Got this from a friend who is amazing chef. There is heat to this recipe so beware! It makes a wonderful paste to keep in the fridge or freezer and add at the last minute to sauteed chicken or prawns.

2 tablespoons paprika
1/2 cup butter
10 minced garlic cloves
2 tablespoons cayenne pepper
1/2 cup tomato paste
1 tablespoon sugar
1 teaspoon salt

Steps:

  • Warm butter in saucepan or microwave until just barely melted. Add remaining ingredients and mix well. Cool, stirring occasionally. Refrigerate up to a week or freeze in tbsp size quantities.
  • To prepare chicken or prawns: Place about a pound or pound and a half of sauteed chicken pieces or peeled, boiled, drained prawns into a pot. Add about 2 tbsp glaze to the pot and cook over very low heat stirring often to coat completely. Allow it to caramelize slightly. Serve warm or at room temperature. Adjust the amount of paste according to how spicy you like your food. We sometimes add up to 4 tbsp for this much chicken or seafood.

1 cup tomato chili sauce
1/4 cup honey
1 tablespoon horseradish
1 teaspoon dry mustard (if you want them really hot use Chinese dry mustard)
4 tablespoons vegetable oil
1 teaspoon dried thyme
1 teaspoon chili powder
2 1/2 lbs large shrimp, peeled, deveined, tails left on

Steps:

  • Whisk together chili sauce, honey, mustard, horseradish, oil, thyme and chili powder.
  • Toss prawns in the marinade, stand at room temperature for 30 minutes.
  • Heat the broiler.
  • Place prawns in a single layer on a foil covered cookie sheet.
  • Broil 2" from the heat for 3-4 minutes.
  • Turn after 2 minutes.
  • Do not overcook the prawns should be firm, opaque and slightly charred on the edges.

2 tablespoons spicy chili sauce, such as Sriracha
1/3 cup honey
2 pounds extra-jumbo shrimp (about 32 total), peeled and deveined (tails left on)
Salt and pepper

Steps:

  • Heat a grill or grill pan to high. Clean and lightly oil hot grill. Stir together chili sauce and honey. Assemble kebabs (using 2 long skewers for each, threading 1 skewer through head end of shrimp and 1 through tail end); season with salt and pepper.
  • Grill until shrimp begin to turn opaque, 2 to 3 minutes. Flip, brush liberally with glaze, and cook until opaque throughout, 3 to 4 minutes. Brush with more glaze and serve.

Sooo easy and sooo good! We couldn't stop eating these! I served it at an all girls' luncheon yesterday and it was the first dish to disappear. One good friend of mine asked for the left over glaze to go! Glaze needs to be refrigerated overnight for flavors to meld.

1 cup butter, cut into small pieces
1 tablespoon paprika
1 tablespoon cayenne
1/2 cup tomato paste
1 tablespoon sugar

2 lbs shrimp, size 31 to 40, peeled and deveined, tails on

Steps:

  • Glaze: Place all glaze ingredients in a 2-quart saucepan over low heat until butter is melted.
  • In a blender or food processor, blend on high speed until the mixture becomes a smooth paste.
  • Refrigerate overnight before use.
  • Heat the olive oil in a 12-inch saute pan over high heat.
  • Add shrimp to the pan and move them around constantly so they will cook completely and evenly.
  • Once the shrimp turns pink, add about 1/2 to 3/4 of the glaze to the pan while moving the shrimp.
  • Allow the glaze to evenly coat all the shrimp and lightly caramelize on the shrimp.
  • Add more sauce if needed, taste to your liking.
  • Do not overcook the shrimp.
  • Serve the shrimp warm or at room temperature.

Another of my glazed chicken recipes. This one uses some of the spice from carribean cooking and adds a nice sweet, spicy and sour taste to the chicken.

1/2 cup chili sauce
2 tablespoons brown sugar
2 tablespoons lime juice
1 teaspoon hot pepper sauce
1/2 teaspoon ground allspice
1/2 teaspoon ground ginger
1 (3 -3 1/2 lb) chicken, cut into 8 pieces

Steps:

  • Heat grill.
  • In small saucepan, combine chili sauce, brown sugar, lime juice, hot pepper sauce, allspice and ginger.
  • Bring to a boil, stirring occasionally.
  • Remove from heat.
  • Place chicken on grill, skin side down, over low heat.
  • Cook 45 to 60 minutes or until chicken is fork tender and juices run clear, turning once and brushing frequently with glaze during last 15 minutes of cooking.
  • Bring any remaining glaze to a boil; serve as a sauce with chicken.

This is a simple worknight dish that will totally surprise you with flavor. It's great because every cook I know has all of these ingredients in their cupboards already! I got this recipe from a Cooking Light magazine and I serve it with pan fried broccoli and sweet hawaiian rolls. You can either use chicken breasts, or chicken thighs, and I recommend using boneless and skinless! This has only a medium spicy level, so just increase or decrease red pepper flakes to your taste... and enjoy!

2 teaspoons garlic powder
2 teaspoons chili powder
1 teaspoon salt
1 teaspoon pepper
1 teaspoon ground cumin
1 teaspoon paprika
1/2 teaspoon ground red pepper
8 chicken thighs
6 tablespoons honey
2 teaspoons cider vinegar

Steps:

  • In a large bowl, mix together first 7 ingredients (all the dry spices.).
  • Place chicken pieces in the large bowl and toss to coat. Make sure each piece of chicken is entirely covered with the spice mix.
  • Line a baking pan with foil and place coated chicken pieces on it with space between each piece.
  • In a small bowl, mix honey and vinegar with a whisk and set aside.
  • Put chicken under the broiler for 5 minutes.
  • Turn chicken pieces once, and cook for another 5 minutes.
  • Take out and drizzle or brush on 1/2 of the honey mixture. Cook 3 minutes.
  • Turn pieces one last time and brush on the other half of the honey mixture. Cook until done, and keep warm in the oven until ready to serve.

