¾ cup pizza sauce
1 ½ tablespoons Frank's Red Hot Original, plus more for drizzling
1 tablespoon olive oil
1 ½ teaspoons cornmeal
1 lb pizza dough
1 ½ cups shredded mozzarella cheese
1 ½ cups shredded chicken
3 pieces bacon, torn into ½-inch (1 1/4 cm) pieces
1 small handful fresh baby spinach
¾ cup cherry tomato, halved
2 tablespoons red onion, minced
ranch dressing, for drizzling

Steps:

  • Preheat oven to 450ºF (230ºC).
  • In a small bowl, whisk together pizza sauce with Frank's Red Hot Original. Set aside.
  • Drizzle a 12-inch (30 ½ cm) cast iron skillet with olive oil. Use your hand or a paper towel to evenly coat the pan with oil. Sprinkle pan with cornmeal.
  • Press pizza dough into the pan so that it covers the whole surface evenly.
  • Spread spicy pizza sauce on the dough. Top with mozzarella, chicken, and bacon. Scatter spinach, cherry tomatoes, and red onion on top.
  • Bake pizza for 14-16 minutes until edges are browned and crisp.
  • Remove from oven and let cool for 5 minutes, then drizzle with Frank's Red Hot Original and ranch dressing. Slice and serve.

1 thin pizza crust (Boboli or other pre-baked crust)
2 garlic cloves, minced
1 teaspoon gingerroot, minced
5 tablespoons peanut butter
2 tablespoons honey
2 tablespoons rice wine vinegar or 2 tablespoons apple cider vinegar
1 tablespoon soy sauce
1 teaspoon red pepper flakes
1 cup mozzarella cheese, shredded
1/2 orange bell peppers or 1/2 red bell pepper, sliced
1 cup pre cooked chicken breast, chopped
2 green onions, chopped
1/2 carrot, finely chopped
1 cup bean sprouts, roughly chopped
1/4 cup peanuts, chopped
1/2 cup cilantro, chopped

Steps:

  • Preheat oven to 425°F; do not bake the Boboli yet.
  • In a microwave safe bowl, add garlic, gingerroot, peanut butter, honey, vinegar, soy sauce and pepper flakes. Microwave until peanut butter is melted (about 1 minute). Mix well with a whisk.
  • Take pre-baked pizza crust out of the package and top with peanut sauce, cheese, bell pepper and cooked chicken. Bake for 5 minutes or until cheese is melted.
  • Meanwhile, prepare other vegetables.
  • Remove crust from oven and top with remaining vegetables, peanuts and cilantro.

1 teaspoon instant or active dry yeast
4 cups all-purpose flour
1 teaspoon kosher salt
1/3 cup olive oil
1 clove garlic, pressed
2 tablespoons olive oil
4 bone-in, skin-on chicken thighs
Kosher salt and freshly ground black pepper
2 red onions, sliced
4 cloves garlic, minced
One 18-ounce bottle barbecue sauce
1/4 head green cabbage, thinly sliced
1/4 head purple cabbage, thinly sliced
1 jalapeno, thinly sliced
1/4 cup whole milk
1/4 cup mayonnaise
2 teaspoons sugar
1/2 teaspoon white vinegar
1/4 teaspoon cayenne pepper
1/4 teaspoon kosher salt
1/2 bunch fresh cilantro, roughly chopped
Olive oil, for oiling the pan and drizzling
Kosher salt, for sprinkling
Two 8-ounce balls mozzarella, sliced

Steps:

