This bread is great fresh out of the oven, or toasted. I love it with stew also. It is so hearty and flavorful. I sometimes make a time and a half of the recipe so I can use the entire can of beer. I make this is the oven but I let the bread maker do the work for me. You could certainly do it by hand though. I have never cooked it in the bread maker but I imagine there would not be any problem with doing that. Experiment with different bread shapes, rolls, etc. Prep time reflects time for bread to rise, this will vary on your bread maker, and temperature.

3/4 cup beer
1 beef bouillon cube
2 tablespoons water
1/4 teaspoon cayenne
1/4 teaspoon hot pepper oil
1 tablespoon olive oil
2 1/4 cups flour
1/8 teaspoon cumin
1/3 cup diced onion
1 teaspoon chili powder
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon garlic
1/2 teaspoon salt
2 teaspoons yeast

Steps:

  • Place ingredients into bread maker according to manufacturers directions.
  • Select dough setting.
  • Take the dough out and shape it into a ball shape, stretch the sides under until the top is taut and it is in the desired shape.
  • Slash the top and cover with an oiled plastic wrap or a damp kitchen towel Let rise until doubled in size.
  • Bake in a oven preheated to 355 for 30 minutes.

2 1/2 cups flour
1/4 cup sugar
1/2 teaspoon baking powder
1 pinch salt
1 (9 ounce) bottle pale ale
1/2 cup shredded cheddar cheese
2 scallions, thinly sliced including green part
10 ounces jalapenos, finely chopped
1 tablespoon melted butter

Steps:

  • Sift teh flour, baking powder and salt into a mixing bowl.
  • Add the beer and mix well.
  • Add the cheese, scallions, and jalapenos and mix well.
  • The batter will be stiff.
  • Spoon evenly into a greased 9x5 loaf pan and brush the top with the melted butter.
  • Bake at 300º for 45 minutes or until browned.
  • Remove from oven to cool and cut into 1/4 inch slices when ready to serve.
  • To serve, arrange the slices on a baking sheet and broil for 1 minute or until brown.

Spicy beef, onion, and beer chili recipe I picked up while in Alabama. Many people have asked me for the recipe so I'm posting it here. Enjoy! Adjust the amount of jalapenos and other spicy things to suit your taste.

2 pounds ground beef chuck
2 large white onions, chopped
2 (14.5 ounce) cans diced tomatoes with juice
2 (15 ounce) cans tomato sauce
1 (12 fluid ounce) can beer
2 (15 ounce) cans spicy chili beans
¼ cup Worcestershire sauce
3 tablespoons hot pepper sauce (e.g. Tabasco™), or to taste
⅓ cup chili powder
4 fresh jalapeno peppers, seeded and chopped
3 tablespoons red pepper flakes, or to taste

Steps:

  • Crumble the ground chuck into a skillet over medium heat. Cook, stirring occasionally until evenly browned. Drain grease. Transfer the beef to a large soup pot. Add onions, diced tomatoes, tomato sauce, beer and chili beans. Season with Worcestershire sauce, hot pepper sauce, chili powder, jalapenos, and red pepper flakes, if using.
  • Cover the pot, and simmer over low heat for 2 hours. Turn off heat, and let cool, then refrigerate for two days. It gets much better with time. Heat and serve.
