SPICY COCOA STEAK RUB



Spicy Cocoa Steak Rub image

1 tablespoon cocoa powder
2 teaspoons chipotle powder
1 teaspoon kosher salt
1 teaspoon garlic powder
1 teaspoon brown sugar
1 teaspoon smoked paprika
1/2 teaspoon cayenne pepper
1/2 teaspoon freshly ground black pepper
Two 1-inch-thick rib eye steaks
2 tablespoons olive oil
1 tablespoon salted butter
3 cups mixed greens
1 cup cherry tomatoes, halved
4 radishes, sliced thinly
1 lemon, juiced
1 tablespoon olive oil
Kosher salt and freshly ground black pepper
1/4 cup shaved Parmesan

Steps:

  • Make the rub by mixing together the cocoa powder, chipotle powder, salt, garlic powder, brown sugar, smoked paprika, cayenne and black pepper in a small bowl. Generously sprinkle the steaks with the rub and set aside.
  • Heat the oil and butter in a large cast-iron skillet over medium-high heat. When the butter has melted and the oil is hot, add the steaks to the skillet and cook as desired, about 4 minutes per side for a perfect medium-rare. Remove from the skillet and let rest for 5 minutes.
  • For the salad: Meanwhile, add the greens, tomatoes and radishes to a bowl. Add the lemon juice, olive oil and a pinch of salt and pepper. Toss together, making sure everything is coated in the oil and lemon. Add to the center of a platter and top with the Parmesan.
  • Slice the steak and add to the platter with the salad, then serve.

1/8 teaspoon coarse salt

Steps:

  • Heat all ingredients in a small saucepan over medium-low, whisking constantly, until chocolate has melted and mixture is steaming, about 5 minutes. Serve immediately.

1 ¾ cups white sugar, divided
1 cup softened butter
1 teaspoon vanilla extract
½ teaspoon sea salt
2 large eggs
2 teaspoons cream of tartar
1 teaspoon baking soda
½ cup unsweetened cocoa powder
1 teaspoon ground cinnamon, divided
½ teaspoon cayenne pepper
2 ¼ cups all-purpose flour
1 cup semisweet chocolate chips

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Line 2 baking sheets with parchment paper.
  • Beat 1 1/2 cups sugar, butter, vanilla extract, and salt together in a bowl until fluffy. Beat in eggs; add cream of tartar and baking soda. Beat in cocoa powder, 1/2 teaspoon cinnamon, and cayenne powder. Beat in flour. Stir chocolate chips into the dough.
  • Mix remaining 1/4 cup sugar and 1/2 teaspoon cinnamon together in a bowl.
  • Roll heaping tablespoons of dough into balls. Roll balls in the sugar-cinnamon mixture and place on the prepared baking sheets.
  • Bake in the preheated oven until centers are set and edges crack slightly, about 10 minutes. Cool on baking sheets for 5 minutes.

  • In a medium pot, whisk together chocolate, cocoa, sugar and chile. Place pan over medium-low heat and whisk until chocolate begins to melt. Slowly whisk in milk, then cream. Drop in cinnamon stick. Bring to a simmer.
  • Remove pot from heat. Cover pot tightly and steep 1 hour. Whisk in vanilla and taste for sweetness, adding more sugar if you like. Warm over low heat before straining and serving hot, with marshmallows or whipped cream if desired.

This is something I came up with one evening after see a story about a company that was doing quite well selling cocoa with chili peppers in it. This recipe does use dark cocoa powder not the regular cocoa powder.

1/4 cup dark cocoa, not the light brown baking cocoa
1/4 cup Splenda brown sugar blend
1/2 teaspoon cinnamon
1/4 teaspoon chili powder
1/2 cup water
3 1/2 cups milk
1 teaspoon vanilla
cinnamon stick (optional)
whipped cream (optional)

Steps:

  • Combine cocoa, sugar, cinnamon, chili powder and water in a saucepan. Bring to a boil over medium heat, whisking constantly.
  • Add milk, continuing to whisk constantly till heated thoroughly, But do not boil.
  • Remove from heat and stir in the vanilla; serve in mugs.
  • Can garnish with cinnamon sticks and whipped cream.

This spicy cocoa rub is excellent for chicken, steaks, thick chops, and spare ribs. You can also add it to chili and hearty, thick soups.
