2 tablespoons butter
1 shallot, chopped fine
1 clove garlic, minced
1/4 cup finely chopped red pepper
Kosher salt and freshly ground black pepper
1/2 cup mayonnaise
1/2 cup Dijon mustard
1/2 teaspoon lemon zest
1 teaspoon crab boil seasoning
1 tablespoon chopped fresh parsley leaves
1 cup plain panko bread crumbs
1 large egg
Hot sauce, to taste
1 pound lump crabmeat, picked over to remove cartilage and shell fragments
1/2 cup peanut oil
Lemon Aioli, recipe follows
1/2 cup mayonnaise
1 clove garlic, minced
1 tablespoon chopped chives
3 tablespoons lemon juice
1/2 teaspoon lemon zest
Kosher salt and freshly ground black pepper

Steps:

  • Heat a medium size pan over medium heat. Add the butter. Once melted add the shallot, 1 clove of garlic and red pepper. Lightly saute until tender, about 3 minutes. Season with salt and pepper. Remove from heat and allow to cool.
  • In a medium bowl, mix together mayonnaise, Dijon mustard, lemon zest, crab boil seasoning, fresh parsley, 1/2 cup of the panko and egg. Mix in cooked vegetables, hot sauce, and salt and pepper, to taste. Add crabmeat and stir well.
  • Form crab cakes using about 2 tablespoons of crab mixture for each cake.. Flatten until they're about 3/4 inches high. Dip the cakes into the remaining panko.
  • Add oil to a large skillet over high heat. Add crab cakes and saute, flipping once, until golden brown and crisp, about 5 to 6 minutes per side. Serve with Lemon Aioli.
  • In a medium bowl, mix all the ingredients together.

1/2 ripe medium California avocado, pitted and peeled
1 tablespoon low-fat mayonnaise
1 tablespoon fresh lime juice
1/4 teaspoon salt
1/4 teaspoon sugar
1 fresh jalapeño or serrano chile (including seeds), stemmed and quartered lengthwise
1/4 cup fat-free (skim) milk
For crab cakes
1 pound jumbo lump crabmeat, picked over and coarsely shredded
3 tablespoons low-fat mayonnaise
1/4 cup minced fresh chives
1 tablespoon fresh lemon juice
1 teaspoon Dijon mustard
1/4 teaspoon black pepper
1/2 cup panko (Japanese bread crumbs)
1 tablespoon unsalted butter
2 garlic cloves, smashed
1/2 teaspoon herbes de Provence or 1/4 teaspoon dried thyme
1/4 teaspoon salt

Steps:

  • Put oven rack in middle position and preheat oven to 400°F. Line a baking sheet with foil.
  • Make sauce:
  • Pulse avocado with mayonnaise, lime juice, salt, sugar, and one fourth of chile in a food processor until chile is finely chopped. Add milk and purée until smooth. Add more chile if desired, processing until smooth. Transfer sauce to a bowl and chill, covered.
  • Make crab cakes:
  • Stir together crabmeat, mayonnaise, chives, lemon juice, mustard, pepper, and 1 tablespoon panko in a large bowl until blended well, then chill, covered.
  • Melt butter in a medium nonstick skillet over moderate heat, then cook garlic, stirring, until golden and fragrant, about 2 minutes. Add herbes de Provence, salt, and remaining 7 tablespoons panko and cook, stirring, until golden brown, about 6 minutes. Transfer crumbs to a plate to cool. Discard garlic.
  • Divide crabmeat mixture into 4 mounds on a sheet of wax paper. Form 1 mound into a patty, then carefully turn patty in crumb mixture to coat top and bottom. Transfer to a baking sheet and repeat with remaining 3 mounds, then sprinkle remaining crumbs on top of crab cakes. Bake until heated through, about 15 minutes. Serve crab cakes with sauce.

