1 can (16 ounces) lump crabmeat, drained
1/4 cup finely chopped sweet red pepper
1/4 cup finely chopped sweet yellow pepper
1/4 cup finely chopped green onions
1 jalapeno pepper, seeded and finely chopped
1 tablespoon minced fresh cilantro
1 tablespoon lemon juice
2 garlic cloves, minced
1 teaspoon ground mustard
1/2 cup mayonnaise
1/2 teaspoon salt
1/4 teaspoon pepper
1 package (17.3 ounces) frozen puff pastry, thawed
1 large egg
1 tablespoon water
Optional: Minced fresh parsley and seafood seasoning

Steps:

  • Preheat oven to 375°. Combine the first 12 ingredients. Refrigerate, covered, at least 1 hour., Meanwhile, on a lightly floured surface, unfold puff pastry. Roll each pastry into a 10-in. square; cut each into twenty-five 2-in. squares. Using a round 1-1/2-in. cookie cutter, cut out the centers of half the puff pastry squares. Whisk egg and water; brush over pastry. Place cutout squares on top of solid squares; transfer to parchment-lined baking sheets., Bake until golden brown, about 18 minutes. Cool to room temperature. Once cool, spoon 1 heaping tablespoon of crab salad into center of each cooked pastry. If desired, top with minced parsley and seasoning. Serve immediately.

If you choose to tie the fillets, take a piece of butchers twine and wrap it around each fillet twice to form a nice round shape. This will help the meat retain its shape while cooking. Sprinkle the beef all over with salt and pepper and sear for about 3 minutes on each side, until well browned. Shove the beef to the side and add the tomatoes to the pan; drizzle with olive oil, sprinkle with salt and pepper, and stir gently to coat. Now put the pan in the oven and roast until the beef is rare and the tomatoes burst, 7 to 8 minutes. (Add 2 more minutes for medium rare, 5 more minutes for medium.)

1/4 cup chili powder
2 tablespoons coriander seed
1 tablespoon cumin seed
1 tablespoon dried oregano
2 teaspoons sweet paprika
1/2 cinnamon stick
4 (1 1/2-inch thick) strip steaks, about 2 pounds
Kosher salt and freshly ground black pepper
1 pound lump crabmeat, picked over for shells
3/4 cup mayonnaise
2 tablespoons chopped shallots
2 tablespoons chopped fresh cilantro leaves
2 tablespoons chili sauce, such as Srirachi Hot Chili Sauce
Juice of 1/2 lime plus lime wedges for garnish
Kosher salt and freshly ground black pepper

Steps:

  • In a small dry skillet over medium heat, add the chiles, chili powder, coriander, cumin, oregano, paprika, and cinnamon stick. Heat just until the ingredients become fragrant, about 1 to 2 minutes. Put the spices into a grinder and pulse to a powder. Massage the dry chili rub into the steaks; cover and refrigerate for at least 2 hours.
  • For the crab salad: Put the crabmeat in a bowl and add the mayonnaise, shallots, cilantro, chili sauce, and lime juice. Mix gently to combine the ingredients without breaking up the large lumps of crabmeat. Taste and adjust the seasoning with salt and pepper.
  • Remove the steaks from the refrigerator about 30 minutes before you want to grill them to bring them up to room temperature. Heat the grill; brush the grate with some olive oil. Season the steaks with salt and pepper and place them on the hot grill. Cook for 6 to 7 minutes per side for medium rare. When the steaks are cooked to your liking, put them on a platter, cover them with aluminum foil, and let them rest for 5 minutes. Serve a generous scoop of crab meat on top of the steaks. Garnish with lime wedges.

