Big Fat Greek Eggplant (Aubergine) Salad image

This is Andrew Zimmer's recipe. He recommends roasting the eggplant on a gas grill--you can also do it on a gas stovetop or over charcoal that isn't too hot. This is enough for 4 to 6 generous salad servings or, as a topping for crostini, enough for a whole baguette, sliced relatively thin and lightly grilled.

2 eggplants
1/3 cup scallion
1/3 cup parsley
1 tablespoon minced garlic
1 tablespoon fresh oregano (or 2 tsp. dried oregano)
1 tablespoon lemon juice
2 tablespoons red wine vinegar
1/4 cup capers
1/2 cup diced tomato
1/4 cup chopped parsley
salt, pepper and lemon to taste

Steps:

  • Roast the eggplant over a gas grill for 25 minutes at 450 degrees.
  • Place in a colander and allow it to cool. Puree the scallions, parsley, garlic and oregano in a food processor.
  • In a separate bowl, combine lemon juice, red wine vinegar, some capers, tomato, chopped parsley and the herb mixture.
  • Next peel away the skin of the eggplant revealing charred flesh on the inside; leave the seeds; in a lot of recipes they're called "the poor man's caviar.".
  • Roughly cut up the eggplant, and combine it with the remaining ingredients.
  • Lastly, add salt, pepper, lemon to taste. Serve the eggplant salad (hot or cold) on grilled bread.

Spicy Eggplant Salad With Sesame Oil image

This Chinese-inspired salad has complex flavors and is quite refreshing. At the market, choose eggplants that are firm and shiny; they will taste sweeter and have fewer seeds. Make it several hours ahead or up to a day in advance. It's best served at room temperature or cool.

2 pounds small, firm eggplants
1 tablespoon soy sauce
1 tablespoon rice vinegar
Juice of 1 lime
1 teaspoon kosher salt
1 teaspoon brown sugar
3 garlic cloves, minced
2 tablespoons grated ginger
1 1/2 teaspoons toasted sesame oil
2 tablespoons vegetable oil
1 teaspoon hot pepper oil, optional
2 tablespoons roughly chopped cilantro, plus sprigs for garnish
6 scallions, thinly sliced diagonally
1 thinly sliced serrano chile, optional

Steps:

  • Cook the eggplants in a covered steamer over rapidly boiling water until tender, about 10 minutes. Let cool, then peel. Put the flesh in a fine meshed strainer to drain excess liquid.
  • Make the dressing: In a small bowl, whisk together soy sauce, vinegar, lime juice, salt and sugar. Add garlic, ginger, sesame oil, vegetable oil and hot pepper oil, if using.
  • Put drained eggplants in a bowl. Using 2 forks, shred the eggplants a bit, then pour dressing over and toss, coating well. Leave to rest for 10 minutes, then taste and adjust seasoning.
  • Just before serving, stir in chopped cilantro. Pile eggplants on a platter and sprinkle with scallions. Garnish with serrano chile, if using, and cilantro sprigs.

Tasty warm eggplant salad, great served with yogurt and my "Fennel and Sea Salt Pita Bread Crisps".

2 large eggplants
20 ml olive oil, plus
extra olive oil, to brush
sea salt
3 large tomatoes, roughly chopped
3 garlic cloves, crushed
2 teaspoons ground paprika
1/2 teaspoon ground cumin
1 small red chile, seeds removed, finely chopped
1 tablespoon brown sugar
1 teaspoon salt
20 ml lemon juice
20 ml red wine vinegar
pepper
3 tablespoons fresh flat-leaf parsley, chopped
3 tablespoons fresh coriander, chopped

Steps:

  • Preheat oven to 200C (400F).
  • Peel strips off the eggplant skin with a vegetable peeler, slice eggplant into 1cm (just under 1/2 inch) thick slices.
  • Brush both sides with the extra olive oil, then place in a baking dish and sprinkle with sea salt.
  • Cook for 30 minutes.
  • Remove from oven, if eggplant is a little dry, sprinkle with water, cool for 5 minutes, then cut into 1 cm cubes and set aside.
  • Heat olive oil in a skillet over medium-high heat, add tomatoes, garlic, spices, chilli, sugar and salt.
  • Simmer for 10 minutes, remove from heat and add juice, vinegar and black pepper.
  • Add to the reserved eggplant, stir through herbs.
  • Serve warm or at room temperature.