2 tablespoons unsalted butter
1 cup finely chopped yellow onions
1/4 cup vegetable oil
1/2 cup finely chopped celery
Garnish: Green onions
1/4 cup seeded and finely chopped red bell pepper
1/4 cup seeded and finely chopped yellow bell pepper
Salt
Cayenne
1 tablespoon chopped garlic
1 pound lump crabmeat, picked over to remove shells and cartilage
1/4 cup chopped green onions, green parts only, plus extra for garnish
1/4 cup grated Parmesan cheese
2 tablespoons finely chopped fresh parsley leaves
3 tablespoons Creole mustard
Juice of one fresh lemon (or 3 tablespoons)
1/2 cup mayonnaise
Worcestershire sauce
Hot pepper sauce
1 1/2 cups dried fine bread crumbs
1/4 cup all-purpose flour
Essence, recipe follows
2 eggs (for egg wash)
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried leaf oregano
1 tablespoon dried thyme

Steps:

  • Melt butter in a small saute pan over medium heat. Add onions, celery and bell peppers. Season with salt and cayenne. Cook, stirring, until the vegetables are soft and slightly golden, about 5 minutes. Add the garlic and cook, stirring, for 2 minutes. Cool for 5 minutes. In a large mixing bowl, combine the crabmeat, green onions, Parmesan, parsley, mustard and lemon juice. Mix the mayonnaise, Worcestershire Sauce and hot pepper sauce together. Combine vegetable mixture with crab mixture. Fold in the mayonnaise mixture and 3/4 cup of the bread crumbs. Divide combined mixture into 10 equal portions and form into 1-inch thick round patties. In a shallow bowl, combine the flour and season with Essence. In another bowl, whisk the egg with the water. In a third bowl, combine the remaining 3/4 cup bread crumbs and season with Essence. Dredge the crab cakes first in seasoned flour, tapping off excess, then in egg wash, letting excess drip off. Lastly, dredge cakes into seasoned bread crumbs, coating cakes evenly. In a large saute pan, heat oil. Gently lay the cakes, 3 to 4 at a time, and pan fry until lightly golden, about 4 minutes on each side. Drain cakes on paper towels and season with Essence while still hot.
  • To serve, place Creole Meuniere sauce in the center of each plate. Spoon the Roasted Vegetable Pecan Relish in the center of the sauce and lay a cake on top of the relish. Garnish with green onions and Essence.
  • Combine all ingredients thoroughly and store in an airtight jar or container.

1 teaspoon black sesame seeds or 1 teaspoon regular sesame seeds
1/4 cup finely grated seeded peeled cucumber

Steps:

  • For cakes: Mix first 8 ingredients in large bowl.
  • Mix in enough breadcrumbs to form stiff mixture.
  • Shape mixture into sixteen ¼-inch-thick patties.
  • (Can be prepared ahead. Cover and refrigerate.).
  • For sauce: Combine rice vinegar, sugar, lime juice, water, red pepper, garlic and sesame seeds in small bowl; stir until sugar dissolves.

1 teaspoon finely grated lemon zest

Steps:

  • Preheat the oven to 400˚. Brush a 24-cup mini-muffin pan (preferably nonstick) with olive oil.
  • Mix the crab meat, crushed crackers, mayonnaise, egg white, chives, lemon zest and 3/4 teaspoon salt in a large bowl until combined. Fill the muffin cups with the crab mixture. Refrigerate 15 minutes.

2 eggs, beaten
2 tablespoons ground walnuts

2 teaspoons Worcestershire sauce

Steps:

  • Red Pepper Sauce: Puree roasted red peppers in a blender, then add mayonnaise and spices.
  • Set aside and refrigerate.
  • Crawfish Cakes: Heat 1 teaspoons olive oil in sauté pan, sauté onion and celery until soft.
  • Place in a large mixing bowl.
  • Mix remaining ingredients except bread crumbs.
  • Place half of seafood mixture in a blender or processor and puree and return to mixing bowl and stir together.
  • Place bread crumbs evenly on a cookie sheet.