  • For the dough: Sprinkle the yeast over 1 1/2 cups warm (not lukewarm) water in a bowl. Let stand for a few minutes.
  • In a mixer with a paddle attachment, combine the flour and salt. With the mixer running on low speed, drizzle in the olive oil and mix until combined. Next, pour in the yeast/water mixture, add the pressed garlic and mix until just combined and the dough comes together in a sticky mass. Divide the dough into 2 balls and put each one in a separate ziptop bag. Set the dough aside for 1 to 2 hours, or store in the fridge until you need it.
  • For the chicken: Heat the olive oil in a heavy pot over medium-high heat. Season the chicken with salt and pepper and sear it on both sides until the skin is golden brown. Remove the chicken from the pot and pour off all but 1 tablespoon of the grease.
  • Add the onions and cook until softened, 2 to 3 minutes. Add the garlic and cook for another minute. Pour in the barbecue sauce and return the chicken to the pot. Cover and cook over medium-low heat until the chicken is falling off the bone, 45 to 50 minutes. Remove the chicken from the pot and set aside until cool enough to handle.
  • When cool, use 2 forks to shred the meat from the bones, discarding the skin and bones. Skim off the excess fat from the top of the sauce and reserve.
  • For the slaw: While the chicken is cooking, combine the shredded cabbage and sliced jalapeno in a bowl. In a separate bowl, mix the milk, mayonnaise, sugar, vinegar, cayenne and salt. Pour the dressing over the cabbage mixture and toss to combine. Cover and refrigerate.
  • For the pizza: When you are ready to make the pizza, preheat the oven to 475 degrees F. Oil a baking sheet or pizza pan with olive oil.
  • Grab one of the balls of pizza dough (the recipe makes 2 crusts, so you can refrigerate or freeze the other ball of dough for another recipe) and squeeze the dough toward the bottom to form a nice, tight, pulled ball. You can roll out the pizza with a rolling pin if you'd like, but sometimes it's just as easy to throw it around and pull and stretch until it feels right.
  • When the crust is nice and thin, lay it on the oiled baking sheet. Drizzle a little olive oil on the dough and spread it with your fingers. Very lightly sprinkle some salt on top. Spread the reserved barbecue sauce and onion mixture over the crust, then cover with the mozzarella slices followed by the shredded chicken. Bake on the bottom rack until the crust is golden brown and the toppings are bubbly, 12 to 15 minutes.
  • Stir the cilantro into the slaw. Top the pizza with the slaw, cut into pieces and serve.

Sadly, I cannot take credit for this pizza. It's from Sam the Cooking Guy. The spicy chili sauce really makes this pizza pop. You can omit the chili sauce if you don't care for spicy food, but I really suggest trying it. I also drizzled a little more plain bbq sauce to the pizza before topping with mozzarella to make it even more saucy. We made this last night and absolutely loved it.

3 cups (about 1 pound) skinned, boned and cubed chicken
1/2 cup plus 1 tablespoon peanut oil
3 1/2 tablespoons lime juice
2 teaspoons chopped jalapeno pepper
Pinch chopped cilantro
Salt
Pizza dough, recipe follows
3 cups grated mozzarella
2 cups grated fontina
1 pound (about 6) plum tomatoes, ends removed and cut into thin slices
1/2 cup eggplant, cubed and sauteed or grilled
1/2 cup onion, sliced, grilled and chopped
Chopped chives, for garnish
4 teaspoons Parmesan, grated
1 package active dry or fresh yeast
1 teaspoon honey
1 cup warm water (105 to 115 degrees)
3 cups all-purpose flour
1 teaspoon kosher salt
1 tablespoons extra virgin olive oil, plus additional, for brushing

Steps:

  • Arrange the cubed chicken in a medium bowl and toss with 1/2 cup olive oil, lime juice, jalapeno and cilantro. Season lightly with salt. Let marinate for about 1 hour, refrigerated.
  • In a skillet large enough to hold all of the chicken in 1 layer, heat the remaining 1 tablespoon oil. Saute the chicken just to brown on all sides.
  • Preheat the oven to 525 degrees F. Brush the rolled out pizza dough lightly with oil and top the pizza dough with the mozzarella, fontina, plum tomatoes, eggplant, onion, chives, Parmesan, and chicken. Place on the pizza stone and cook for 15 to 20 minutes, or until done.
  • In a small bowl, dissolve the yeast and honey in 1/4-cup warm water.
  • In a mixer fitted with a dough hook, combine the flour and the salt. Add the oil, yeast mixture, and the remaining 3/4 cup of water and mix on low speed until the dough comes cleanly away from the sides of the bowl and clusters around the dough hook, about 5 minutes. (The pizza dough can also be made in a food processor fitted with the steel blade. Pulse once or twice, add the remaining ingredients, and process until the dough begins to form a ball).
  • Turn the dough out onto a clean work surface and knead by hand 2 or 3 minutes longer. The dough should be smooth and firm. Cover the dough with a clean, damp towel and let it rise in a warm spot for about 30 minutes. (When ready, the dough will stretch as it is lightly pulled).
  • Divide the dough into 4 balls, about 6 ounces each. Work each ball by pulling down the sides and tucking under the bottom of the ball. Repeat 4 or 5 times. Then on a smooth, unfloured surface, roll the ball under the palm of your hand until the top of the dough is smooth and firm, about 1 minute. Cover the dough with a damp towel and let rest 15 to 20 minutes. At this point, the balls can be wrapped in plastic and refrigerated for up to 2 days.
  • To prepare each pizza, dip the ball of dough into flour, shake off the excess flour, place the dough on a clean, lightly floured surface, and start to stretch the dough. Press down on the center, spreading the dough into an 8-inch circle, with the outer border a little thicker than the inner circle. If you find this difficult to do, use a small rolling pin to roll out the dough.
  • Yield: 8 servings