1 bunch tarragon, roughly chopped, 10 leaves reserved
4 vine-ripe tomatoes, diced and blended
1 tablespoon prepared horseradish
4 ounces vodka
6 sheets gelatin, soaked
1 Granny Smith apple, peeled
1/4 cup brunoise cucumber
8 large stone crab claws, shells removed, knuckle meat reserved
1 tablespoon ver jus (sour green grape juice), may substitute white wine vinegar
1/4 cup creme fraiche
1/4 teaspoon powdered sugar
1 cup micro greens, may substitute chopped arugula
1 teaspoon extra-virgin olive oil
Sea salt, for seasoning

Steps:

  • Place the basil, chopped tarragon, tomato and horseradish in a fine strainer over a container. Place in refrigerator and allow to drip for 3 days. Discard contents of strainer. Add the vodka to the remaining liquid.
  • Blossom the gelatin sheets in cold water until soft. In a medium saucepan over medium heat, warm the herb-tomato liquid mixture to about 120 degrees fand dissolve the blossomed gelatin sheets in it. Using a small mellon-baller, cut the apple into small balls. Pour the gelatin-tomato liquid into 4 shallow 5 to 6-inch bowls. Garnish with cucumber, reserved tarragon leaves, and apples, dividing equally between bowls. Refrigerate for at least 1 hour.
  • In a small mixing bowl, place the stone crab knuckles, ver jus, creme fraiche, and powdered sugar. Mix lightly, trying not to break the crab too much. Lightly season with sea salt. Remove bowls from refrigerator; divide crab mixture evenly between the bowls. Top with micro greens that have been lightly seasoned extra-virgin olive oil and sea salt. Place crab on top and serve immediately.

2 pounds Maine crab leg meat, picked clean
2 cups, rehydrated mung bean noodles, cut into 2 to 3-inch lengths
1/2 cup sliced scallions, green part only
2 serrano chiles, de-stemmed and minced
1/4 cup chopped cilantro
2 tablespoons fish sauce (3 Crab)
2 limes, juiced
1/2 bunch picked Thai basil leaves
1 package (12-inch) ban trang, rice paper
Salt and black pepper, to taste
1 head red leaf lettuce
1/2 bunch fresh mint
1 ripe mango, peeled, roughly chopped
1 large shallot, peeled and roughly chopped
1 tablespoon rice vinegar
1 tablespoon sambal
1 orange, juiced
2 tablespoons canola oil
Salt and black pepper, to taste

Steps:

  • In a large, chilled bowl, mix together the crab, noodles, scallions, chiles, cilantro, fish sauce, lime juice and basil. Check for seasoning. At this point, you have the Crab Salad finished. You can drizzle a little of the mango sauce to complete the plating. Now to finish the cha gio. Take the same mixture and roll it in rehydrated rice paper. Let rest, seam side down for 2 minutes. Fry at 375 degrees until golden brown.
  • PLATING Slice the cha gio on the bias and plate on a very small mound of the filling. Serve the sauce in a soy sauce dish. Use the red leaf lettuce to pick up the hot cha gio with your fingers. Garnish with the fresh mint.
  • In a blender, add the mangoes, shallots, vinegar, sambal and juice. Blend at high speed and add the oil. Season and check for seasoning.

3/4 teaspoon kosher salt

1/2 medium jicama, peeled and coarsely shredded
2 medium carrots, peeled and coarsely shredded
3 tablespoons fresh lemon juice
2 tablespoons chopped fresh mint
2 tablespoons chopped fresh cilantro
2 cups stemmed watercress

Steps:

  • Put the crab meat in a mixing bowl, add the chilies, 1/2 teaspoon salt, pepper and lime juice and toss gently, being careful to break up the crab meat as little as possible.
  • In another bowl, toss together the jicama, carrots and lemon juice. (The salad can be prepared to this point up to an hour ahead.) Add the remaining 1/4 teaspoon salt, the mint and the cilantro and toss to combine.