1 lb dungeness crabmeat
1 large shallot, finely chopped
1 large jalapeno pepper, finely chopped
3 tablespoons cilantro, chopped
1/2 cup mayonnaise
1 large egg, beaten
1 tablespoon Dijon mustard
1 teaspoon Old Bay Seasoning
2 -3 slices white bread, made into crumbs in the food processor

Steps:

  • Butter or canola oil for frying cakes.
  • Squeeze all excess liquid from crab.
  • Mix rest of ingredients together, up to bread crumbs.
  • Add to crab, mix gently.
  • Add bread crumbs and mix.
  • Add a bit more bread crumbs to form cakes of whatever size you like.
  • Fry small cakes for a few minutes until brown on each side.
  • Drain on paper towels.
  • If you are making entrée size crab cakes, preheat oven to 450, fry on each side and put in oven for 5 minutes.
  • Flip cakes and bake another 5 minutes until center of cakes is hot.
  • Crab cakes can be held in a warm oven for about an hour if needed.

3 tablespoons all-purpose flour

2 teaspoons sriracha sauce
salt and pepper
4 tablespoons unsalted butter
1/4 cup olive oil
1 cup mayonnaise

2 tablespoons Dijon mustard
2 tablespoons key lime juice
3 dashes Tabasco sauce

Steps:

  • Pick over the crabmeat to remove any shell or cartilage, trying not to break up the chunks too much.
  • In a large bowl, combine all of the ingredients except for the butter and olive oil. Moisten hands with a little water and shape the mixture into eight fat ball-like cakes. (They will flatten slightly during cooking.) Place them on a baking sheet lined with wax paper. Cover with plastic wrap and refrigerate for at least 1 hour.
  • While crab cakes are in the fridge, prepare sauce. Combine all ingredients, mix well and chill.
  • In a large skillet, heat the butter and oil over medium-high heat. Carefully lay the crab cakes into the butter and oil and fry until crusty and browned, about 3 to 4 minutes on each side.

Steps:

Canola oil cooking spray
2 teaspoons canola oil
2 scallions, thinly sliced, green and white parts
1 medium green bell pepper, finely diced
1 jalapeno pepper, finely diced
1 tablespoon finely grated fresh ginger root
2 cloves of garlic
1 pound of crab claw meat, picked over
1 teaspoon finely grated lime zest
2 tablespoons fresh lime juice
1/4 cup finely chopped fresh cilantro leaves, plus 18 whole cilantro leaves
1 large egg, beaten to mix
1 cup of Panko breadcrumbs, or regular unseasoned breadcrumbs
3 tablespoons canola mayonnaise
1/2 teaspoon salt
1/3 cup nonfat, plain Greek-style thickened yogurt
1 teaspoon hot chili-garlic sauce, such as Sriracha, plus more to taste

Steps:

  • Preheat the oven to 425 degrees. Spray a baking sheet with canola oil cooking spray.
  • Heat the oil in a nonstick skillet over a medium-high heat. Add the scallion, green pepper, and jalapeno and cook until the peppers soften slightly, about 3 minutes. Add the ginger and garlic and cook for one minute more. Set aside to cool slightly.
  • In a large mixing bowl combine the pepper-scallion mixture with the crab, lime zest, lime juice, cilantro, egg, 1/2 cup of the Panko, 1 tablespoon of the mayonnaise, and the salt.
  • Put the remaining 1/2 cup Panko on a plate. Form the crab mixture into 8 crab cakes and gently roll each in the Panko and place on the prepared baking sheet. Spray the tops of the crab cakes with the canola oil cooking spray to coat lightly.
  • Bake the crab cakes until they are golden brown on the bottom, about 10 minutes. Gently turn them over and cook for 10 minutes on the other side. In the meantime, in a small bowl stir together the yogurt with the remaining 2 tablespoons mayonnaise and the chili-garlic sauce.
  • To serve, top each crab cake with about 1/2 teaspoon of the spicy cream and one cilantro leaf.

This recipe came to us by way of Garrett Oliver, the brewmaster of Brooklyn Brewery. He believes beer and wine should always be served with food. And beer, he contends, is often the better choice. With these crab cakes, Mr. Oliver, an excellent cook who is widely-known for his successful beer-and-wine pairings, recommends an India pale ale. The bitterness of the hops plays nicely with the spiciness of the dish.

