. Continue to roast vegetables until desired tenderness is achieved.
  • 3. Sauce: In a small saucepan, over low heat place reserved ¼ cup *sauce. In a small bowl combine remaining ½ cup coconut milk and flour. Stir until all lumps are dissolved. Add to saucepan and heat until sauce starts to thicken.
  • 4. To serve: Remove shrimp and peppers from skewers. Remove corn from cob. Cut ½ of the asparagus into 2-3 inch pieces and place all in large bowl. Add *sauce to mixture and toss. Place 2 or 3 pieces of remaining asparagus on plates. Top with pasta and shrimp mixture. Garnish with feta.

Today it was almost 70 degrees and this salmon dish is one of my boys and my favorite warmer weather grilled dishes! I got 2lbs of salmon and I bet there will be nothing left! It is just so wonderful! My 6 year old son says he hates everything green but this recipe for grilled asparagus. So easy and brings out so much flavor! Hope you love it as much as we do! 1/4 - onion diced
1/4 cup(s) lemon
1 tablespoon(s) brown sugar
1/8 teaspoon(s) cayenne pepper
1/2 tablespoon(s) minced ginger
2 tablespoon(s) soy sauce
1/4 cup(s) red wine vinegar
- handful of cilantro chopped
2 pound(s) salmon filets cut into 4 oz portions. skin on

Steps:

  • In a plastic zip lock bag add all the ingredients, cut the fish and add to the bag and marinated for several hours or overnight.
  • Light your grill or grill pan. Remove the salmon from the marinade but save the marinade. You are going to use it on the salmon while it's cooking.
  • Place the salmon on the grill at a 10 o'clock angle presentation side down.
  • Cook for a few minutes and then move them to the 2 O'clock angle. Cook a few minutes
  • When you are happy with the color of the grill marks, carefully turn the salmon over. At this point angle doesn't matter you will be removing the skin if it doesn't remain on the grill anyway. Add some of the marinade to the top of the salmon to help keep it moist and get a great caramelized color.