1/4 cup onion, your preference, chopped
1/4 cup cucumber, chopped
1/4 cup canned green pepper, very well drained
8 -10 grape tomatoes, cut in halves
1/2 cup fat-free cottage cheese
1/2 cup fat free sour cream, use more to taste if desired
1/8 teaspoon hot sauce
1 garlic clove, pressed

This salad is something I came up with after canning cole slaw & mustard over the summer. I wanted to use the ingredients along with a package of immitation crab that needed to be used up. 3 c pasta, cooked (elbow, bow tie or other salad pasta)
1/2 c canned coleslaw *spicy*
1 c mayonnaise, light
1 Tbsp yellow mustard
2 Tbsp spicy sweet mustard or course ground mustard
1/4 c creamy salad dressing *italian/ranch*
3 Tbsp dill pickle relish or diced dill pickles
2 clove garlic, minced
1 Tbsp sugar
2 Tbsp white vinegar
1 Tbsp mrs. dash herb garlic blend
1 Tbsp black pepper
12oz pkg immitation crab, diced
1 c block cheese, diced (cheddar, colby, jack)

Steps:

  • 1. Bring 4 qts water to a boil and add pasta. Cook according to package directions until pasta is al dente approximately 9-11 minutes, drain and rinse with cold water.
  • 2. Add spicy canned coleslaw (optional) to pasta and chill for 30 minutes to an hour. *See Evelyn Horsley's Canned Cole Slaw Recipe on JAP - to make it spicy I simply followed the recipe and added 2 finely sliced or chopped jalepenos and 2 finely diced serrano peppers to the batch before canning into jars.
  • 3. For the sauce: In a mixing bowl combine all remaining ingredients except crab & cheese. Refrigerate covered until you are ready to put the salad together. *Spicy Sweet Mustard - There are lots of mustards on the market so either purchase one or I made my own version taking a little of JAP'ers Evelyn Horsley's & Dana Ramsey's spicy pepper mustard recipes adding honey or sugar and making some adjustments to my taste.
  • 4. After all has been chilled add 3/4 of the sauce to the pasta and mix well. Add 2-3 Tablespoons of milk or water to the remaining sauce and mix well then pour into pasta and stir. This just makes it so the sauce isn't so thick.
  • 5. Add cubed cheeses of your choice and finely chopped immitation crab and combine well. Garnish with green onion if you like
  • 6. You may serve this immediatly but I really prefer to chill this salad for at least another hour to let the flavors marry. **Not a spicy person just use regular course ground mustard in the sauce and don't put the spicy in your canned coleslaw.

Extra-virgin olive oil
Salt and freshly ground black pepper
1 pint yellow cherry or grape tomatoes
1 bunch arugula, trimmed
1 recipe Spicy Crab Salad, recipe follows
1 pint lump crabmeat, picked through
1/4 cup mayonnaise
1 tablespoon chili paste (such as sambal)
2 tablespoons chopped fresh cilantro leaves
1/2 lime, juiced
Salt and freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F.
  • Tie the tenderloin with kitchen twine in 3 or 4 places around the circumference to help it hold its shape. Put a medium cast iron or ovenproof skillet over medium-high heat and get it hot. Drizzle in a 2-count of oil. Sprinkle the tenderloin all over with salt and pepper and sear it in the hot pan, turning, until well browned. Then put the pan in the oven and roast until the internal temperature of the beef reaches 125 degrees F on an instant-read thermometer, about 20 minutes. Remove the beef to a platter and let it rest 10 minutes.
  • Turn the oven to broil. Toss the tomatoes on a sheet pan with salt, pepper, and a drizzle of oil. Put the pan under the broiler and broil until the tomatoes burst, about 5 minutes. Dump them into a bowl and season them again with a drizzle of oil, salt, and pepper. Add the arugula and toss.
  • To serve, remove the strings from the tenderloin and cut it into slices. Arrange the slices on a serving plate, shingling them. Spoon the crab salad over the meat and scatter the tomatoes and arugula over the top. Serve hot.
  • Stir the crabmeat with the mayonnaise, chili paste, cilantro, and lime juice in a bowl, and season with salt and pepper.
  • Yield: 4 servings