3 tablespoons vegetable or olive oil, or as needed

Steps:

  • Mince together the onion, cilantro, jalapeño and bell pepper. (If using a food processor, take care not to purée mixture.)
  • In a bowl, combine mixture with crab meat, egg, mayonnaise, ginger, curry powder, cumin and salt. Add lemon juice and mix until evenly blended. Add one cup of the bread crumbs, and mix again until well blended.
  • Form mixture into two evenly sized balls, squeezing firmly, then press into burger shapes; if any bits come off, mold them back on. Rub cakes on both sides with remaining bread crumbs.
  • Cover surface of a 10-inch skillet with oil; turn heat to medium-high and, a minute later, gently slide crab cakes into pan. Lower heat to medium, and cook until golden brown. Carefully flip them over and brown the other side; total cooking time will be about 10 minutes. Serve with an India pale ale.

1 shallot, coarsely chopped
1 tablespoon capers
1 cup mayonnaise
1 tablespoon chopped fresh chives
1 tablespoon spicy brown mustard
1 teaspoon smoked paprika
1 teaspoon kosher salt
1/2 teaspoon black pepper
6 tablespoons unsalted butter
1 medium yellow onion, finely chopped
1 red bell pepper, finely chopped
3 cloves garlic, minced
2 eggs
1 serrano chile, seeded and finely chopped
1 pound lump crabmeat, shredded
2 cups panko breadcrumbs
1 cup mayonnaise
1/4 cup finely chopped fresh chives
1/4 cup finely chopped fresh parsley
2 teaspoons kosher salt
1/2 teaspoon black pepper
4 tablespoons olive oil

Steps:

  • For the remoulade: Pulse the shallots and capers in a food processor until finely chopped. Add the mayonnaise, chives, mustard, smoked paprika, salt and pepper; pulse until well combined. Taste for salt and pepper and adjust. (The remoulade will keep, refrigerated, for 4 days. It is best made a day ahead.)
  • For the crab cakes: Melt 2 tablespoons of the butter in a saute pan over medium heat. Add the onions and peppers and saute until soft, 7 to 8 minutes. Add the garlic and cook until fragrant, 30 seconds. Let cool to room temperature.
  • Preheat the oven to 425 degrees F.
  • In a large mixing bowl, combine the eggs, chiles, crabmeat, 1 cup of the panko, mayonnaise, chives, parsley, salt, pepper and the cooled vegetables. Gently mix until well blended. Pack the crab mixture into a 1/4 cup measuring cup, then gently tap out into your hand and form into a patty. Place the patty on a baking sheet and repeat with the rest of the crab mixture. Spread the remaining 1 cup panko on a large plate. Dredge the crab cakes in panko on all sides.
  • Melt another 2 tablespoons of the butter in a large nonstick saute pan over medium-high heat. Add 2 tablespoons of the olive oil. When hot, add the crab cakes in batches, flattening them a bit with the back of a spatula. Cook until golden brown, 1 to 2 minutes per side. Between batches, add another tablespoon of butter and olive oil to the pan.
  • Place the browned crab cakes on a baking sheet and transfer to the oven for 8 to 10 minutes, until sizzling and heated through.
  • Serve the crab cakes with remoulade sauce on the side.

1 cup finely chopped yellow onions
1/2 cup finely chopped celery
1/2 cup finely chopped red bell peppers
1/2 cup finely chopped yellow bell peppers

1 pound lump crab meat, drained
1/4 cup chopped green onions, green parts only, plus extra for garnish
1/4 cup grated Parmesan cheese
2 tablespoons finely chopped fresh parsley leaves
3 tablespoons Creole mustard
3 tablesopons fresh lemon juice
1/2 cup mayonnaise
worcestershire sauce
hot pepper sauce
3/4 cup dried breadcrumbs/crackers/panko and 3/4 cups bread crumbs set aside
1/4 cup all purpose flour
essence
2 eggs for egg wash
1 tablespoon water
1/4 cup vegetable oil.
Essence:
2 1/2 Tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon caynenne pepper
1 tabblespoon dried leaf oregano
1 tablespoon dried thyme