Steps:

  • Rinse chicken and pat dry with paper towels.
  • Cut chicken into 1/2-inch pieces.
  • In large mixing bowl combine HALF of the green onions, the minced garlic, vinegar, soy sauce, 1 tablespoon of the oil, the red pepper flakes and the black pepper.
  • Add the chicken pieces and stir to coat.
  • Let stand in refrigerator for about 30 minutes.
  • After it has had time to marinate, drain chicken reserving the liquid.
  • In a large skillet, heat 1 tablespoon oil, add chicken and sauté about 3 minutes or until chicken is no longer pink.
  • Stir cornstarch into reserved liquid.
  • Add to skillet.

  • In a small bowl or jar, whisk together the olive oil, vinegar, Dijon mustard, garlic, and salt and pepper. Taste and add additional salt and pepper if you wish.
  • Preheat oven to 450 degrees Fahrenheit.
  • Pull/press/roll pizza dough into an approximately 14-inch circle. Sprinkle a little flour on your baking surface (stone or baking sheet) and carefully transfer the dough.
  • Spoon the ricotta onto the dough and gently spread with a spoon, leaving 1/2-inch border around the edge of the pizza. 1 boboli pizza crust
1 c prepared barbeque sauce
1/4 c pico-pica (or other preferred type of) hot sauce or for less spice, use oil
2 boneless, skinless chicken breasts
mozzarella cheese, shredded

Steps:

  • 1. Dice chicken breasts into bite-size pieces. In medium skillet, warm the hot sauce (or oil) over medium heat. Add chicken, stirring frequently.
  • 2. While chicken is cooking, place Boboli crust on pizza pan and top with barbeque sauce.
  • 3. Once chicken is thoroughly cooked, drain excess sauce (or oil) from the chicken and put it on top of the barbeque sauce. Top with cheese. Cook at 400 degrees for about 15-20 minutes or until cheese is melted and slightly browned.
  • 4. FOR A LESS SPICY RECIPE, use oil instead of hot sauce to cook the chicken. The hot sauce definitely adds a significant amount of heat to the pizza.

PIZZA CHICKEN WITH PANCETTA, MOZZARELLA AND SPICY TOMATOES

3 1/2 pounds bone-in chicken pieces
2 1/4 teaspoons kosher salt, divided, plus more to taste
1 teaspoon freshly ground black pepper, divided
1 tablespoon extra-virgin olive oil
5 ounces pancetta, diced
3 cloves garlic, thinly sliced
3 anchovy fillets, minced (optional)
1 tablespoon capers, drained
1/4 teaspoon crushed red pepper flakes, or more to taste
1 pint ripe cherry tomatoes, halved (a mix of colors is nice)
3 1/2 cups ripe tomatoes, diced
10 fresh basil, chopped, plus more for serving
8 ounces bocconcini, halved (or use 1-inch cubes of fresh mozzarella)

Steps:

  • Heat the oven to 400°F. Pat the chicken dry and season with 1 teaspoon salt and 1/2 teaspoon pepper.
  • Heat a 10- or 12-inch skillet over medium-high heat, then add the oil; it should thin out on contact. Let it heat up for a few seconds, then add the pancetta. Cook, stirring frequently, until it's well browned and crisp, about 3 minutes. Use a slotted spoon to transfer to a paper towel-lined plate.
  • Add the chicken to skillet. Sear, turning only occasionally, until well browned on all sides, about 10 minutes. Transfer to a large plate. Pour off all but 1 tablespoon oil.
  • Add the garlic, anchovy, capers and red pepper flakes to the skillet; sauté for 1 minute. Stir in the tomatoes and basil. Cook, breaking up the tomatoes with a spatula, until the sauce thickens somewhat, about 10 minutes.
  • Return the chicken to the skillet. Transfer the skillet to oven and cook, uncovered, until the chicken is no longer pink inside, about 30 minutes.
  • Remove the skillet from the oven and scatter the bocconcini over the top. Raise the oven temperature to broil. Return skillet to the oven and broil until the cheese is melted and bubbling, 1 to 3 minutes (watch carefully to see that it does not burn). Garnish with pancetta and chopped basil before serving.

1 Large or 3 individual size Boboli Pizza Crust(s)
1 small purple onion diced thinly in half circles
1/4 to 1/2c. Jack Daniels Spicy Original BBQ sauce
2 boneless chicken breasts
6 oz. shredded cheddar
6 oz. shredded mozzerella
Pam olive oil cooking spray
Optional:
1/2 c. fresh mushrooms
3 cloves garlic (coarsley chopped)
1 jalepeno thinly sliced

Steps:

  • Preheat oven according to Boboli instructions. Lightly spray crust with olive oil. Toss onions and vegetables with salt and pepper and grill for 2 to 3 minutes, or until tender and set aside. Grill chicken breasts approx. 6 minutes on your inside grill. While chicken is cooking, spread BBQ sauce onto crust(s), add grilled onions and vegetables then top with cheddar cheese. Remove chicken from grill and coarsley chop. Spread diced chicken over pizza and top with mozzerella cheese. Pop it in the oven for 10 - 12 minutes, or until cheese is evenly melted and crust becomes golden. Slice and serve!

12 ounces skinless boneless chicken breast
1/2 cup sliced green onion
2 cloves of garlic, minced
2 tablespoons cider vinegar
2 tablespoons soy sauce
1 tablespoon olive oil
1/4 teaspoon black pepper
1/2 teaspoon cayenne pepper
1 tablespoon olive oil
1 tablespoon cornstarch
1 16 ounce boboli pizza crust or fresh pizza dough ball
1/2 cup shredded jack cheese
1/2 cup shredded mozarella
2 tablespoons pinenuts

Steps:

  • Cut chicken into small pieces. In a bowl, combine 1/2 of the green onions, garlic, vinegar, soy sauce, first tbs olive oil and red and black pepper. Add the chickn pieces and stir to coat. Let stand 30 minutes at room temp. Drain, reserving marinade. Heat remaining oil in skillet. Add chicken pieces. Cook and stir until no longer pink. Stire cornstarch into reserved marinade. Add to skillet with the chicken. Cook and stir until thick and bubbly. Spoon on pizza crust, sprinkle with cheese. Bake at 400 for 10 - 12 minutes. Top with remaining onions and pine nuts. Cook 2 minutes longer.

1 ready-to-use baked pizza crust (12 inch)
1/4 cup HEINZ Ketchup Blended with Real Jalapeño
1/2 cup thin red pepper strips
1/4 cup slivered red onions
1 cup KRAFT Shredded Mild Cheddar Cheese
2 Tbsp. chopped fresh cilantro

Steps:

  • Heat oven to 400ºF.
  • Cook chicken in large nonstick skillet on medium heat 5 min. or until done, stirring frequently.

Sadly, I cannot take credit for this pizza. It's from Sam the Cooking Guy. The spicy chili sauce really makes this pizza pop. You can omit the chili sauce if you don't care for spicy food, but I really suggest trying it. I also drizzled a little more plain bbq sauce to the pizza before topping with mozzarella to make it even more saucy. We made this last night and absolutely loved it.

2 cups shredded cooked chicken, about 8 ounces
1/3 cup barbecue sauce, approximately
1 -1 1/2 tablespoon chili sauce (the spicy Asian kind)
1 pre-baked pizza crust
1/2 small red onion, thinly sliced
1 cup mozzarella cheese
fresh cilantro, chopped (optional)

Steps:

  • Pre-heat the oven to 425.
  • Mix cooked chicken with BBQ sauce and chili sauce.
  • Spread chicken over the crust and top with red onion and then the mozzarella.
  • Bake 10-12 minutes until top starts to brown and get bubbly.
  • Remove pizza from oven and sprinkle with chopped cilantro.

