Lasso bold southwestern flavor for this pasta dish with preseasoned frozen chicken strips, canned green chiles, and taco-flavored cheese.

8 oz. (3 1/2 cups) uncooked bow tie pasta (farfalle)
1 cup mayonnaise
1 (4.5-oz.) can Old El Paso™ Chopped Green Chiles
1 (9-oz.) pkg. frozen southwestern-flavored cooked chicken breast strips, thawed, cut into bite-sized pieces
2 medium tomatoes, chopped (1 cup)
1 medium red bell pepper, chopped (1 cup)
2 oz. (1/2 cup) shredded taco-flavored cheese blend
3 medium green onions, sliced (about 1/4 cup)

Steps:

  • Cook pasta as directed on package. Drain. Rinse with cold water to cool; drain well.
  • Meanwhile, in large serving bowl, combine mayonnaise and green chiles; mix well. Add chicken, tomatoes, bell pepper and cheese.
  • Add cooked pasta to chicken mixture; toss gently to coat. Serve immediately, or cover and refrigerate until serving time. Sprinkle with green onions.

Number Of Ingredients 16

2 split chicken breasts (bone-in)
1 lb. linguine or Chinese noodles
2 tsp. sesame oil
1 cucumber, seeded and julienned
4 Tbs fresh ginger, julienned
1/2 small red onion, thinly sliced
1-2 fresh jalapeno peppers, julienned
1/2 cup fresh basil, sliced into strips (chiffonade)
2 tsp fresh lemongrass, minced
3 cloves garlic, crushed
1/2 cup fresh lime juice
6 Tbs fish sauce
3 Tbs sugar
2 tsp chili oil
1/2 cup fresh cilantro, minced
1/2 cup roasted peanuts, chopped

Steps:

  • 1. Lightly salt chicken breast (bone-in). Bring a pot of water to a boil and add chicken. When water boils again, cover and gently simmer 5 minutes. Then turn off heat and let sit 10-12 minutes until breast is cooked. Remove breast and let cool. 2. Meanwhile, cook pasta, drain and run under cold water. In a large bowl, toss pasta with sesame oil and set aside. 3. When chicken is cool, pull meat off the bone and into shreds about 1/4 inch wide and 1 1/2 inches long. Set aside. 4. Toss noodles with cucumber, jalapeno, ginger, basil, and red onion. Set aside. 5. In a small bowl, combine lemon grass, garlic, lime juice, chili oil, fish sauce, and sugar until sugar is dissolved. Set aside. 6. Refrigerate everything until ready to serve. 7. When ready to serve, toss pasta mixture with chicken, sauce mixture, and cilantro. Sprinkle peanuts on top. Serve chilled or at room temperature.

Spicy Pimento Cheese Asparagus Chicken Pasta Salad image

This pasta salad reminds me of the best pimento cheese I ever had. IMy friends and family are always asking me to make pasta salad. I normally make a vinaigrette for my pasta salad, not this time! I decided to fuse my beloved pimento cheese with pasta and top it off with some grilled chicken. This salad is quick, simple, easy and is simply delcious. I will make this often. 12 ounce(s) pasta bowties, small
3/4 pound(s) asparagus spears
1/2 cup(s) roasted red peppers, chopped
4-6 ounce(s) aged sharp white cheddar cheese, grated
1 pound(s) grilled chicken breast, boneless & skinles**season chicken with extra virgin olive, greek seasoning & herbs de provence. grill for 5 minutes on each side. slice.**
DRESSING
1 1/4 cup(s) miracle whip
1 tablespoon(s) sriracha
1 teaspoon(s) white wine vinegar
1 package(s) ranch dressing, dry

Steps:

  • In a large pot of salted water, boil aspargus for 3 minutes. Remove immediately and place in an ice bath to stop the cooking process. Drain asparagus in a colander. Slice and set aside. Add pasta to the same boiling water. Boil according to package. Remove and drain in a colander. Run cold water over pasta until cool. Drain. Set aside. In a large mixing bowl combine the dressing ingredients . Mix well. Fold in asparagus, roasted red peppers & cheese. Chill for at least 1 hour. Top with grilled chicken when ready to serve. Enjoy!

A wonderful one dish meal. Very spicy, different yet easy to prepare. Also very healthy dish, low fat and lots of veggies!

1 -2 lb boneless skinless chicken breast
1/2 drained sun-dried tomato (I use 1 cup)
1 medium onion
1 red bell pepper
1 yellow bell pepper
1 green bell pepper
8 ounces asiago cheese or 8 ounces freshly grated parmesan cheese
1 (12 ounce) bottle girards fat free balsamic vinaigrette
12 -16 ounces farfalle pasta
1 -2 tablespoon olive oil

Steps:

  • Cut all peppers, onion, and prepare sun-dried tomatoes.
  • Cook pasta and drain.
  • Cook all chicken and cut into strips.
  • Sauté pepper, tomatoes and onion in skillet with olive oil.
  • Toss cooked chicken, pasta, veggies in dish.
  • Add salad dressing and top with cheese!