Steps:

  • Melt butter in a small skillet over medium heat. Add the onions, celery and bell peppers. Season with salt and cayenne. Cook, stirring until the vebetables are soft and slightly golden, about 5 minutes. Add the garlic and cook, stirring, for 2 minutes. Remove from the heat and cool for 5 minutes. In a large mixing bowl, combine the crabmenat, green onions, Parmesan, parsley, mustard and lemon juice. Mix the mayonnaise , Worcestershire Sauce and hot pepper sauce together in a separate bowl. Combine the vegetable mixture with the crab mixture. Fold in the mayonnaise mixture and 3/4 cup of the bread crumbs. Divide the mixture into 10 equal portions and form into 1 inch thick round patties. In a shallow bowl, combine the flour and season with Essence. In another bowl, whisk the egg with the water. In a third bowl, combine the remaining 3/4 cup bread crumbs and season with Essence. Dredge the crab cakes first in the seasoned flour, tapping off excess. THEN dip them in the egg wash, letting excess drip off. Lastly, dredge cakes into seasoned breadcrumbs, coating the cakes evenly. In a large skillet, heat the oil. Gently lay the cakes 3 to 4 at a time and pan-fry until lightly golden. about 4 minutes on each side. Drain cakes on paper towels and season with Essence while still hot.

These luscious cakes boast a combination of ricotta and jalepeno jack cheese, along with the bite of chive. Although it contains bold flavors, you can still taste the flavor of the crab. I have been making these in my family for years, serving them as appetizers at New Year's Eve parties, get togethers, or just for dinner as an entree with rice; they are often requested. I know this originally came from a magazine, I believe Midwest Living, but it's been copied so many times that I'm not sure exactly. I combed the crab cake recipes on this site but couldn't seem to find this one; hopefully this isn't a duplicate. Either canned or fresh crabmeat work well in these, and they are great with or without the sauce. The original recipe has you keeping them in the oven while you fry the rest of the crab cakes; I would not recommend this as it detracts from the flavor and texture of the freshly fried cake.

2 large eggs
1 cup ricotta cheese
3 tablespoons chives, snipped
3/4 cup fine seasoned dry bread crumb
1/4 cup vegetable oil, for frying
1/2 lb fresh crabmeat or 8 ounces canned crabmeat
1 cup monterey jack pepper cheese, shredded
7 ounces roasted red peppers
1/3 cup mayonnaise

Steps:

  • If using, prepare the sauce by blending the mayo and roasted peppers in a food processor until smooth. Set aside.
  • Whisk eggs in a medium bowl. Stir in crab, both cheeses, chives, and a quarter cup of the breadcrumbs.
  • Pour the remaining half a cup of breadcrumbs into a shallow dish.
  • Line a large plate or baking sheet with waxed paper. Line a second large plate or baking sheet with paper towels (the latter for draining the finished crab cakes).
  • Form heaping tablespoons of the crab mixture into cakes of a quarter-inch thickness, coat each with the crumbs, and place on the waxed paper-lined plate or baking sheet.
  • In a large skillet over medium high heat, heat the vegetable oil until a droplet of water thrown in starts to sizzle or until bubbles start to gather around the tip of a wooden spoon placed in the oil, whatever method you choose.
  • Fry cakes, a few at a time, until golden on both sides, approximately three minutes total for each batch.
  • As cakes cook, remove them to the paper-towel lined baking sheet.
  • When all cakes are cooked, move to serving platter, arranging around a bowl of the sauce, if you like.
  • These are also really good served with a squirt of Kewpie mayonnaise (Japanese mayo; it's sweeter) mixed with a few drops of hot sauce; I like to use Tapatio.