2 sticks butter
10 cloves garlic
1 1/2 tablespoons cayenne
1/2 cup tomato paste
1 tablespoon sugar

16 large shrimp, peeled and deveined, tails on
Cooking oil
16 basil leaves, for garnish

Steps:

  • Glaze: Place all ingredients in a bowl and place over boiling water until butter is melted. In a blender of a food processor, blend on high speed until the mixture becomes a smooth paste. Refrigerate overnight before use.
  • For the shrimp: Make a small incision in the outside of the backside of the shrimp. Working with the shrimp's natural curvature, poke the tail of the shrimp up through the incision to expose the tail. Pull the tail completely through the whole so that the tail can easily serve as a toothpick.
  • To assemble: Heat cooking oil in a large saute pan over high heat - cooking oil should coat the bottom of the pan. Add half the shrimp to the pan to cook. Move them around constantly so they will cook completely and evenly. Once the shrimp are fully cooked, add 2 heaping tablespoons of the glaze to the pan while moving the shrimp. Allow the glaze to evenly coat all the shrimp and lightly caramelize on the shrimp. Remove the shrimp from the pan. Wash the pan and repeat the process with the next 8 shrimp. Once all the shrimp have been cooked and glazed, garnish them individually with a basil leaf by sticking the leaf in through the incision made for the tail. Serve the shrimp warm or at room temperature.

SPICY GLAZED CHICKEN BREASTS

This one-skillet chicken has a spicy, pleasantly tart and punchy glaze that's built on frying a little tomato paste in garlic- and almond-infused oil, then deglazing with lemon juice. It tastes like you sun-dried lots of tomatoes for weeks. (But you don't need to do that.) The final flourish is the crunchy fried almonds and garlic. You could skip them, but they add a special touch that belies how fast the dish comes together. Besides chicken, the dish also can be made with any other ingredient that browns well, like tofu or even broccoli.

4 boneless, skinless chicken breasts (1½ to 2 pounds total)
1/4 cup extra-virgin olive oil
1/4 cup sliced almonds
3 garlic cloves, thinly sliced
Kosher salt
2 tablespoons tomato paste (preferably double concentrate)
1/2 teaspoon red-pepper flakes
1 tablespoon lemon juice

Steps:

  • Pat chicken dry and pound to an even ½-inch thickness with a heavy skillet or meat pounder.
  • In a large (12-inch) skillet, combine the oil, almonds and garlic. Season with salt, then set over high heat. Once the mixture starts to sizzle, reduce heat to medium and cook, swirling occasionally, until light golden, 3 to 5 minutes. Turn off the heat and use a slotted spoon to transfer the almonds and garlic to a paper towel-lined plate. (Keep the oil in the skillet.)
  • Set the skillet over medium-high. Season the chicken all over with 1 teaspoon salt, then add to the skillet and cook until browned underneath and opaque halfway up the sides, 3 to 5 minutes. Reduce the heat to low and transfer the chicken to a plate, seared side up.
  • With the skillet still over low heat, add the tomato paste and red-pepper flakes and cook, stirring constantly and scraping up browned bits, until the paste is a shade darker and starts to stick to the skillet, 1 to 2 minutes. Return the chicken, as well as any accumulated juices, seared side up to the skillet, cover, and cook until the chicken is cooked through, 4 to 6 minutes. (The moisture from the chicken will keep the tomato paste from burning, but if you're concerned, add a teaspoon of water as a preventative measure.)
  • Uncover, add the lemon juice, then flip and drag the chicken through the tomato-lemon glaze to coat all sides. Transfer to plates, spoon over any remaining glaze and sprinkle with the fried almonds and garlic.

SPICY SHRIMP AND CHICKEN PASTA (LIKE CARINO'S)

This is my FAVORITE dish at Johnny Carino's in my town and this is my rendition of the recipe. My husband says it tastes exactly like theirs. I have played around with how much cayenne pepper to put in this dish because the recipe I found originally just said "to taste". For me, one teaspoon is too mild, but two teaspoons is pretty spicy. I'd put some in and do a taste test before you add more. The original recipe was in Denver's Rocky Mountain News, but I have modified it to our tastes, including leaving out the green onion and increasing the amount of the sauce. Also, the original recipe said it served 4, but we have no problem getting 6-8 servings of this. I serve it with a tossed salad and my Recipe #281657.

3 tablespoons butter
20 medium raw shrimp, peeled, tail removed, and cleaned
1 cup fresh button mushroom, cleaned and sliced
1 cup sun-dried tomato, sliced
salt and pepper, to taste
3 cups heavy cream
1/2 cup romano cheese, grated
1 1/2 teaspoons cayenne pepper
16 ounces dry penne pasta

Steps:

  • Season and grill the chicken breasts until done. Cool and slice into bite sized pieces.
  • Add butter to a large sauté pan on medium heat.
  • Once butter is melted, add the shrimp, sliced chicken, mushrooms, sun-dried tomatoes, salt and pepper.
  • Saute mixture until shrimp and mushrooms are cooked.
  • Add the cream, Romano cheese and cayenne pepper. Let cream reduce by half while stirring frequently.
  • Meanwhile, cook pasta al dente according to package directions; drain excess water.
  • Toss cooked pasta with contents of sauté pan. Serve.