1/2 cinnamon stick
4 strip steaks, 1 1/2" thk - (abt 2 lbs)
Kosher salt to taste
Freshly-ground black pepper to taste
CRAB SALAD:
1 pound lump crabmeat picked over for shells
3/4 cup mayonnaise
2 tablespoons chopped shallots
2 tablespoons chopped fresh cilantro leaves
2 tablespoons chili sauce (such as Srirachi Hot Chili Sauce)
Juice of 1/2 lime plus
Lime wedges for garnish
Kosher salt to taste
Freshly-ground black pepper to taste

Steps:

  • In a small dry skillet over medium heat, add the chiles, chili powder, coriander, cumin, oregano, paprika, and cinnamon stick. Heat just until the ingredients become fragrant, about 1 to 2 minutes. Put the spices into a grinder and pulse to a powder. Massage the dry chili rub into the steaks; cover and refrigerate for at least 2 hours. For the Crab Salad: Put the crabmeat in a bowl and add the mayonnaise, shallots, cilantro, chili sauce, and lime juice. Mix gently to combine the ingredients without breaking up the large lumps of crabmeat. Taste and adjust the seasoning with salt and pepper. Remove the steaks from the refrigerator about 30 minutes before you want to grill them to bring them up to room temperature. Heat the grill; brush the grate with some olive oil. Season the steaks with salt and pepper and place them on the hot grill. Cook for 6 to 7 minutes per side for medium-rare. When the steaks are cooked to your liking, put them on a platter, cover them with aluminum foil, and let them rest for 5 minutes. Serve a generous scoop of crab meat on top of the steaks. Garnish with lime wedges. This recipe yields 4 servings.

Low Carb Spicy Sriracha Crab and Cucumber Salad image

I originally came across this recipe on Pinterest, and it was posted from a wonderful blog called peasandcrayons.com. This is a great quick lunch to fix with easy-to-come-by ingredients (living in CO, I use imitation crab more often than not), and can be a low carb and quick fix to a sushi craving. It is awesome!

1 large cucumber
rice vinegar, to taste (optional)
4 ounces jumbo lump crab meat, cooked or 4 ounces imitation crabmeat
1 tablespoon mayonnaise
2 teaspoons sriracha sauce, to taste
1/2 avocado, diced
1 tablespoon panko breadcrumbs

Steps:

  • First peel the skin from your cucumber.
  • Next, use a spiralizer to turn your cucumber into even more refreshing noodles (or you can just chop it, like I do).
  • Drizzle the noodles very lightly with optional rice vinegar.
  • In a small bowl, combine the mayo and Sriracha to make "spicy mayo".
  • Shred the crab, or chop it up with a knife.
  • Combine the crab with the spicy mayo and put on top of the cucumber.
  • Top with avocado.
  • Garnish with panko breadcrumbs and dig in!

vegetable oil for frying
1/2 cup Chipotle Mayonnaise or Crema or sour cream
4 (6- to 7-inch) corn tortillas
2 medium tomatoes, finely chopped
1 ripe avocado (Hass variety preferred), peeled and cut into 1/2-inch cubes
1/4 white onion, finely chopped
1 , serrano chile kimmy, , finely chopped with seeds
2 tablespoons chopped cilantro
1/4 cup fresh lime juice
2 cups , cooked fresh crab meat, , coarsely shredded
1/2 teaspoon salt, or to taste
1 cup finely shredded Romaine lettuce

Steps:

  • 1. Prepare mayonnaise, if using. Then, in a medium skillet, heat vegetable oil to a depth of about 1/2 inch. Fry the tortillas, 1 at a time, turning, until crisp and golden brown on both sides. Drain on paper towels. (This can be done ahead.) 2. In a large bowl, stir together the tomato, avocado, onion, serrano chile, cilantro, and lime juice. Add the crabmeat and salt. Toss gently to combine. To assemble, put 1 crisp tostada on each of 4 plates, and divide the lettuce equally among the tostadas. Spoon the crab mixture equally on top.
