10 cloves garlic
1 1/2 cups water
5 tablespoons vegetable oil
2 teaspoons whole cumin seeds
1 dried hot red chilies
2 teaspoons coriander, ground
1 can chopped tomato
1 1/4 teaspoons salt

Steps:

  • Trim the green beans and cut them crosswise at 1/4 in intervals.

  • Cover, turn heat to low and cook for about 8-10 minutes or until the beans are tender.

  • Turn heat up and boil away all of the liquid, stirring the beans gently as you do so.

SPICY SZECHUAN GREEN BEANS

I modified this recipe to be less oily. It is almost as good as take-out Chinese green beans. It tastes wonderful with ham and a baked yam.
