Spicy Fried Cauliflower with White Cheddar Ranch Dip image

The perfect vegetarian party treat, spicy cauliflower is fried to a golden brown and served alongside a cheesy sour cream dip.

2 cups vegetable oil for frying
1 head cauliflower
2 eggs
2 tablespoons milk
1 1/2 cups Original Bisquick™ mix
1/3 cup cornstarch
2 teaspoons paprika
1 teaspoon chili powder
1/2 teaspoon ground red pepper (cayenne)
3/4 teaspoon salt
1 cup reduced-fat sour cream
1 packet cheese powder (from box of white Cheddar macaroni and cheese dinner)
1 package (1 oz) ranch dressing and seasoning mix (milk recipe)

Steps:

  • In 10-inch skillet, heat oil over medium heat.
  • Cut cauliflower into florets; discard stems
  • In medium bowl, beat eggs and milk with whisk. In large bowl, stir together Bisquick mix, cornstarch, paprika, chili powder, ground red pepper and salt.
  • Dip cauliflower florets into egg, then into Bisquick mixture; dip again into egg and coat with Bisquick mixture. Place in hot oil; fry until golden brown. Transfer fried cauliflower to clean plate lined with napkins or paper towels.
  • In small bowl, beat sour cream, cheese powder and dressing mix with whisk until well blended.
  • Serve cauliflower immediately with sour cream dip. Enjoy!

1 head large cauliflower, or 2 small heads, washed
1 teaspoon celery salt
1 teaspoon dried oregano
1 teaspoon cumin
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon paprika
1 teaspoon cayenne pepper
1 teaspoon salt
1 teaspoon pepper
2 cups all-purpose flour
2 tablespoons cornstarch
1 ½ cups soy milk
1 ½ tablespoons apple cider vinegar
2 tablespoons hot sauce
vegetable oil, for frying

Steps:

  • Cut the cauliflower in large florets. Transfer to a large bowl and set aside.
  • In a small bowl, combine the celery salt, oregano, cumin, onion powder, garlic powder, paprika, cayenne, salt, and pepper. Mix well.
  • In a medium bowl, add half of the spice mix to the flour.
  • Add the cornstarch and mix.
  • In a separate medium bowl, combine the soy milk, apple cider vinegar, and hot sauce. Whisk.
  • Pour the remaining spice mix over the cauliflower florets and mix.
  • Pour the milk mixture over the cauliflower and mix well until they are coated.
  • Cover with plastic wrap and chill for 1 hour minimum.
  • Heat the vegetable oil in a large pan until it reaches 350°F (180°C).
  • Toss each cauliflower floret in the flour mixture until well-coated, shaking off any excess. Dip them back in the remaining soy milk mixture in the bowl where they marinated, then again in the flour mixture.
  • Fry the cauliflower for 4-5 minutes, until golden brown and crispy.
  • Drain the pieces on a wire or paper towels. Let cool 5-10 minutes before serving.
  • Enjoy!

1 head of cauliflower broken into large florets
1 c flour
1 Tbsp cornstarch
1/2 tsp each garlic powder, onion powder, white pepper, sweet paprika, cajun seasoning.
1 tsp yeast
1 c milk
1/2 c favorite hot sauce
1 Tbsp dijon mustard
oil for deep frying

Steps:

  • 1. In a shallow dish place the flour, cornstarch, salt, white pepper, onion powder, garlic powder paprika, cajun seasoning and yeast. Mix well
  • 2. In another shallow dish mix the milk, hot sauce, and Dijon mustard.
  • 3. Bring the oil to 350 degrees. Dip the cauliflower in the milk mixture then the flour then back in milk then flour again. Deep fry 5 to 7 minutes. Serve with favorite dipping sauce

SPICY ROASTED CAULIFLOWER



Spicy Roasted Cauliflower image

A fantastic way to serve cauliflower. Roasting cauliflower brings out its natural sweetness. The cayenne adds just enough heat to complement the sweetness. A tasty side dish or even a delicious healthy snack.

2 c cauliflower (raw, small, uniform pieces) can use up to 4 cups
1 1/2 Tbsp olive oil, light
1/8 tsp cayenne pepper (I like with 1/4 tsp also)
1/4 tsp garlic powder
1/2 tsp sea salt
pinch white cheddar popcorn seasoning (optional)

Steps:

  • 1. Preheat the oven to 425 degrees.
  • 2. Break cauliflower up into small, uniform pieces.
  • 3. Whisk olive oil and spices together in a bowl. (Not the white cheddar popcorn seasoning) Add the uniform pieces of cauliflower and mix thoroughly. I did these about the size of a popped popcorn kernel.
  • 4. Place parchment paper on top of a cookie sheet, then place the seasoned cauliflower pieces on top of the parchment paper. Try a snack with some of the seasoned pieces eaten raw... tastes really good to me!
  • 5. Place on the center shelf of the preheated oven. Roast for 45 minutes, or to the level desired.
  • 6. I like mine crisp with brown edges. These need to be stirred on the pan every 15 minutes until done.
  • 7. May sprinkle with white cheddar popcorn seasoning, if desired.
