Steps:
- Heat oil in a pan so that the chicken will be covered completely by oil.
- Cut chicken up into little bite size pieces.
- Place chicken in bowl and toss with 2 teaspoons of the hot sauce.
- In one bowl, place 1 cup of the pancake mix, and in another bowl place the remaining mix, 6 teaspoons hot sauce, and water and mix into a batter.
- Dip the chicken pieces first in the plain mix, the dredge in the batter.
- Next drop into oil and cook until well browned.
- Place on paper towel and sprinkle with salt. Enjoy!

- Combine chicken, red pepper, chili powder, garlic powder, salt, and hot pepper sauce in a medium or large ZIPLOC Brand Zip 'n Steam Bag. Seal bag and shake to mix ingredients. Place ingredients into an even, single layer. Place bag in a microwave., Cook on high for 4 minutes (Medium bag) or 3-1/2 minutes (Large bag) or until chicken juices run clear. If needed, continue microwaving for 30-second intervals until chicken is done., Let stand 1 minute before handling. Gently squeeze bag to distribute seasonings. Carefully open bag. Spoon 1 tablespoon lime juice over chicken. Season with additional salt and hot pepper sauce if desired. Serve over a bed of lettuce.

SPICY FRIED CHICKEN BITES WITH DERBY DIP
Steps:
- Preheat oven to 375 degrees F.
- Put the bacon onto a baking sheet and bake until crisp about 12 minutes. Transfer the bacon to a plate lined with paper towels. Reserve 2 tablespoons of the bacon fat. Once the bacon is cool enough to handle, chop into small pieces.
- Cut the chicken into bite-size pieces. In a large bowl combine the buttermilk, hot sauce, and chicken. Cover and let marinate in refrigerator for at least 2 hours or up to overnight.
- In a glass baking dish, whisk together the flour, cayenne pepper, paprika, garlic powder, and salt and pepper. Remove the chicken from the buttermilk and add to the seasoned flour. Make sure all the chicken pieces are thoroughly coated. Remove the chicken from the flour mixture and put back into the buttermilk. Remove chicken from buttermilk and put back into the seasoned flour mixture for a second coating. Transfer the double coated chicken to a baking sheet and reserve.
- Heat the canola oil in a large cast iron skillet to 350 degrees F. Add the reserved 2 tablespoons bacon fat. Working in batches, fry the chicken until golden brown, about 3 to 4 minutes per side. Transfer the cooked chicken to a sheet pan lined with paper towels.
- In a medium bowl stir together the sour cream, mayonnaise and blue cheese. Stir in the crumbled bacon.
- Serve the chicken with the Derby Dip on the side.

- Preheat oven to 350°. Cut bacon strips crosswise into thirds. In a large skillet, cook bacon over medium heat until partially cooked but not crisp. Remove to paper towels to drain; keep warm., Wrap a bacon piece around each chicken piece; secure with a toothpick. In a shallow bowl, mix brown sugar and seasonings. Add wrapped chicken, a few pieces at a time, and toss to coat., Place on 15x10x1-in. baking pans. Bake 10-12 minutes or until bacon is crisp and chicken is no longer pink. I had two goals for today... One was to finish up a painting I've been working on, and another was to come up with an appetizer for a casual Saturday afternoon party I'm hosting tomorrow. This is the appetizer... the painting is still a work in progress. So, you ready... Let's get into the kitchen.

- 1. PREP/PREPARE
- 2. Gather your Ingredients (mise en place).
- 3. Mix the honey, cayenne and paprika together in a small bowl, and reserve.
- 4. Chef's Note: The interplay between the honey, the paprika, and the cayenne, create some really interesting flavor notes for your palette.
- 5. Mix all the ingredients for the batter in a large bowl.
- 6. Chef's Tip: The batter should be nice and thick; almost like a tempura batter.
- 7. Add the chicken bites into the batter.
- 8. Add some oil (about 1in/2.5cm) to a pan, or pot, and heat up to 350f (175c).
- 9. Shake off the excess and add the chicken in small batches into the hot oil.
- 10. Fry until the chicken is cooked through and golden brown, about 3 - 5 minutes.
- 11. Drain on paper towels, and finish cooking the remaining chicken bites.
- 12. Toast the mini waffles until golden brown.
- 13. PLATE/PRESENT
- 14. Place the chicken bites, on the toasted mini waffles, drizzle with the honey/paprika/cayenne mixture, and serve while nice and warm. Enjoy.

- In a small dish, mix together the salt, garlic powder, paprika, black pepper, minced onion, oregano, ¼ teaspoon of the cayenne, the crushed red pepper, the lemon juice and 2 teaspoons of the olive oil to form a paste. Rub the paste over the surface of the chicken breasts on all sides. Set aside. Pre-heat the oven to 350 degrees. In a dutch oven, bring 1 ½ teaspoons of oil over med-high heat. Once hot, add the sliced sausage and cook, stirring/flipping occasionally, until browned (about 5 minutes). Remove the sausage to a side plate. Add another 1 ½ teaspoons olive oil to the pot and allow them to come to temperature (should happen quickly). Add the chicken breasts in a single layer and sear on one side for 2-3 minutes. Flip the breasts and sear on the other side for another 2 minutes. Remove the chicken from the pot to the plate with the sausage. Reduce the heat to medium-low. Add the remaining teaspoon of oil to the pot and allow it to heat up. Add the onions, celery and jalapeno and stir. Cook for 2-3 minutes, stirring regularly to scrape up any brown bits of flavor stuck to the bottom of the pot and coat your veggies with flavor. Your veggies should start to look brown from mixing with the flavors on the bottom. Add the remaining ¼ teaspoon cayenne pepper, salt, black pepper and rice and stir to combine. Add the broth and continue to "deglaze the pan" by scraping up any brown bits off the bottom. Increase the heat to medium and bring the contents to a simmer. Once simmering, add the sausage, chicken, and any juices on the plate back to the pot, placing the chicken in a single layer on top of the other ingredients. Return to a simmer and cover. Place the covered pot in the oven and bake for 30 minutes. Remove the cover and bake for another 10-15 minutes until the liquid is absorbed into the rice. Slice the chicken before serving.

- Place half of chicken in a food processor; pulse 6 times or until chicken is coarsely chopped.
- Spoon into a large bowl; repeat procedure with remaining chicken.
- Add onion, garlic, and egg.
- Combine breadcrumbs and next 6 ingredients; add chicken mixture, stirring well.
- Shape mixture into 40 (1-inch) balls.
- Place flour in a medium bowl.
- Roll each chicken ball in flour; place in an 11 x 7-inch baking dish.
- Microwave at medium-high (70% power) 6 minutes, stirring every 2 minutes.
- Combine oil and paprika in a skillet; place over medium heat until hot.
- Add chicken balls; cook 10 minutes, stirring occasionally.
- Serve warm with Cucumber Dip.
- Cucumber Dip: Place cucumber on several layers of paper towels; cover with additional paper towels.
- Let stand 15 minutes, pressing down occasionally.
- Combine cucumber and remaining ingredients in a bowl; cover and chill.