Before I became a vegan, my two favorite foods were buffalo wings and pizza. Since that time, I have been on a never ending pursuit to find vegan dishes that mirror those flavors. I have made it!!!! Buffalo Chicken Pizza. Note: For those of you who are not vegan, you can substitute the cheese for the real deal. I strongly suggest a 50/50 pepperjack and cheddar blend. You can also top the finished pie with a zig-zag of your favorite ranch dressing or blue cheese. I, however, strongly urge those of you who are considering this recipe to try it veganized first. This pizza was designed for those of us who appose animal cruelty..and is so delicious. The recipe for the dough will yield enough to make two pizzas. The toppings for the pizza, listed below, are for making ONE pizza. If you would like to use all of your dough and make TWO pizzas that you will need twice as much cheese, hot sauce, etc. as what is listed below.

3 1/2 cups whole wheat flour
1 tablespoon active dry yeast
1/2 tablespoon olive oil
1 teaspoon white sugar
1 1/2 cups warm water
1 teaspoon salt
cooking spray
cornmeal
1/2 cup Crystal hot sauce or 1/2 cup Frank's red hot sauce
2 Morningstar Farms Original Chik Patties
1/2 cup red onion, slices
pepper
salt
1 tablespoon garlic powder
6 slices vegan cheese (I suggest smoked provolone flavor) or 1 cup daiya cheddar cheese
pickled jalapeno pepper, slices
vegan ranch dressing or blue cheese dressing

Steps:

  • Add warm water, sugar and yeast to a stainless steel mixing bowl. Mix everything together and allow to sit for 10 minutes.
  • After 10 minutes, you should see small bubbles on the surface of the solution indicating that the yeast is now activated and burping CO2.
  • Attach the flat beater attachment to your mixer and begin mixing the solution on low. Slowly add 1 cup of flour, the salt and the olive oil. Add the additional 2 cups of flour one half cup at a time -- When the dough begins to shape, switch to the dough fork attachment.
  • After the dough ball has formed, use the dough fork to kneed the dough on low for 10 minutes.
  • After 10 minutes, grease a stainless steel bowl with Non-Stick cooking spray and add the dough. Allow the dough ball to sit, in a warm place, covered with a piece of plastic wrap or a damp tea towel, for 1 hour. This will give the dough a chance to proof.
  • After the dough has risen, place it on a clean counter that has been dusted with 1/4 cup of flour. Proceed to PUNCH the dough 10 - 15 times to deflate it slightly.
  • Cut the dough in half and form each piece back into a ball and place it back into a greased bowl and allow it to sit, covered, for an additional 1 hour.
  • Using the final 1/4 cup of flour, dust a counter top and place onto it one of the dough balls. Punch the dough down and form it into a flat round. It is suggested that you use a floured rolling pin to roll the dough out into a 12 inch circle. Work the dough from on side and then rotate it 90 degrees and work it again. Do this until you have a thin circle.
  • Dust your pizza peel with a coating of corn meal. Place your pizza dough on to making sure that the corn meal prevents the dough from sticking.
  • Once the crust has been placed on the peel apply a light coating of non-stick spray to the top of the pizza dough. This will prevent the dough from absorbing the sauce and will allow it to get crispy (I learned this trick working in a couple of pizza shops). Top your pizza dough with just over 1/4 cup of hot sauce, spreading it around with the back end of a spoon. The hot sauce will evaporate a little in the oven, so make sure that you aren't skimpy with it.
  • Top the pizza in the following order: salt and pepper to taste, garlic powder, vegan cheese and sliced red onion (and optional peppers). Lastly take your thawed vegan chicken breasts and cube them and toss them in the left over hot sauce. Take them and spread them all over the top of your pizza and pour the reaming sauce on as well. Apply any additional sauce if you would like.
  • Dust your pizza stone with a light coating of corn meal. Slide the pizza onto your pizza stone in a preheated 500 degree Fahrenheit oven. After 7 minutes rotate the pizza 180 degrees.
  • Pull the pizza out of the oven when the crust is browned and the cheese is melted.
  • Allow the pizza to cool for 5 minutes and ENJOY!