1 stalk celery, finely diced
1/4 cup red onion, finely diced
1/4 red pepper, finely diced
1 teaspoon fresh parsley, chopped
1/4 cup fresh horseradish
1/4 cup Dijon mustard
1 1/2 cups mayonnaise
1 fresh lime juice
1 teaspoon cayenne pepper
1 1/2 cups breadcrumbs
4 eggs, lightly beaten
1 teaspoon salt
1 lb cleaned shelled shrimp, chopped
3 lbs lump crabmeat
vegetable oil, to cover bottom of pan

Steps:

  • Mix all but crabmeat and oil together till combined.
  • Gentle toss in crabmeat.
  • Don`t overmix.
  • Make 40 patties.
  • Heat pan with oil and fry turning to golden brown on both sides.
  • Brown in batches adding oil as needed.
  • Serve with a Horseradish Mayo or tartar sauce.
  • Just a tip so they stay togerther while frying- You make the patties then refrigerate them for an hour before frying. You can also roll them in Panko flakes or bread crumbs before frying.

1/2 lb jumbo lump crab meat, pick it over but leave it in large chunks
3 tbs finely chopped red pepper
2 tbl finely chopped shallots
2 tbl finely chopped flat leaf parsley
1/4 mayonnaise
1 egg
1/4 tsp cayenne
Tabasco, several dashs (to taste)
2 - 4 tbls bread crumbs (to bind the cakes)
Panko for coating the crab cakes
Canola oil for sauteing
Remoulade Sauce:
1.5 c. mayonnaise
3 tbls capers, drained & chopped
3 tbls chopped cornichons
1 tbl chopped chived
1 tbl chopped chervil (can substitute flat leaf parsley if not available)
1 tbl chopped tarragon
1 tbl Dijon Mustard
Salt & Pepper to taste
1 tsp Worcehtershire sauce
3 - 4 dashes Tabasco sauce

Steps:

  • 1) Combine red pepper, shallots & parsley in a bowl, season with salt & pepper & then add the crab being careful not to break up the large pieces 2) In a small bowl, combine the mayonnaise & egg, season with cayenne & Tabasco, Gently stir into crab & mix just to blend. 3) Stir in 2 tbls of bread crumbs & see if the cakes hold together (you just want the cakes to barely hold together). If necessary add additional bread crumbs. Form 4 cakes & coat with panko. Refrigerate until ready to fry. 4) Preheat oven to 350 F 5) Heat a large saute pan and add about 1/4" of oil. Add in crab cakes & cook over medium high heat until the cake are lightly golden, about 2 minutes. Turn the cakes over & cooks the other side. 6) Transfer to parchment lined baking sheet & bake for 10 minutes, until cooked through. Remoulade sauce Combine all the ingredients, season to taste with salt & pepper. Refrigerate until ready to use, will keep in refrigerator for up to 3 days.

2 cups+1/2 cup panko bread crombs,or regular bread crumbs

  • Warm the oil in large skillet over medium heat.Add the shallot,pepper,hot pepper,red onion,and ginger.Sweat for 5 min.Add the garlic and cook for 2 more min.Remove to a large bowl and allow to cool for 10 min. Add the remaining ingredients to the bowl,reserving the 1/2 cup of bread crumbs.Fold the crab cake mixture gently,trying not to break up the lumps of crab meat too much.After the mixture is thoroughly combined,refrigerate for one hour. 2 cups cooked Basmati rice, cold
2 jalapenos, seeded and minced
1 tablespoon grated lemon zest
1/4 cup chopped fresh basil
3 tablespoons chopped fresh mint
2 teaspoons kosher salt
Freshly ground pepper to taste
2 eggs, beaten
1/4 cup dry bread crumbs
About 2 tablespoons olive oil

Steps:

  • In a large bowl, gently combine the crab meat, rice, jalapenos, lemon zest, basil and mint. Carefully stir in the salt, pepper, eggs and bread crumbs, breaking up the crab meat as little as possible. Using 1 tablespoon of the mixture at a time, press into cakes that are a scant 2 inches in diameter.
  • Heat 1 tablespoon of oil in a large nonstick skillet over medium heat. Working in batches, cook the crab cakes until nicely browned and firm, about 1 1/2 minutes per side. Add more oil to the skillet as needed between batches. Serve hot.
